DESSERT POLENTA

I tasted a sample of this dessert and it was very tasty.
I never ate Mascarpone cheese.
If this dessert is rich, I'll eat a small portion for one serving.
Serves 4
Prep time: 10 minutes
Cook time: 5 minutes

INGREDIENTS

2 1/2 cups water
3/4 cup cornmeal
1/4 cup sugar
Salt
1/4 teaspoon cadamon1
1/4 teaspoon allspice
1 orange juice and zest
3 tablespoons butter
4 ounces mascarpone

DIRECTIONS

1. In a medium size pan bring the water to a boil. Slowly add in the cornmeal while mixing constantly to avoid lumps.
Add the sugar, salt, cardamom, allspice, orange juice and zest and simmer 15 minutes while stirring occasionally, being sure not to let it stick on the bottom.

2. Turn off heat and allow butter to melt and fold in the mascarpone.
Pour polenta onto a sheet tray and place into the refrigerator to cool.

3. Once cooled, cut polenta into desired shape and top with fresh fruit.

I bought today Faro and I wanted to see how it will work in the slow cooker, instead of using Quinoa or Steel cut Oats.
Absolutely WONDERFUL results!!! The Faro was soft, melts in the mouth.
I eat it for breakfast with soy milk, or it is a dessert, or a snack.
You can find it in the bulk section of a whole food store, or in a package in the organic section in the grocery store.

FARO PORRIDGE IN THE SLOW COOKER

INGREDIENTS

1 cup Faro
4 cups of water
2 fresh apples, washed and diced with the peel
3 long cinnamon sticks
A little Splenda brown sugar blend
Few dry cherries
Some cranberries
Few dates, diced
A little Stevia

METHOD

Put all the ingredients in the slow cooker on HIGH setting for about 3-4 hours.
Watch it carefully. Make sure you don't BURN it (remember! It is on HIGH setting) . It is done when the Faro is soft and smooth, with a little liquid in.

Really a great discovery. I love it!

FARRO SALAD

I bought in the grocery store the faro salad in the salad bar.
Amazing!
The best ingredient was small pieces of DREID APPLES. So Yummy.
The recipe in the link below resemble the one I had. Mine had fewer ingredients. I'll ask to give me the ingredient's list of the faro salad. I hope they will.

CINNAMON ROASTED BUTTERNUT SQUASH RECIPE

This is really a superb recipe!

I made it yesterday and it tasted better than candy, and it is good for us.
I think that this recipe is so successful because the temperature of roasting is high and it aloud the butternut squash to carmalized.
*** Please watch the oven every 5 minutes, and take it out before it burns.

I made couple of changes:

1. Instead of brown sugar, I used Splenda brown sugar blend.
2. I bought at Costco refrigerate Butternut squash, already peeled and cubed and it had only 6 cups in the bag (this recipe is for 8 cups of Butternut squash) I followed all the ingredients as is.
3. I didn't add cayenne pepper
4. Always heat it up before eating. Will taste better.

Chocolate Mousse - Quick , Easy, Yummy Dessert with SECRET Ingredient!!!

INGREDIENTS

2 small packages of sugar free, fat free Instant Chocolate pudding
Skim milk according to box directions
8 oz. light Cool Whip
secret ingredient : 1 teaspoon of DRY Decaf instant coffee

DIRECTIONS

1. Make pudding following the directions on the box.
2. Add Cool Whip and instant decaf coffee
3. Mix well
4. Refrigerate

Most important!!!
Serve it in a clear wine glass or dessert glass. The better it looks, the better it will taste.....

1 (15 oz.) Can Solid Pumpkin
1/2 Cup Egg Substitute
1 (12 oz.) Can Fat Free Evaporated Milk
3/4 Cup Splenda Granular
1 teaspoon Ground Cinnamon
1/2 teaspoon Salt
1/2 teaspoon Ground Ginger
1/4 teaspoon Ground Cloves
1 (9 oz.) Package Jiffy Yellow Cake Mix
4 ounces Diet 7UP or Sprite
1/2 Ounce Chopped Pecans

Preheat oven to 350 degrees. In a medium bowl combine the Pumpkin, egg substitute, evaporated milk, Splenda, cinnamon, salt, ginger and cloves. Spray a 9X13 inch pan with non-stick cooking spray. Pour the pumpkin mixture into the pan. Sprinkle the cake mix evenly on top. Next pour the diet 7UP over the dry cake mix. Top with chopped pecans. Bake for 45-50 minutes. Cool. When ready to serve, top each piece with fat free cool whip (optional).

I made this apple crisp without flour and only 2 tablespoons of olive oil.

APPLE CRISP

Pre-heat oven to 350 degrees

INGREDIENTS

6 large apples cored and sliced thin. Leave the skin on.
1 cup Oates
1/2 cup of Splenda brown sugar blend
1/2 cup walnuts
1/2 cup raisins
1 cup low fat granola
2 tablespoons olive oil

METHOD

Spray Pam on the baking pan.
Spread sliced apples in the pan.

In the food processor put the Oats, brown sugar, 1/2 cup walnuts, 1/2 cup raisins, 1 cup low fat granola and 2 TBS. olive oil. Pulse few times to chop. Spread over the apples and bake 30 - 40 min.

So simple to make. Delicious! My husband loves it.

Note! You can experiment with any flavor of pudding.

1 large (or two small) sugar free, fat free chocolate pudding
Skim milk
8 oz. (or more, to your taste ) Cool Whip
1 teaspoon decaf instant coffee

METHOD
Make the pudding according to package instructions. Fold in the Cool Whip.
Refrigerate.

This version, from cooking light is wonderful (not as good from the store, full of cream and more...),but I tastes wonderful and it is definitely lighter.

Each serving:

Calories: 187
Fat: 5.1 g
Protein: 4.2 g

Fiber: 3.5 g
Cholesterol: 88 mg
Sodium: 233 mg
Calcium: 86 mg

INGREDIENTS:

7 cups chopped carrots (about 2 pounds)
2/3 cup granulated sugar (I used Splenda brown sugar blend)
1/4 cup fat-free sour cream
3 tablespoons all- purpose flour
2 tablespoons butter, melted
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt
3 large eggs, lightly beaten

Cooking spray
1 teaspoon powdered sugar (I eliminate it)

METHOD

Pre - heat oven to 350 degrees

Cook carrots in boiling water 15 minutes or until very tender.
Place carrots in a food processor; Process until smooth.
Add the granulated sugar and next 7 ingredients (granulated sugar through eggs):
Pulse to combine.

Spoon mixture into a 2-quart dish coated with cooking spray.
Bake at 350 for 40 minutes or until puffed and set.
NOTE: I cooked it longer because I doubled the recipe.
Sprinkle with powdered sugar.

SLOW COOKER BREAKFAST QUINOA
From a wonderful cookbook called: Crock-Pot, the original slow- cooker Diabetic recipes

I made it today and I love it.
If you like Whole-Grains including Quinoa, you'll love this recipe too. It is always good to try new recipes.

INGREDIENTS

1 1/2 cups Quinoa
3 cups water
3 packed tablespoons brown sugar (I used Splenda brown sugar blend)
2 tablespoons maple syrup (the real pure one!)
1 1/2 teaspoons ground cinnamon (I used only 1 teaspoon ground cinnamon, and I added 3 cinnamon sticks)
3/4 cup golden raisins (optional! I used half raisins and half dried cranberries)
I added the dried fruits in the beginning.
Sliced strawberries and banana (I didn't use it. It was good enough without it. I like it with Vanilla soy milk)

METHOD

1. Place Quinoa in FINE-MESH strainer, rinse WELL under cold running water.
Transfer to Slow cooker.
2. Stir it water, brown sugar, maple syrup and cinnamon. Cover: cook on low 5 hours or on high 2 1/2 hours or until Quinoa is tender and water is absorbed.
3. Add raisins, if desired. for the last 10 to 15 minutes of cooking time. Top the Quinoa with strawberries and banana.

Makes 6 servings

Nutrition Information per one serving

Calories: 233
Total fat: 3g
Saturated fat: less than 1 g
Protein: 6g
Carbohydrates: 47g (the GOOD Carbs!)
Cholesterol: 0g

I made it yesterday and we love it. I know I'll repeat this recipe again and again:
Easy to make and delicious.

YOGURT PIE

INGREDIENTS

1 small box sugar free, fat free jello (any flavor you like. Experiment with different ones. I chosed cherry flavor this time)
1/2 cup boiling water
1 teaspoon Knox original gelatin, unflavored
1/4 cup cold water
16 oz. non-fat fruit flavored yogurt ( I used Faye Greek non-fat plain yogurt)
1 cup Lite Cook Whip (measure one cup!)

METHOD

Dissolve Jello in boiling water. Add unflavored Gelatin and cold water to flavored Jello, thicken slightly in the refrigerator.
Take it out and add the yogurt and Cool Whip to thicken Gelatin. Mix well. Pour into pie shell.
(I just put it in a fancy bowl. It looks wonderful)

Genius! ----- 1-2-3 Cake. I love this idea!!!
You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix. Mix them together (shake them in a big bowl). Then simply store the mixture in an airtight container until you get the urge for dessert. Then just put three Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water. Microwave it for one minute and you will have a single serving of cake! Top with fruit, ice cream, whipped cream or whatever! Awesome for those of us who want something sweet every now and then without making an entire cake!!!

This has probably been posted before but it is too good not to share again. Take a box of angel food cake mix (the kind that you only add water to) and a box of any other flavor cake mix and combine them well. In a small microwave safe bowl, combine 3 tablespoons cake mix, 2 tablespoons water, and cook for 1 minute in the microwave. I like to eat mine with some cool whip or fat free Redi Whip.

Each serving is 3 points plus.

APPLE SALAD
12 servings @ 3 PT+

1 1/2 Cups Skim milk
3 cups Apples, cut up
4 oz cool whip fat free
1 pkg instant sugar free fat free butterscotch pudding (3oz)
1 cup mini marshmallows
8 oz crushed pineapple in its own juice
1/2 cup grapes-cut in half
1/2 cup walnuts, chopped (opt)

Make the pudding with the milk until thick; set aside. Chop the apples into bite size pieces and add the pineapple and juice on top of apples-this helps the apples from browning. Add grapes, nuts and mini marshmallows to the apple mixture. Combine the cool whip with the pudding mixture and add all this to the apple mixture. Chill at least 1 hour before serving.
(can also use instant sugar free fat free vanilla in place of butterscotch pudding.)
3/4 cup=1 serving

Cookies and Cream Freezer Cake

Our lightened-up version of ice box cake is a summer crowd-pleaser. It'll hit
the spot on hot, humid days.

Ingredients
3½ oz Pudding, vanilla, ready-to-eat, about 1 cup
3 cup(s) Cream, whipped, aerosol, lite
9 oz Cookies, chocolate wafers
1 oz Bittersweet chocolate, shavings

Instructions
1. Line bottom and sides of a 13- to 14-inch long pan with plastic wrap, making
sure you use a big enough piece so that you have enough extra wrap to cover
prepared cake.
2. In a medium bowl, gently fold pudding into whipped topping.
3. Take a wafer and spread about 1 1/2 tablespoons of cream mixture over cookie
surface. Top with another wafer and spread about 1 1/2 tablespoons of cream
mixture over second cookie; repeat to form a stack of about 6 cookies and cream.
Carefully turn stack on its side and place in pan so cookies are standing on
their sides. Repeat with remaining cookies until you create 1 long row of
cookies and cream in pan. (Reserve any broken cookies to crumble over top as a
garnish.)
4. When cake assembly is complete, use a spatula to scoop up any cream that has
oozed out of sides of cookies and place back on top of cake.
5. Wrap plastic tightly around cake in pan and freeze immediately for a minimum
of 2 hours.
6. Slice cake on a diagonal into 12 pieces and sprinkle each piece with shaved
chocolate. Yields 1 slice per serving.

Fran's Sweet Wheat Salad - Fantastic!

I love Jane Brody's two cookbooks: Good Food book and Good Food Gourmet. This recipe is from Good Food Gourmet.
Her recipes are wholesome, easy to make and taste great. In purpose, Jane does not add nutrition information to each recipe.

Notes!
1. I added extra chopped parsley
2. I added 2 tabelspoons of Splenda brown sugar blend. I like this salad sweet.
3. I also added the juice from one orange, and I used the whole orange rind
4. I'll try it also with wheat berries (hard) and wheat berries (soft) and also with Quinoa.
I'm sure it will be great.
5. Can be eaten as breakfast, lunch or dinner. Just add protein.
Can be eaten as a snack and as dessert (sweet)
6. I added the walnuts (used, instead of pecans) with the dressing. It was still crunchy.

INGREDIENTS

SALAD

2 cups boiling water
1 cup coarse bulgar (preferably whole-grain) In middle-eastern stores buy Bulgar # 4
1/2 cup currants
1/4 cup minced Italian parsley

1/2 cup chopped pecans

DRESSING

2 teaspoons grated orange rind
1 1/2 teaspoons olive oil1/4 teaspoon fresh ly ground black pepper

DIRECTIONS

1. In a medium-sized bowl, combine the boiling water and bulgar, and let the bulgar stand for 45 minutes or until it is tender but crunchy. Drain any remaining liquid.
2. Combine the bulgar with the currants and parsley.
3. In a small bowl, combine the dressing ingredients, and add them to the bulgar mixture. Chill the bulgar until 1 hour before serving it.
4. Before serving the salad, stir in the pecans. Serve the salad at room temperature ( eating it cold was also great).

I just made this yesterday, off the top of my head. It turned out wonderful. I cut the cake into 12 equal pieces so I could count 4 points each square.

I used a 9 by 13 pan

Looking for something to make any occasion special. This tasty dessert will fit the bill.

1 8-ounce package no-sugar added low fat cake mix
1 4 serving size package sugar-free instant chocolate pudding mix
2 cups fat-free milk
1 pound fresh, dark sweet cherries, pitted- or one 16 ounce package frozen unsweetened pitted
dark red cherries, thawed, and well-drained.
2 cups frozen, fat-free whipped dessert topping, thawed
Unsweetened cocoa powder (optional)

1. Prepare cake mixaccording to package directions in a 13x9x29 inch baking pan. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cut into 1 inch pieces.

2. Meanwhile, prepare pudding mix according to package directions using the 2cups fat-free
milk. Cover, chill about 30 minutes or until set.

3. In a 3-quart trifle bowl or glass bowl, layer half of the cake cubes, halfthe cherries, halfofthechocolate pudding and half thewhipped topping. Repeata the layers. Ifdesired sprinkle withcocoa powder. Makes 16 (2/3 cups) servings.

Make-ahead directions: Prepare trifle as directed . Cover and chill up to 4 hours.

Per serving: 102 cal. 1 g toal fat (1 g sat fat) 1 mg cholesterol 110 mg sodium, 22 g carbs
1 g. fiber 3 g. protein.

RICE PUDDING
Serves 8 (or more)

* I made it yesterday. Unbelievable!
* I used Splenda blend
* Ground almonds are sold at Trader Joe's and are called almond meal
* I used SUSHI rice. It's the best for rice pudding. I bought it in the bulk section of a health store.
* You need to be in the kitchen while making it. To stir often and to check if most milk evaporated.

INGREDIENTS

4 oz/1/2 cup short-grain rice
39 fl oz/ 4 1/2 cups milk. I used 1% milk. I'm sure it will taste even better with higher fat milk.
2 TBS. orange flower water ( at middle eastern stores)
2 oz/1/4 cupcaster (superfine) sugar. I used Splenda blend.
4 oz/1/2 cup ground almonds (almond meal)2 TBS. coreflower (cornstarch)
1/4 teaspoon almond extract (Not more)
2 TBS. honey

DIRECTIONS

Put the rice in a large heavy-based with 1 cup (9 fl oz) water and a pinch of salt.
Cook over medium heat, stirring occationally, for 5 minutes, or until the water has been absorbed.

Set aside 1/2 cup of the milk. Stir 1 cupof the remaining milk into the rice, bring to a simmer, and when the rice has absorbed the milk, add another cup milk.
Continue to add the remaining milk in this manner, ensuring each addition of milk is absorbed before adding the next.
The rice should be very soft in 30 minutes, with the final addition of milk barely absorbed.

Meanwhile, steep the raisins in 2 teaspoons of the orange flower water for 15 minutes.

Mix the sugar with the ground almonds to break up anu lumps in the almonds.
Stir into the rice mixture and simmer gently for 2-3 minutes.
Mix the cornstarch with the reserved milk until smooth and stir into the rice. When thickened, simmer for 2 minutes. Remove the pan from the heat and stir in the almond extract and remaining orange flower water. Stir the pudding occasionally to cool it a little.

Pour the pudding into a serving bowl and when a slight skin forms on the top, sprinkle with the soaked raisins and drizzle with honey.
Cool completely before serving to individual bowls.

This recipe is easy to make. The sugar comes from dried fruit.

I'll try it tomorrow and let you know how I like it.

I've made it today and it fabulous. Very FILLING.

Notes:

1. I quadruple (x4) the recipe.
2. I made my own applesauce from 3 large fuji apple in my 8 years old (works like new) VitaMix machine.
3. I added Stevia (or you can add Splenda too). I like it sweeter.


Only 3 Points + per serving. (the 2 points per serving, mentioned in the recipe are on previous WW plan, before Carbs were added to the formula)

Did you know that quinoa is the only whole-grain that is full vegetarian protein.

Notes! I've only made this recipe. I LOVE it! I'll make it again and again.
I didn't have almond mik, so I used soy milk with 1/2 teaspoon (or less) of almond extract.
Instead of regular brown sugar, I used the Splenda blend of brown sugar.

Mix together 2 boxes Jiffy cornbread mix (the blue box), 2 eggs, and one can creamed corn.
Add nothing else. That's how it is so moist.

BIG CHOCOLATE COOKIE

This is an ancient WW recipe.

Preheat oven to 350 degrees. Bake about 10-15 minutes.

1 T. Reduced Fat Peter Pan Peanut Butter
1 T. + 2 t. hot water
1 t. vanilla
1/3 C. dry milk
2 t. cocoa powder
1/2 t. Baking Powder
3/4 oz. oatmeal
2 T. raisins
4 packets Splenda

Mix peanut butter and hot water until smooth in a medium bowl. Add
vanilla.

In small bowl mix the remaining ingredients.

Add the dry ingredients to the peanut butter mixture and stir until
combined well. Place on butter sprayed cookie sheet and bake -- do not
underbake. Outside of cookie will be dry.

330 calories, 51g carbs, 7.5g. fat, 4.75g. fiber

I like this cookie very much. I add extra banana to the mix.

Makes two big cookies

INGREDIENTS

1 1/2 oz. dry oatmeal
2 tablespoons chunky peanut butter
1/3 cup non fat dry milk
1 teaspoon vanilla
1 teaspoon baking powder
1/2 banana, ripe, mashed
1 teaspoon cinnamon
2 tablespoons raisins
3 tablespoons water

INSTRUCTIONS

Pre- heat oven to 350 degrees
Combine all ingredients. Divide into two cookies on a sprayed baking sheet.
Bake at 350 for 5 to 8 minutes. Don't over bake.
This makes tao soft cookies

Exchanges
1 cookie = 1 bread, 1/2 milk, 1 protein, 1 fat & 1 fruit

I hope it will be a delicious breakfast!!!!

I bought small equal amounts of three Whole-Grains at the bulk section of a healthy store
:
1. Winter (HARD) wheat berries
2.Thick cut rolled oats
3. Steel cut oats

I mixed them well and pur 1 cup of the grain mix in the slow cooker.

I added:

4 cups water
Dried cranberries
2 fresh apples, peeled, cored and sliced
6 small fresh peaches from the local fresh market, peeled and sliced )without the pit.

Either 6-8 hours on low or 4-6 hours on high

I can't wait to try it tomorrow with soy milk and stevia.

I'll let you know how it turned out.

Whole-Grains are so good for out health

The three grains go well together.

Superb chocolate peanut butter pie

This recipe makes TWO PIES!!!
Easy to make
Great for company or take it to a party
I got this recipe from a friend who got it from her W8W leader.
8 serving in ONE pie (16 servings in TWO pies)
Each serving 4 pointPlus

Not only it tastes so delicious, but you keep it in the freezer for company and for you too.
It looks very elegant when you cut a piece.
From freezer, wait 15-20 minutes to let it thaw a little.

INGREDIENTS

* 2 ready Crust (6 oz. net wt.), keebler or other brand
* 1.5 quart Pierre's or Eddy's Frozen vanilla yogurt (I think that only these companies make 1.5 quart frozen vanilla yogurt). Let it thaw about 30-45 minutes
* Two 3 oz. instant chocolate pudding package, sugar free, fat free (or one package 6 oz. if you can find it. Less money)
* 4 Tablespoons reduced fat crunchy peanut butter
* One - 8 oz. light Cool Whip. Let it thaw.

In a big bowl, put in all ingredients in and use a hand mixer to mix it well.
Spread the filling into the ready crust.
Freeze it.

Enjoy!

Lots of people will get hurt. I'm so sorry for them.
You can find 3 or 4 quart slow cooker or even smaller ones, but I suggest to buy the big one (not the biggest) = 6 quarts. You can cook a large portion and then freeze some in freezer zip logs, labeled.
That will save you money and time, which is great. You probably have those days (I certainly have) that a ready healthy meal is so welcome. (especially if you're tired or out of time)
I always double a recipe that I like a lot and know that it freezes well.
My daugeter in law bought years ago the 4 quarts one, and now she replaces it with the 6 quarts one. Both take almost the same space on the counter

Just a suggestion......

Thank you for your suggestions. There are only 2 of us so I am a wee bit dubious about a slow cooker. They always look so big.
I cook a lot in the electric Wok.
I am collecting a book from the Library today, have raided all the neighbors for their Microwave books.

The rate rise starts in July a lot of people are going to be very hurt.

That's a very high raise. The recipe here is my favorite (but I have many best favorites....smile...)
If you scroll down you'll find some microwave recipes.

What about slow-cooker (crock pot)? It takes very little electricity and there are many healthy desserts that can be made in the slow cooker.
I'm sure we've some under the category of slow cooker, but you can also google "slow cooker (or crock pot) healthy desserts".

I've made these. So delicious! I freeze them after I divide them into individual portions.

* Now I can lower the points value by using Joanna Lund's sweetened condensed milk recipe (see recipe below).

*** I put ALL ingredients in one microwave dish and melt it. I don't exactly follow the recipe. The result is great.
I put a small amount in cupcake muffins tins on a cookie sheet. Freeze and after about 4 hours I move the frozen "muffins" to a ziplog and label it.

CHEWY CHOCOLATE-PEANTU BUTTER BARS

2/3 cup extra chunky peanut butter
1 (14 ounce) can fat-free sweetned condensed milk, divided (see recipe below: Optional)
1 teaspoon vanilla, divided
1 cup semisweet chocolate chips

1. Line an 8 inch square baking pan with foil.
2. Place peanut butter and 2/3 cup sweetened condensed milk in a medium bowl. Microwave on HIGH 2 1/2 minutes. Stir and microwave 30 seconds. Stir in 1/2 teaspoon of the vanilla. Spread mixture in pan, pressing into an even layer with fingers.
3. Place remaining sweetned condensed milk and chocolate chips in a medium bowl. Microwave on HIGH 1 1/2 minutes. Add the remaining vanilla, stir until smooth. Pour chocolate mixture over the peanut butter mixture, spread with a spatula. Chill until firm. Cut into rectangular pieces. Store in an airtight container in refrigerator.

Yield: 20 servings

With sugar issues, it is necessary to add extra carbs and ensure I have something with me in case of a sudden sugar drop. Here is something I found courtesy of Diabetic Living Every Day Cooking.

This recipe makes 24 bars. Per bar: 126 cal, 3 grms tot. fat(0 sat) 30 mg sodium, 24 carbs, 1g
fiber, 2 gms pro. ( Exchanges 1 fruit, .5 starch, .5 fat, 1.5 carb choices)

Nonstick cooking spray.
1 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 cup nugget wheat and barley cereal ( such as Grape Nuts)
1/2 teaspoons ground ginger
1 egg beaten
1/2 cup unsweetened applesauce
3 Tablespoons packed brown sugar
3 Tablespoons honey
2 Tablespoons cooking oil
2 7-ounce packages mixed dried fruit bits
1/4 cup sunflower seeds
1/4 cup chopped walnuts

1. Preheat oven to 325 degrees
2.,Line an 8x8x2 inch baking pan with foil. Coat foil with cooking spray. Set pan aside.
3. In a large bowl combine oats, flour, cereal and ginger. Add egg, applesauce, brown sugar, honey, oil; mix well. Stir in fruit bits, sunflower seeds, and walnuts, Press mixture evenly into pre-pared pan.
4. Bake for 30-35 minutes or until lightly browned around the edges. Cool on a wire rack. Lift edges of foil to remove bars from pan.

Ten-Minute Blackberry Cream Pie

Recipe courtesy Paula Dean (TIE, pg. 186)
Prep Time: 10 min Inactive Prep Time: 30 min Cook Time: 8 min Level:
Easy Serves: 8 servings

Ingredients

Pie filling:
1 (10-ounce) package fresh or frozen blackberries
3 tablespoons blackberry jam
1 (9-inch) store-bought LOW-FAT graham cracker pie crust or Paula's Pie Crust, recipe follows
1 (8-ounce) tub whipped topping (you can use low-fat or fat free Cool Whip)

Directions

Put the blackberries in a bowl and mash them with a fork until broken up. Add the jam and mix until combined.

Spoon the blackberry mixture into the crust (that you've already baked!). Top with the whipped topping and serve. Refrigirate leftovers.

Note! You can use store bought LOW FAT graham crackers pie crust instead of Paula Dean's pie crust recipe and bake it according to the directions below.

Pie Crust:
1 3/4 cups graham cracker crumbs
1/4 cup sugar
5 tablespoons butter, melted
Preheat the oven to 350 degrees F.

In a medium bowl, combine cracker crumbs and sugar. Add the butter and stir until combined. Press the crust into the bottom and up the sides of a 9-inch deep-dish pie plate. Bake for 7 to 8 minutes. Cool completely before filling.

Chocolate-Ricotta Mousse
6 servings
3 Points+ per serving

Chocolate-Ricotta Mousse, a suprb dessert from W8W new cookbook, titled: Just 5 - 125 recipes with 5 ingredients.
My husband thinks this is the best ever dessert recipe I've ever maid. Wow! I've made so many desserts so far.
I like the book a lot, especially with only 5 ingredients per recipe. I'll defintely use this book often. You may purchase this cookbook in your W8W meetings.

*** 1/2 a cup of ricotta cheese (FF or low fat) is one serving dairy.
*** Next time I make it, I'll double or even tripple the recipe.

I used part skim ricotta cheese and Not fat free.
I served it in a small wine glass with a stem, and put rasberries on the top, as suggested in the recipe. Very elegant.

Ingredients

1/4 cup semisweet chocolate chips
2 cups fat free ricotta cheese
3 tablespons confectioner's sugar
1/2 teaspoon almond extract (Not more! it might be bitter)
1/2 cup nondairy fat-free whipped topping

1. Put chocolate chips in a small microwavable bowl. Microwave on high until melted and very smooth, 30-35 seconds, stirring once halfway through microwaving time.
2. Puree ricotta, confectioner's sugar, and almond extract in food processor or blender. Transfer puree to medium bowl; whisk in melted chocolate. With rubber spatula, gently fold in whipped topping. Folding just until blended.
3. Cover mousse and refrigirate until thoroughly chilled, at least 1 hour or up to a day. Divide evenly among 6 dessert dishes (one serving will not be one full dairy serving)

Per serving (1/2 cup); 105 g
132 calories
3 g total fat
2 g sat fat
0 g trans fat
7 mg cholesterol
110 mg sodium
16 g total carb
12 g total sugar
1 g fiber
11 g protein
267 mg calcium

Healthy extra
Garnish each serving of this chocolaty mousse with fresh or frozen unsweetened rasberies.

I tried this recipe yesterday, it was really good , and easy to make.

1 sm pkg of SF, FF, Jello, any flavor
2 sm cups of FF yogurt
1 sm container of FF cool whip

Prepare the jello as directed with 1 cup water. Let it cool and then gently stir in the 2 cups of yogurt, and then the cool whip.
I used strawberry Jello and added a few strawberries, yummm

My husband brought from work two bars. I tasted it. Unbelivable. It also looks beautiful.
I may make it and freeze for company.

Make your own sugar free instant pudding

Recipe for sugar free instant pudding

Serves 4 large servings at 104 cal.
serves 6 at 69.4 cal

2 cups low fat milk
1/3 cup fat reduced instant milk powder
2 Tbs Splenda/or if you want it sweetener 1/3 cup sweetener, or 1/2 cup sugar
1/3 cup instant Jello __ in Australia 2 Tbs gelatine
Vanilla extract

For Chocolate
1/3 cup cocoa powder

You can make it any flavour you like buy adding food colouring and flavourings.

I experimented today with Wheat Berries, great whole-grain, using the slow cooker.
You can find Wheat Berries in the bulk section of whole food stores and probably in packages at Trader Joe's.

Crock Pot Wheat Berries Compote (dessert or snack)

Ingredients

1 cup Wheat Berries, dry, Summer ones, soft.
(The winter wheat berries are harder and take longer to cook and their color is darker).
4 cups water
2 apples, peeled, cored and cubed
2 pears, peeled, cored and cubed
Next time I'll add 1 stick of cinnamon

Combine all ingredients in the slow cooker and cook on LOW for 8 hours, or until the wheat berries are soft.

We added ground cinnamon and stevia to taste.
Delicious!

Enjoy!

p.s.
For those members on the "SFT" (simply filling technique), no counting is necessary because all the ingredients are POWER FOODS.
I'm so glad I'm doing the "SFT".

CRUSTLESS PUMPKIN PIE (my favorite. Got it from a WW friend)

Recipe makes two 9” pies . Each pie has 6 servings
1 Slice= 1 point (total of 12 servings in both pies)

Note!
I purchased the 32 oz. real egg product, original egg beaters.
1 cup of this equal 4 eggs.
2 cups of this equal 8 eggs.

Ingredients:
1¾ cup Splenda
1 tsp salt
3 tsp cinnamon
1 tsp ground ginger
½ tsp nutmeg
2 small containers of Egg Beaters (4 eggs each container)
1 29 oz can of pure pumpkin
2 cans of fat free evaporated milk

• Mix the Splenda with all the spices
• In a separate bowl mix the pumpkin with the egg beaters
• Add the Splenda/spice mix to the pumpkin mix
• Slowly add the evaporated milk while mixing
• Pour the mixture into two 9” pie pans that have been sprayed with cooking spray
• Bake at 450 degrees for 15 minutes
• Reduce the oven temperature to 350 degrees and bake for another 20-30 minutes until a toothpick comes out dry
• Cut each pie into 6 slices and enjoy

Servings/4

1 1/2 cup of FF cottage cheese
1 1/2 cup canned crushed pineapple in juice
1 cup canned unsweetened mandarin oranges
1 4-serving size Jell-O sugar Free Lime
1 cup cool whip FF

Drain the fruits use the Jello- dry, combine all ingredients, mix well, and chill.
