I've made this white chili yesterday and both me and my husbamd loved it.
It's very filling, delicious and so EASY to make.
A winning combination!

****************************

Weight Watchers White Chili:

1 - 48 oz. jar of Great Northern Beans
2 c. fat free chicken broth
4 c. diced cooked chicken breast
2 c. Salsa
1 c. 2% mozzerella

Combine all ingredients in crock pot on low 4-6 hours.

1 cup = 3 points

White Bean and Ground Turkey Breast Slow Cooker Chipotle Chili

Ingredients

1 spray(s) cooking spray
2 pound(s) uncooked ground turkey breast
1 large onion(s), chopped
2 medium garlic clove(s), chopped
32 oz fat-free chicken broth
1 tsp ground cumin
1 tsp dried oregano
1 tsp chili powder, chipotle variety
30 oz canned white beans, drained and rinsed
3 Tbsp fresh lime juice
1/4 cup(s) cilantro, fresh, coarsely chopped (plus extra for garnish)

Instructions

Coat a large skillet with cooking spray. Cook turkey, onion and garlic over medium-high heat, stirring occasionally, until turkey is browned, about 10 minutes; drain off any fat.

Add turkey mixture and remaining ingredients to a 3 1/2 quart or larger slow cooker. Cover and cook on low heat setting for at least 4 hours. Yields about 1 cup per serving.

Note - I used a low-sodium chicken STOCK and not broth.

This was SO good done in the crockpot on low all day (8 hours or so):

3 large chicken breasts, cubed
3 cans Great Northern beans
2 onions, diced
1 quart chicken broth
2 tsp cumin
2 tsp oregano
garlic (1/2 tsp? or fresh minced)
1 small can chilis

Awesome! It made 14 cups

2 pounds ground beef
1 large onion, diced
2 garlic cloves, minced
1 cup water
4 ounce diced green chilies
2 tablespoons chili powder
2 teaspoons salt
2 teaspoons ground cumin
1 teaspoon pepper
1 can of corn, drained
1 can kidney beans, drained
1 can black beans, drained
1 can red beans, drained
2 cans tomato paste
1 (14 ounce) can diced tomatoes
1 can diced tomatoes chili ready
1 can tomatoes with mild chili’s

- Brown ground beef, onion and garlic in skillet. Drain and place in crock-pot on high
- Stir in rest of ingredients.
- Cook on high for 2-3 hours or low 4-6 hours. I actually make it in the morning and let it cook on low all day while at work.
- You can also cook on the stove for several hours if you don’t have a crock-pot.
- Serve with shredded cheese, sour cream and diced scallions.

Red's Famous Pumpkin Chili
Serves 6

1 lb lean ground beef
1 can (16 oz) pumpkin
1/2 cup chopped sweet white onion
1 tbsp chili power
1 tbsp cumin
Garlic to taste
Oregano to taste
Salt & pepper to taste
2 cans(16 oz each) diced stewed tomatoes (undrained)
1 can (16 oz) dark red kidney beans (undrained)

Cook beef until no longer pink; drain. Stir in pumpkin, onion and spices. Simmer 5 minutes. Add remaining ingredients and bring to a boil; reduce heat, cover and cook for 20 more minutes.

Just got this recipe from Taste of Home -- I'm looking forward to trying it! 10 servings - 192 cal/5 fat/7 fiber.

Ingredients
1 medium onion, chopped
1 medium sweet yellow pepper, chopped
3 garlic cloves, minced
2 tablespoons olive oil
3 cups chicken broth
2 cans (15 ounces each) black beans, rinsed and drained
2-1/2 cups cubed cooked turkey
1 can (15 ounces) solid-pack pumpkin
1 can (14-1/2 ounces) diced tomatoes, undrained
2 teaspoons dried parsley flakes
2 teaspoons chili powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1/2 teaspoon salt

Directions
In a large skillet, saute the onion, yellow pepper and garlic in oil until tender.

Transfer to a 5-qt. slow cooker; stir in the remaining ingredients.

Cover and cook on low for 4-5 hours or until heated through. Yield: 10 servings (2-1/2 quarts).

Weight Watchers Chili
(Makes 15 cups – 1 point per cup)

½ lb. lean ground turkey
1 small onion diced
1 cup celery diced
1 – 28 oz. can diced tomatoes
1 medium bell pepper diced
1 medium yellow squash diced
1 medium zucchini diced
1 – 15 oz. can black beans
1 package chili seasoning mix
1 – 12 oz. can low-sodium low-fat beef broth

Brown turkey and onions in pan sprayed with Pam. Add the remaining
ingredients (don’t drain the beans… the juice adds flavor) and cook for
30-40 minutes or until vegetables are tender.

Chili Mac Crock Pot

16 ounces extra lean ground turkey or beef
1 cup chopped onion
1 (16 ounce) can tomatoes, coarsely chopped and undrained
1 (10 3/4 ounce) can Healthy Request Tomato Soup
1 cup reduced-sodium tomato juice
2 teaspoons chili seasoning
1 (8 ounce) can red kidney beans, rinsed and drained
1 cup elbow macaroni

In a large skillet sprayed with olive oil flavored cooking spray,
brown meat.

Meanwhile, in a crock pot container sprayed with cooking spray,
combine onion, undrained tomatoes, tomato soup, tomato juice, and
chili seasoning. Stir in kidney beans and uncooked macaroni. Add
browned meat. Mix well to combine.

Cover and cook on LOW for 6 to 8 hours. Mix well before serving.

Serves 6 (1 full cup).

I made this last night and substituted ground turkey for the ground round, and used whole wheat pasta and left out the cheese. And it was FANTASTIC, and it makes a lot so you have lots of good leftovers!!
It will freeze well.

Chili Con Carne
Source WW Take Out Tonight!

1 teaspoon Olive Oil
1 large Onion, chopped
3 garlic cloves
1 (4 ½-ounces) can chopped mild green chiles
2 Tablespoon Cajun seasoning
1 Pound ground grounded turkey ( I use 93% lean ground beef)
1 (28-ounce) can Italian peeled tomatoes, chopped
1 cup prepared salsa
½ cup water
¼ cup chili powder
1 teaspoon sugar
½ teaspoon salt
2 (15-ounce) cans red beans kidney beans, rinsed and drained


1. Heat a large nonstick saucepan over medium heat. Swirl in the oil, then add the onion. Cook, stirring occasionally, until softened, about 6 minutes. Stir in the garlic, chiles, and seasoning. Cook until fragrant, about 1 minute. Add the turkey and cook, breaking up the turkey with a wooden spoon, until browned, about 8 minutes. (I cook to this stage then add everything to a crock pot and cook on low for about 7 to 8 hours. High to 4 hours.)

2. Add the tomatoes with their liquid, salsa, water chili powder, sugar, and salt; bring to a boil. Reduce the heat and simmer, covered, until the flavors are blended and the chili thickens slightly,
About 1 hour. Stir in the beans and cook until heated through.

Per serving (1 1/3 cups): 247 Cal., 4 g Fat, 1g Sat Fat, 42 mg Chol, 1,465 mg Sod, 31 g Carb, 11 g Fib, 23 g Prot, 116 mg Calc.

My best friends brother-n-law worked for Wendy's fast food chain for several years, she gave me this recipe when she found out how much I love their chili. I was surprised to see how simple it was!

40 min | 10 min prep

SERVES 12

1 onion, chopped
1 bell pepper, chopped
1 (14 ounce) can stewed tomatoes
4 (8 ounce) cans tomato sauce
1 (14 ounce) can ranch style beans
1 (14 ounce) can pinto beans
1 (14 ounce) can kidney beans
1 (10 ounce) can Rotel diced tomatoes
1 (1 1/4 ounce) package McCormick mild chili seasoning
2 lbs ground chuck
Brown Ground Chuck. Add all canned items, including juice, into large pot.
Cook until onion and pepper are tender.
Serve.
Freezes nicely.

Cowboy Stew serves 6-8

2 can Ranch style beans
1 can regular corn
1 can sliced or diced potatoes
1 can diced Mexican flavored tomatoes
1 can Ro-Tel tomatoes
1/2 can diced green chiles
1-1 1/2 pounds lean ground beef, browned with 1/2 onion, garlic power,chili powder and pepper.
Mrs. Dash Original to taste

Brown meat with spices and onions. Add all other ingredients and heat slowly on stovetop or put into crock pot on low for as long as you need to leave it.

1/2 cup chopped sweet white onion
1/2 cup chopped tri-colored peppers (or any peppers you have on hand)
1 tbsp chili power (or more to taste)
1 tbsp garlic (or more to taste)
1 tbsp cumin (or more to taste)
2 tsp dried oregano (or more to taste)
Salt and Pepper to taste
2 cans (14.5 oz each) Hunts stewed tomatoes (un-drained)
1 can (15.25 oz) Bush’s dark red kidney beans (un-drained)
1 can (4 oz) tomato sauce (the small one)
1 can (4 oz) diced green chilis

Directions:
-Saute onions and peppers until desired softness
-Add in the ground turkey breast and garlic, cook until no longer pink.
-Drain and stir in pumpkin, onion and spices
-Simmer 5-10 minutes.
-Add the remaining ingredients and bring to a boil.
-Turn down heat, cover and and cook for 20 more min.

Makes six, 2-cupservings
(Approximately 12 - 1 cup servings for entire recipe)

Per serving (at 6 servings for whole recipe) 220 calories, 0g total fat per serving, 7g fiber

1 pound boneless skinless chicken breast, diced
1 medium onion, diced fine
1 clove garlic, minced
1 teaspoon olive oil
15 ounces small white beans (1 can) (drained and rinsed)
15 ounces hominy, yellow (1 can) (drained and rinsed)
14 ounces 99% fat free chicken broth (1 can)
4 ounces green chiles (1 can chopped)
1 teaspoon salt
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne
1 Cup fat-free sour cream
1/2 Cup fat free half-and-half

1. In a large saucepan, sauté chicken, garlic, and onion in oil until onion is translucent. ADD drained and rinsed beans, drained and rinsed hominy, chiles and seasonings. Bring to boil. Reduce heat and simmer uncovered 30 minutes.

2. Remove from heat. Stir in sour cream and half and half.

CROCK POT BROWN SUGAR CHILI

8 Servings
240 Calories 4 g. Fiber 6 g. Fat

FROM: “Fix it and Forget it Lightly” Cookbook


1 lb. extra-lean ground beef
½ c. brown sugar
2 T. prepared mustard
1 medium sized onion, chopped
2 cans (14 oz. each) kidney or red beans
2 c. low-sodium tomato juice
½ t. salt
¼ t. pepper
1 t. chili powder

Brown ground beef and onion in a nonstick skillet over medium heat. Stir in brown sugar and mustard.

Combine all ingredients in slow cooker.

Cover. Cook on HIGH 2-3 hours. If possible, stir several times during cooking.

Slow-Cooked Chile Con Carne

Cooking spray
1 1/2 cups chopped onion (about 1 medium)
2 garlic cloves, minced
1 pound sirloin, cut into 1-inch cubes
2 1/2 cups diced plum tomato (about 6)
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon dried oregano
1 (15-ounce) can pinto beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1 (14-ounce) can fat-free, less-sodium beef broth
1/4 teaspoon salt

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add onion, garlic, and beef to pan; cook 5 minutes or until beef is browned, stirring occasionally. Combine beef mixture, tomato, and next 6 ingredients (through broth) in an electric slow cooker. Cover and cook on HIGH for 3 1/2 hours or until beef is tender. Uncover; cook 30 minutes or until slightly thickened. Stir in salt.

Yield: 4 servings (serving size: 1 1/2 cups)

Cook on high 2-3 hours or on low 4-6 hours. Stir occasionally if possible.

This is too sweet for me and my hubby, but we usually add some spice *heat* to it and that really makes it better! This is the only chili recipe we make now!!! It is awesome!!!

2 tsp vegetable oil
1 pound lean ground turkey
1 cup water
1 (10.5 ounce) can condensed low-sodium tomato soup
2 cup canned diced tomatoes
15 oz canned kidney beans
15 oz canned black beans
1 cup canned yellow corn
1/2 medium onion(s)
3 tsp chili powder
1/2 tsp crushed red pepper flakes
1 Tbsp garlic powder
1/2 Tbsp McCormick Ground cumin
1/8 tsp black pepper
1/4 tsp table salt
1/8 tsp ground allspice
8 oz shredded fat-free cheddar cheese
8 Tbsp fat-free sour cream

1. Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown. Coat the inside of a slow cooker with cooking spray, and scoop turkey in, leaving about 1 tbsp of fat in the skillet. Brown onion in the skillet, 6-8 minutes, then add to slow cooker.
2. Mix in water, tomato soup, tomatoes, kidney beans, black beans and corn. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.
3. Cover, and cook 8 hours on Low or 4 hours on High.

Weight Watchers Chili
(Makes 15 cups – 1 point per cup)

½ lb. lean ground turkey
1 small onion diced
1 cup celery diced
1 – 28 oz. can diced tomatoes
1 medium bell pepper diced
1 medium yellow squash diced
1 medium zucchini diced
1 – 15 oz. can black beans
1 package chili seasoning mix (weekly points allowance)
1 – 12 oz. can low-sodium low-fat beef broth

Brown turkey and onions in pan sprayed with Pam. Add the remaining ingredients (don’t drain the beans… the juice adds flavor) and cook for 30-40 minutes or until vegetables are tender.

Yield: 10 servings (2-1/2 quarts)

INGREDIENTS
1-1/2 pounds ground beef
1 medium onion, chopped
1 can (46 ounces) tomato juice
1 can (28 ounces) Chinese mixed vegetables, drained
1 can (14 ounces) bean sprouts, drained
1 tablespoon chili powder
Salt to taste
Shredded Parmesan cheese


DIRECTIONS
In a large saucepan, cook beef and onion over medium heat until the meat is no longer pink; drain. Add tomato juice, vegetables, bean sprouts, chili powder and salt; bring to a boil. Reduce heat; cover and simmer for 1 hour or until thick and bubbly. Garnish with Parmesan cheese.
Pair out-of-ordinary Oriental Chii with store-bought egg rolls and fortune cookies for a fun casual meal with little fuss. And for extra ease, keep serving-size portions of chili in the freezer to defrost and reheat in a hurry.

Vegetable and Bean Chili
Recipe courtesy Gourmet magazine

4 large onions (1 pound), coarsely chopped
2 green bell peppers, cut into 1/2-inch pieces
6 large garlic cloves, finely chopped
1 fresh jalapeno chile, finely chopped (including seeds)
4 tablespoons olive oil
2 tablespoons chili powder
2 teaspoons ground cumin
Kosher salt
2 (28-ounce) cans whole tomatoes, coarsely chopped, with juice
4 zucchini, cut into 1/2-inch cubes
4 (15-ounce) cans kidney beans, rinsed, drained
2 tablespoons chopped unsweetened chocolate
1/3 cup chopped fresh cilantro leaves

Saute onions, bell pepper, garlic, and jalapeno in oil in a 8-quart heavy pot over moderately high heat, stirring, until softened, about 5 minutes. Add chili powder, cumin, and salt and cook, stirring, 1 minute. Add tomatoes with juice and zucchini and simmer, partially covered, stirring occasionally, 15 minutes. Stir in beans and chocolate and simmer, stirring occasionally, 5 minutes. Stir in cilantro.

From a WW leader

1 lb ground lean meat (your choice)
1 lg can diced peeled tomatoes
2 cans ROTEL diced tomatoes w/chilis
1 lb bag of coleslaw mix
3 cans beans (any kind)

Cook meat... add other ingredients and simmer 90 min.

Hint--freeze indiv portions in disposable containers (glad, ziploc etc.. ). It defrosts beautifully!! YUM

I assume it's 1 point per one cup.....

by WW turnaround program cookbook

2 t olive oil
1 large onion, chopped
2 garlic cloves, minced
1 lb ground skinless lean turkey breast
1 14 1/2 oz can diced tomatoes
1 4 oz can chopped mild green chilies
1/2 6 oz can tomato paste
2 t chipotle chili powder
2 t dried oregano
1/4 t salt
1 15 oz can hominy, drained
1/2 c finely chopped red onion
6 radishes, shredded
1/4 c chopped fresh cilantro
1/4 c shredded ff monterey jack cheese

1. heat the oil in a nonstick skillet over medium heat. Add the onion and garlic; cook, stirring frequently until golden, about 7 minutes. Add the turkey and cook, breaking it up with a wooden spoon, until browned, about 5 min

2 Stir in the tomatoes, green chilies, tomato paste, chili powder, oregano, and salt; bring to a boil. Reduce heat and simmer, partially covered, until the chili thickens slightly about 30 minutes.Stir in the hominy and cook until heated through, about 3 min

3. Meanwhile, combine the red onion, radishes, and cilantro in a small bowl. Divide the chili mixture among 4 bowls; sprinkle each evenly with cheese, then the radish mixture.

i accidentally found a can of Hunt's Ready Tomato Sauces - Chunky Chili -
tonight in the supermarket. it's ff, nice and spicy and very CHUNKY.

I threw in a saucepan, the can of sauce and:

a can of pinto beans
chopped onion
diced capsicum
chopped zuchinni
chopped carrot

cooked until heated through and veggies cooked.

stirred in some ff sour cream right before taking of the stove.

super quick, ff and yum-o-rama.

TACO Chili, 2 cups = 3 pts!

1 pound ground turkey, lean -- 97% FF
1 each onion, chopped -- small onion
3 cloves garlic, diced
1 1/2 cups celery, not too finely chopped
1 - 15 oz can tomato sauce
1 sm can mild green chilies
2 cans stewed tomatoes, 15 oz per can
4 cans Beans, Mixed or match, pinto, black, white, kidney - add more if desired
1 package Taco Seasoning mix
1 package ranch-style dressing mix, Hidden Valley brand
2 teaspoons Cumin, more if desired
16 ounces white corn, frozen
1/2 cup water, *see Note
2 teaspoons Chili Powder, add to taste

1. Brown the turkey, add onions, garlic, and celery about half way through the browning.
2. One by one add the remaining ingredients. DO NOT DRAIN ANYTHING .. JUST DUMP. If the mixture looks thick, add the water. But with all the juices from the beans, you won't need the water.
3. Heat through. Simmer for awhile if you like.
4. Top with a dollop of FF sour cream.

Yield: 10 servings

Notes: This makes a HUGH pot. If desired more taco seasoning and salad dressing mix can be added. Chili seasoning may be added if you like it. You can add anything you may like. It is guaranteed that it will be one of the best things you ever ate. Weight Watchers or not!! Left overs can be frozen for future use.

Eenie-Meenie-Chili-Beanie Low-Point Chili
(Or "Bootcamp Chili"-- take yer pick!)

Makes about 20 cups-- fills a standard Dutch Oven

Serving size: 1 CUP has only 2 points !!


6 cans of Chili Beans in Sauce (15 oz can-- I use Aldi’s (a discount chain) brand at $.29 per can!)

2 cans Crushed Tomatoes (28 oz)

12 oz cooked 90% lean Kroger Healthy lean ground beef (about 1 lb raw)

2 onions, chopped (2 cups or to taste)

chili powder to taste

salt, pepper to taste


Brown the beef and drain well. Combine with all the other ingredients and simmer uncovered until the onions are tender, stirring frequently (If you’re in a hurry, you can sautee the onions in a pan with nonstick spray, then combine with the other stuff and just warm it through, but the more you cook this stuff, the better it is.)

POINT CALCULATION:

The 6 cans of beans are 27 pts total (by the label—- if you use another brand of beans, total it up! My 6 cans are 2310 cal, 21 gms fat, 105 gms fiber, which is 27 points.

12 oz of Kroger’s Healthy lean ground beef is 12 pts (by Kroger’s nutrition label)—- be aware that standard "lean ground beef", by WW’s book, would be 5 pts for 3 oz, or 20 points for 12 oz! Kroger's is 90% lean, and it has soy added, so it has fewer points (less than most ground turkey!!)

Tomatoes, onions, spices are free.

Total pts: 39 for 20 cups = 2 pts per cup!

*a little hint: a pinch of baking soda in beans cuts down the gas content!

Morrocan Chili

2 tablespoons extra-virgin olive oil
2 pounds ground lamb
Salt and freshly ground black pepper
2 tablespoons chili powder
1/2 tablespoon ground cumin
1 tablespoon ground coriander
1/4 teaspoon ground cinnamon
1/2 teaspoon paprika
1 bay leaf
1 large onion, chopped
1 green bell pepper, seeded and chopped
2 cloves garlic, finely chopped
1 lemon, zested and juiced
2 tablespoons Worcestershire sauce, eyeball it
1 (14-ounce) can tomato sauce
2 tablespoons butter (try olive oil instead...)
1 1/2 cups chicken stock
A handful golden raisins
4 apricots, chopped
1 1/2 cups couscous
3 to 4 tablespoons toasted pine nuts
A handful fresh parsley leaves, chopped
A handful fresh mint leaves, chopped
3 tablespoons finely chopped chives
8 pita breads, cut into wedgesfor scooping (optional)

Preheat oven to 400 degrees F.
Heat skillet with extra-virgin olive oil, add meat and brown. Season the meat with salt and pepper, to taste, chili powder, cumin, coriander, cinnamon and paprika. Add the bay leaf, onions, bell pepper and garlic to the pan. Cook until onions are soft, 8 minutes. Add lemon juice and zest, Worcestershire sauce and tomato sauce. Stir and reduce heat to simmer.

Bring butter and stock to a boil in a pot with tight fitting lid. Add dried fruit and couscous, stir then turn off heat and set lid in place. Let stand 5 minutes. Add nuts and herbs and toss with fork.

Toast pita wedges in hot oven or under broiler. Pile chili in bowls, top with "sand" and serve with pita wedges for scooping.

Barbecued, pulled chicken has become an American standard, a favorite of backyard cooks everywhere. Believe it or not, a slow cooker does a good job of mimicking this classic. The amount of chiles you use will determine its heat - if there's a difference of opinion, use 1 chile and pass hot pepper sauce on the side.

2 medium onions, chopped
1 large apple, peeled and chopped
3 garlic cloves, minced
1-3 dried New Mexican chiles, stemmed, seeded, and broken into 2-inch pieces
2 bay leaves
2 tablespoons dried oregano
1 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 pounds skinless boneless chicken thighs
3 cups reduced-sodium chicken broth
2 tablespoons rice-wine vinegar or 1 1/2 tablespoons white-wine vinegar

1. Combine the onions, apple, garlic, chiles, bay leaves, oregano, allspice, salt, and pepper in a 5- or 6-quart slow cooker. Add the chicken, broth, and vinegar; mix well. Cover and cook until the chicken is fork-tender and the flavors are blended, 3-4 hours on high or 6-7 hours on low.

2. Transfer the chicken to a cutting board. With two forks, shred the chicken into small pieces.
Discard the bay leaves. Pour the sauce in batches into a blender or food processor and puree. Return each batch to the slow cooker; stir in the chicken. Cover and let stand until heated through, about 10 minutes on warm.

Makes 6 servings

***TIP*** Look for dried New Mexican chiles at most large supermarkets, Latin American markets,
or from chile suppliers on the Web. The chiles should be a high-gloss burgundy color and dry to the touch, not spongy or soft. Rice-wine vinegar is an Asian condiment and is readily found in the ethnic section of the supermarket. Do not substitute "seasoned-rice vinegar," which is sweetened with sugar.

I would use mild or hot Italian turkey sausage.

INGREDIENTS

1 pound mixed ground beef and sausage, browned and drained
1 medium onion, diced
1 green bell pepper diced
2 cups chopped celery
2 (28-ounce) cans diced tomatoes
1 (28-ounce) can whole, peeled tomatoes
Ground cumin
Chili powder
1 (14 1/2-ounce) can pinto beans, drained and rinsed
1 (14 1/2-ounce) can black beans, drained and rinsed
1 (14 1/2-ounce) can kidney beans, drained and rinsed
1 package chili seasoning mix
Shredded cheddar(try low or fat free cheese), sour cream(try low or fat free sour cream), chopped green onions, for garnish

METHOD

In a skillet brown ground beef and sausage, drain and set aside.
Spray large pot with nonstick cooking spray and heat over medium heat. Add the onion, green pepper, and celery and saute briefly. Stir in the diced and whole tomatoes. Add cumin and chili powder, to taste, and cook for about 8 minutes or until vegetables are tender. Add the beans, browned meat, and chili seasoning. Partially cover, and let simmer for 4 hours.

CROCK POT BROWN SUGAR CHILI

8 Servings
4 points each serving
FROM: “Fix it and Forget it Lightly” Cookbook


1 lb. extra-lean ground beef
½ c. brown sugar
2 T. prepared mustard
1 medium sized onion, chopped
2 cans (14 oz. each) kidney or red beans
2 c. low-sodium tomato juice
½ t. salt
¼ t. pepper
1 t. chili powder

Brown ground beef and onion in a nonstick skillet over medium heat. Stir in brown sugar and mustard.

Combine all ingredients in slow cooker.

Cover. Cook on HIGH 2-3 hours. If possible, stir several times during cooking.

Each serving:
240 calories
6 grams fat
4 grams fiber

SUPERB TURKEY VEGGIE CHILI

I write a LOT, but it takes minutes to prepare with my method of freezing the red peppers and onions.

Please read everything before you cook it. I maid changes to the original recipe.

When red sweet peppers are on sale, I buy a LOT, and I roast in a very large pan with a little olive oil the same amounts of red peppers and vidalia (or another sweet onion) until they're soft and camalized a little. I slice the onions and chop the red peppers in the food processor into medium size pieces.
I then, divide it into freezer ziplog bags, label it and freeze it (about 5 peppers and 5 onions in one bag.
That way, whenever I want to make this chili, it takes minutes to make.

Makes 15 cups
Each cup is 3 WW points (with the 28 0z Vegetarian baked beans and 1 can of Bush baby butter beans)).
(With more onions and red peppers it's only 2 1/2 points per cup).

Note! the points are NOT from the new plan PointPlus.

Either in SLOW COOKER or ON THE STOVE!

*** LESS than 10 minutes PREPARATION TIME.
*** Very easy to make.
*** SUPERB with Bush' VEGETARIAN Baked Beans with Brown Sugar and spice !!!

I drain the beans and rinse them and also drain the corn and rinse.
I The vegetarian beans and rotel tomatoes, I just throw into the pot the way they are - not rinsing or draining)

Total cooking time: 5- 6 hours in the SLOW COOKER.

NOTE: Can be done also over the stove. Simmer for about 45 minutes to an hour. I cook it over the stove.

INGREDIENTS:

I pound ground turkey
2 (15 ounce) pinto beans, liquid reserved (I've substituted one can of pinto beans for Bush's best Vegetarian baked beans, 28 0z can with tangy sauce and brown sugar & spices, and added one more can of Bush baby butter beans. MORE CALORIES (50 calories more per 1/2 cup, still 0 fat, 5 grams of Fiber,and 12 grams of SUGAR, compare to Pinto beans, but WORTH the great FLAVOR.) YUMMY!)
1 (14 ounce) can low sodium chicken broth ( I don't add broth)
2 (15 ounce) cans Mexican Stewed tomatoes ( I use ROTEL Original, diced tomatoes & green chilies)
1 ( 8 ounce) can whole kernel corn ( I use 2 cans)
1 large onion, chopped (I've used 5 large onions)
1 sweet red bell pepper, chopped (I've used 5 red peppers)
2 teaspoons prepared minced garlic (I like fresh garlic)
2 teaspoons ground cumin (I use 1 heaping tablespoon)
1-2 teaspoons ground chili (I use 2 teaspoons

METHOD:

* In skillet with little oil (I didn't add oil), cook and brown turkey before adding to large slow cooker. (I poured out all fat after browning)

* Add to large slow cooker beans, broth, tomatoes, corn, onion, bell pepper, garlic, cumin and salt to taste (I didn't add salt) and stir well.

* Cover and cook on LOW for 4 to 5 hours.

Note: optional
You can add 1 or more cups of cooked elbow macaroni to it at the end. (I do not add macaroni)

WEIGHT WATCHERS CHILI
CORE recipe

1 lb. ground turkey, browned
1 can Weight Watchers tomato soup
1 can pinto beans
1 onion, diced
1/2 green pepper
1 clove garlic
1/2 tsp. Cajun seasoning
1/2 tsp. Mrs. Dash
1/2 tsp. paprika
Chili powder and spices to taste

Combine all ingredients and let cook on medium for one hour then allow to simmer until ready to serve. Simmer at least one hour. 1 g. per 1/2 cup serving.

PORK AND BLACK BEAN CHILI (YUMMY)

1 lb lean boned pork loin roast
16 oz jar thick & chunky salsa
2 (15 oz) cans no-salt-added black beans, undrained
1 cup chopped yellow bell pepper
3/4 cup chopped onion
1 tsp ground cumin
1 tsp chili powder
1 tsp dried oregano
1/4 cup fat free sour cream

Trim fat from pork; cut into 1 inch pieces. Combine pork and next 7 ingredients in a 4 qt electric slow cooker; stir well. Cover w/lid; cook on low heat for 8 hrs or until pork is tender. Ladle into bowls; top with sour cream.

4 servings (2 cups chili & 1 tbsp sour cream)
1 serving = 6 points

Black Bean Chili
serves 4-6

1-1/2 pound Ground beef
1 large Onion, diced
1 large green bell pepper, diced
2 15oz cans Black beans
1 teaspoon garlic powder
2 Tablespoons Cumin
2 medium Tomatoes, diced
1 7oz can mild diced green Chiles
1 12oz bottle beer
1 12oz jar Chili Sauce
salt and pepper to taste
grated Monterey Jack cheese

In a heavy soup pot, brown the beef, onion and green pepper. Cook until beef is brown and onion is translucent. Drain off any excess fat. Drain and rinse the cans of black beans. Add the remaining ingredients (except the cheese). Bring to just under a boil. Reduce the heat and simmer for 1-1/2 hours. Calories are approximately 450 calories per serving for 6 servings without cheese. Serve warm, garnished with the cheese.

ZUCCHINI AND CARROT CHILI

This recipe has won 2nd prize twice at chili cook-off.

2 medium zucchini - chopped
4 medium carrots - chopped
1 medium green pepper - chopped
2 garlic cloves
1 15 oz can garbarzo beans
2 15 oz can S&W zesty chili beans
1 1/4 oz can sliced black olives
1 1/2 tsp of cumin
12 oz jar medium picante sauce
1 28 oz can cut-up tomatoes

*cashews and shredded cheddar cheese can be added when you serve it, but not for eDieter's!

Saute zucchini, green pepper, onion, carrots and
garlic in olive oil until crisp and tender. Combine
tomatoes, picante sauce, cumin, black olives, beans,
and sauted vegetables in crock pot. Cook on high for
one hour and then reduce heat to low for 2 - 3 hours.

* add these ingedients when you serve, ONLY FOR COMPANY!

White chicken chili

1 lb. cooked, torn chicken breast
3 cans great northern beans
1 sweet onion, diced
3 cloves garlic, minced
2 or 3 pickled jalapenos, diced, I use pickled
1/2 tsp. black pepper
2 tsp. cumin
2 tsp. chili powder
1/2 tsp. oregano
1/2 tsp. parsley
1/2 tsp. seasoned salt
4 tsp. chicken base and 4 c. water or 4 c. chicken broth
2 Tbs. canola oil

Heat the oil in the pot and saute the onion 'til soft, add garlic and other seasonings and spices, stir and quickly add chicken, broth and beans so the garlic doesn't burn. Stir well and let simmer for 1/2 to one hour. I use leftover chiken taco meat for this sometimes, but I still add more cumin and chili powder because I love spices. Hope you like it... It's really low in fat, high in protein, high in fiber. I serve it with colby-jack cheese and sour cream and fresh cilantro.

CHICKEN (OR TURKEY) WHITE-CHILI
100% "CORE"

From "THE CANYON RANGE, By JEANNE JONES.

1. I've tried it yesterday for the first time and liked it a lot.
It's SPICY.
2. You can reduce the spiciness by eliminating the Cayenne spice.
3. Points will depend on the amount of cooked chicken you use.
4. I used a cooked Rotisserie Chicken I bought in the supermarket (skinned and bonned).
5. It's more like a thick soup than a chili.
6. IT'S 100% "CORE" .

INGREDIENTS:
1 pound Great-Northern CANNED beans,cooked.(I've used Baby Lima Beans)
4 cups Chicken Broth(I've used Low- sodium Chicken Broth)
2 medium onions, coarsly chopped
3 garlic cloves, chopped
1 tsp. salt ( I eliminated)
1/2 cup canned green chilies
2 tsp. ground cumin
1 1/2 tsp. oregano
1 tsp. ground coriander
1/4 tsp. ground cloves1/2 tsp. cayenne
Chunks of cooked chicken or turkey

OPTIONAL: 1 cup grated monterey-Jack cheese(I eliminated)

METHOS

1. Saute the onion and garlic with pam in a large pot.
2. Add the rest of the ingredients, including the cooked chicken/turkey.
3. Bring to a boil, reduce heat and simmer for 30 minutes.

LOW FAT MEXICAN GREEN CHILI


Brown skinless chicken breasts or lean pork loin, chopped into large pieces. About 2 pounds in olive oil

Add one large onion and 2 to 3 gloves of garlic to brown.

Add 2 tbsp. of oregano to the onions, meat and garlic.

Then add large can of green chiles rinsed.

Add one small can or 1/2 can of jalepenos. Watch it, they are hot.

Add one can of chopped tomatoes.

Add chicken broth, one can or more.

Let cook for about one hour or more.

Add cornstarch or flour to thicken.

Very low in calories.

This is great over bean burritos with lettece, tomatoes and a little cheese or just as a soup with a torilla.

SPICY TURKEY CHILI

(from WW favourites recipe book)

1 tablespoon olvie oil (i used pam spray)
1 pound lean ground turkey
3 gren bell peppers diced
4 onions chopped
6 garlic cloves minced
1 tablespoon ground cumin
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper
3 bay leaves (i used 2 tablspoons of chilli powder in place of above ingredients)

1 28 oz can of crushed tomatoes
2 15 oz cans of black beans drained and rinsed
1 15 oz can FAT FREE refried beans
one 4 oz can of diced green chilli peppers
one 4 oz can sliced jalapenos (optional)

In a large saucepan spray with pam or heat oil, add turkey bell peppers ad spices, cook until turkey is browned and vegies softened.

Add all other ingredients bring to a boil reduce heat and simmer about 45 mins (i added about 1.5 cups of water but i think I would add even more next time as it is very thick)

This makes approx 12 1 cup servings at only 3 points a cup. I tend to eat it as a main meal and have 2 cups which is very filling for only 6 points.

CORE" VEGETARIAN BEAN CHILLI

Note! The Title above should say "CORE" instead of CPRE"

Sautee 2 chopped onions until golden with 1 TBS. (or less) of olive oil
Add 1 big can of vegetarian beans, 1 frozen bag of Lima beans, 1 can crushed tomatoes , no salt added posibble,, ( or fresh crushed tomatoes),1 can corn ( or frozen corn),1 TBS. BROWN SUGAR ( not on Core: count , OR add brown sugar substitute).
Cook 15 minutes. Add garlic and herb seosening, black pepper. Top it with chopped parsley or chopped dill.
