I made the stuffed peppers yesterday, and we think they are the best ever.

STUFFED PEPPERS

Important Notes:
1. I used lean ground beef instead of the ground lamb
2. I use my biggest pan and lay on the bottom aluminum foil, so I don't have to wash it later.
I sprayed the aluminum foil with Pam
3. I doubled the recipe and I used very large peppers
4. I baked it 60 minutes instead of 30-40 minutes
5. The first 15 minutes I covered the pan with aluminum foil. After that, I baked it uncovered
6. I added a little spice blend, the one I liked the most.

7. I used more chopped onion
8. I used Jasmine rice
9. I could fill the peppers with rice, all the way to the top, because the rice was cooked already


INGREDIENTS

4 large bell peppers
1 pound ground lamb
1 cup finely chopped onion
1 1/2 cups COOKED white or brown rice
1/2 cup catsup
1/2 cup raisins
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon coarsely cracked blacl pepper
1/8 teaspoon cayenne pepper
1 large egg
Salt (about 1 teaspoon)
Optional garnish: toasted pine nuts (I did not use)

DIRECTIONS

1. Preheat oven to 375 degrees F
2. Stem peppers. Cut tops from bell peppers. Reserve. Remove ribs and seeds. Finely chop reserved tops. Set aside
3. Brown lamb (or beef) in large frying pan set over medium heat.
Add the onion and reserved bell peepers. Cook until onion is limp and becomes translucent. Remove from heat.
DISCARD all but 1 tablespoon drippings. COOL a little.
Stir in COOKED rice, catsup, raisins, allspice, cumin, cinnamon, black pepper, cayenne pepper, and egg. Add salt to taste.
4. Fill peppers with rice mixture. bake until peppers are soft when pierced with tip of a knife, about 30 to 40 minutes.
Garnish with pine nuts if desired.

Yield: 4 servings ( because I use very large peppers, one serving for me is half of one pepper)

FANTASTIC SPICE MIXTURE

UNSTUFFED CABBAGE ROLLS

Cabbage is a super food with lots of nutrients ! Among other health benefits, it is known for healing stomach ulcers and preventing cancer - especially colon cancer. It is very alkaline forming food. Eat it often!

INGREDIENTS

1 1/2 to 2 pounds ground beef or turkey
1 tablespoon olive oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes
1 can (8 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon sea salt

METHOD

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground beef is no longer pink and onion is tender.

Add the garlic and continue cooking for 1 minute.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt.
Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.

Yield: Serves 6 to 8

STRING BEANS WITH MEAT

So good! Delicious. Very little meat, just enough to add great flavor to the green beans.
Easy to make
For company and you

NOTES!
1 . I doubled and a half all the ingredients, except the meat.
2. I used 2 1/2 pounds, FROZEN Petite - Green Beans from Costco ( half a package of 5 pounds)
3. I used two cans, 28 oz EACH, of Dei- Frantalli coopped tomatoes with herbs and olive oil, INSTEAD of 1 can (1 pound) Italian plum tomatoes, chopped.
4. I cooked it for 1 1/4 hours instead of two)

INGREDIENTS

1 pound green string beans ( I used 2 1'2 pounds frozen beans)
1/2 pound ground beef or lamb ( I used lamb. Love Lamb. Beef will be great too)
1 green bell pepper, sliced ( I used 2 medium green peppers)
Salt and hot red pepper to taste ( I used salt and tiny cayeene, ground)
1 can ( 1 pound) Italian plum tomatoes, chopped ( I used 2 jars - see NOTE # 3)
4 garlic cloves, minced ( I used 8)
Black pepper to taste

DIRECTIONS

1.ash and trim green beans. Slice in half, lenghwise. set aside ( I used - see NOTE # 2, eliminating this step)
2. In a pan saute the meat over low heat, stirring, about fifteen minutes or until browned.
Add the green beans (frozen), green pepper(s), red pepper and salt.
Simmer for fifteen minutes longer.
Pour in thetomatoes and garlic. Cover amd cook about two hours or until tender. Sprinkle with the black pepper.

BEST MEATLOAF EVER
Freezes well
Great for company and for us too, of course!

I always make six one-pound loaves and label and freeze them for us and for company.

INGREDIENTS

6 pounds 85%-15% ground chuck
One large Vedalia onion, or any sweet onion
2 tablespoons olive oil
Fresh garlic, minced, about 10 cloves or less
Ground garlic to taste
One envelope of Lipton Recipe Secrets Onion, recipe soup and dip mix
1 can tomato soup, as is
1 jar Delarosso tomato basil, with pure olive oil and herbs - 24 oz. jar
about 2 - 3 cups of fresh grated parmesan cheese (4 oz??)
Bunch of parsley, rinsed well and chopped fine in the food processor
Tomato ketchup, about one cup PLUS more to just coat on top o the mix in the pans before baking
About half a loaf of Italian bread, sliced, chopped fine in the food processor (fresh bread crumbs)
5 eggs, mix
Salt and pepper to taste


DIRECTIONS

Pre-Hear oven to 350 degrees

1. Saute the onion in olive oil, until tender and gets pale golden color
2. Put onion in a very large bowl and add all the other ingredients, excepet the ketchup that will be spread on top of each loaf before baking. MIX EVERYTHING VERY WELL.
3. Divide the ground chuck mix into six bread loaves.
4. Spread on top a little ketchup
5. Put all six loaves in the pre-heated oven and bake them for onr hour and 20 minutes.Check if ready.
6. Cool, cover each meatloaf with aluminum foil, lable and date. Freeze when totally cool.

I just ate it and it is delicious.
I eat now only Trader Joe's sprouted rye or wheat bread, because the carbs per slice are only 7 grams. Calories per slice are 60, and fiber, I believe is 3 g.
The best part was the carmalized onions with olives and anchovy paste. I did not add salt to the carmalaized onions because the olives and the anchovy paste have enough salt int them.

The carmalized onion recipe can be done with any meat, beef, chicken, turkey..etc..
Togehter with the slice of cheese it was a great panini.
I made it in the panini: chicken patty, slice of cheese and carmalized onions on top.

I saw this recipe in a magazine and it looked great!
I'll try it.

Potato Tote Casserole

Ingredients

1 1/2 ground chuck
1 medium onion, chopped
3 cloves of garlic, minced
1 can, cream of celery soup (97% FF)
1 can, cream of mushrooms (97% FF)
1 can whole corn, drained
1 can green peas, drained
3 tablespoons browning sauce
1 tablespoon garlic salt
1/4 teaspoon ground red pepper
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon paultry seasoning
1/8 teaspoon ground sage
1 (32 oz) frozen potaote totes

pre-heat oven to 350 degrees.
Spray 13x9 pan
Brown the meat with onion and garlic. Drain the fat out.
In a large bowl mix the meat with everything except the frozen potato totes.

Put the meat miture in a pan. Add frozen potatoes totes on the top, and bake uncovered for 45 minutes- 1 hour. The top should get golden color.

Ground lamb ( or beef) and green bean stew

* I made this recipe yesterday. Just love it.
* Very easy to make and very tasty.
* I mostly use very lean ground beef instead of the ground lamb. I like it better with lamb.
* I use even more fresh green beans.
* Costco sells in their refrigirator cooler of vegetables and fruits, a package of thin fresh green beans, stems already removed, ready to cook. 2 pounds per package. Delicious.
* You can also frozen green beans.

Ingredients

1 TBS. olive oil
1 large yellow onion, diced ( I use sweet onion),
2 cloves garlic, minced ( I use 4)
1 pound ground or cubed lamb, or very lean beef
1 teaspoon kosher salt (I use less)
1 teaspoon allspice
1 1/2 pounds fresh green beans, stem removed and cut in half (frozen beans may be substitute)
1 (14.5 -ounce can peeled whole tomatoes, crushed or stewed tomatoes (I use stewed tomatoes)
1/2 cup pine nuts for the rice (I didn't cook rice. Pine nuts are very expensive, silvered almonds can be substitute)

Method

1. Heat the oil in a saucepan. Add the onion and garlic and saute until softened.
2. Add the meat; Season with salt and allspice and saute 10-15 minutes or until meat is no longer pink and the mixture is dry.
3. Add the beans and tomates and cook (cover with lid tilted) 20 minutes longer until the green beans are crisp tender (I cook 20 minutes extra, 40 minutes total)
Add the pinenuts, if desired and mix.

main meals | Meat, cheese, potatoes-we layered these favorite ingredients into a flavorful casserole. Sort of like a deconstructed cheeseburger and fries.

Ingredients

• 2 spray(s) cooking spray
• 2 large uncooked Yukon Gold potato(es), boiled or steamed whole, drained and cooled
• 1 clove(s) garlic clove(s), minced
• 1 small onion(s), chopped
• 1 small green pepper(s), chopped
• 1 cup(s) mushroom(s), sliced
• 1 pound(s) uncooked ground turkey breast
• 1/8 tsp Durkee Ground Cumin Seed, or other brand
• 1/4 tsp table salt
• 1/8 tsp black pepper, freshly ground
• 2 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product, or similar product, cubed
• 1/4 cup(s) low-fat evaporated milk
• 1/8 tsp crushed red pepper flakes
• 8 item(s) baked low-fat tortilla chips, crushed

Instructions

• Preheat oven to 350ºF. Coat a 9-inch square baking dish with cooking spray.

Peel and thinly slice potatoes; layer in prepared baking dish. Bake potatoes until slightly crisp, about 10 minutes; remove baking dish from oven and set aside.


While potatoes are baking, coat a large nonstick skillet with cooking spray and warm over medium-high heat; add garlic, onion, green pepper and mushrooms. Cook, stirring frequently, until vegetables are tender, about 7 to 10 minutes; remove to a plate, cover to keep warm and set aside. Add turkey to skillet; cook until browned, breaking up meat with a wooden spoon as it cooks, about 8 to 10 minutes. Add cooked vegetables, cumin, salt and pepper to turkey and stir to combine; spread mixture over potatoes in baking dish.


In a small microwave safe bowl, combine cheese product, evaporated milk and crushed red pepper flakes; cover and microwave on high power until cheese melts, about 1 to 2 minutes. Spoon melted cheese over turkey and sprinkle with tortilla chips. Bake for 35 minutes; remove from oven and let stand for 5 minutes before slicing into 6 pieces. Yields 1 piece per serving.

Serve with ketchup, if desired (could affect PointsPlus values).

Vary the flavor of this family favorite by substituting raw turkey sausage or ground sirloin for the turkey (could affect PointsPlus values).

2 medium zucchini, sliced
12 oz raw lean ground beef
1 large onion(s), finely chopped
2 clove(s) garlic clove(s), minced
1 cup(s) canned tomato sauce
2 cup(s) fat-free cottage cheese
1 large egg yolk(s)
1/2 cup(s) low-fat shredded cheddar cheese
1 Tbsp parsley, oregano or rosemary, chopped
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste

Instructions

Preheat oven to 500ºF. Coat a baking sheet with cooking spray and spread tomatoes and zucchini over sheet. Roast vegetables for 10 to 12 minutes.

Meanhwile, in a large, nonstick skillet, sauté beef, onion and garlic until beef is browned. Stir in tomato sauce and bring to a simmer.

Spread beef mixture in a large, shallow baking dish (3 quart or 9 X 13-inches) and top with roasted vegetables. Reduce oven temperature to 350ºF.

Whisk together cottage cheese, egg yolk, cheddar cheese, herbs, salt and pepper in a medium bowl. Spoon over roasted vegetables and smooth with a rubber spatula.

Bake until very hot and bubbling around edges, about 35 minutes. Cut into six equal pieces and serve immediately. (Note: If preparing casserole in advance and freezing it, make sure to thaw it completely in the refrigerator before baking it. Increase the baking time by 5 to 10 minutes.)
Notes

To give this dish an Italian accent, substitute fat-free ricotta cheese for cottage cheese and use 1/4 cup grated Parmesan cheese in place of the cheddar. Sprinkle with 2 tablespoons minced fresh basil just before serving.

BEST EVER TURKEY VEGIE BURGERS (DOUBLE RECIPE)

Today I've made them and they are the best! So delicious.
I doubled the amounts (a little more than double).
I cooked only 1/4 of the total amount.
I froze the mixture, uncooked, in three, 1 quart ziplog bags, puttin in each bag 1/4 of the total amount.
When I want to cook more burgers, I'll thaw it by taking the ziplog bag from the freezer to the refrigirator a day before cooking.

INGREDIENTS

1 celery stalk (I used 3)
3 scallions (I used 6)
2 cloves garlic, pressed (I used 4)
1 1/4 pounds ground turkey (I used 2 - 20 oz. ground turkey packages - the Jennie-O turkey store brand)1/2 pound turkey sausage, casing removed (Jennie -0 brand has now ground turkey sausage without the casing in 20 oz. package. I used the whole package, 4 oz. more than suggested.)
1/2 cup grated zucchini, squeezed dry (I used 1 1/2 cups)
1 tablespoon finaley chopped fresh oregano or 1 teaspoon dried (I used 3 tablespoons of fresh oregano)
1 1/4 teaspoons ground black pepper (I used 2 1/2 teaspoons)
1 tablespoon clover honey (I used 2 tablespoons)
2 teaspoons soy sauce (I used 4)
3 tomatoes, cut into 1/2 inch thick slices of mozzarella cheese (I didn't used those two ingredients)

METHOD

Prepare grill (I cooked the burgers on the stove in a frying pan with little olive oil, with open and close lid method)

Finely chop celery and scallions, place in a bowl with the garlic. (I used the food procesor to chop)

Add to bowl turkey, sausage, zucchini, oregano, pepper, honey and soy sauce: mix until combined.

Grill (direct) turning after 5 minutes, until just cooked through. Grill tomatoes 5 minutes, turning once, until bubbly.

immediately top burgers with mozzarella cheese slices, then tomato slices and serve. Serve on your favorite sourdough or multigrain bun.

Mozzarella Stuffed Turkey Meatloaf

Ingredients

1 1/2 lbs. of lean ground turkey
10oz frozen chopped spinach
1/2 cup bread crumbs
1 cup part skim mozzarella cheese
1/2 cup minced onions
2 egg whites
2 TBSP ketchup
1 TBSP worcestershire sauce

Instructions

Preheat oven to 375. Thaw and drain spinach. Mix all ingredients in a large mixing bowl. In a greased loaf pan pack mixture into shape. Bake for 60 minutes, or until top gets golden brown. Let stand 5 to 10 minutes after baking. Cut into 6 even pieces

EASY AND DELICIOUS UNSTUFFED "STUFFED" CABBAGE

* I got tis recipe from an excellent cook and I made it yesterday. Delicious and easy to make!
It tastes exactly like the real stuffed cabbage, but without the work.....
* There is NO use of oil in this recipe and it tastes so great!

Ingredients

1/2 pound ground turkey and 1/2 pound ground lean ground beef (total of 1 pound)
1/4 cup brown basmati rice and 1/4 cup jasmine rice (or any other long grain rice). Total of 1/2 cup.
1 or 2 eggs
1 large onion, chopped
2-6 garlic cloves, minced, to your taste
Salt and pepper to taste
1 can (15 1/2 oz.) tomato sauce
1 small cabbage, shredded finely

Directions

1. Pre heat oven to 350 degrees

2. Saute the onions in a non stick pan WITHOUT oil, only on high heat, stirring frequently, with the lid covered for 1-2 minutes, then take the lid off for 1-2 minutes, and repeat this method until onions are light golden-brown (without buning them). Please watch carefully because it may brown pretty fast.

3. Mix the "fried" onions with all other ingreadients, except for the cabbage.

4. Put half of the cabbage on the bottom of 9X13 pan (I used pyrex pan), add all the meat mixture on top of the cabbage, and then layer the second half of the cabbage on top of the meat.

5. Cover the whole mixture with LUKE WARM water, but just to cover it. Don't add too much water.

6. Cook it in the oven for 50 minutes to an hour, COVERED with aluminum foil. Check it in the middle of cooking and if it's too dry, add a little BOILED water to keep it moist.

7. After one hour of cooking add the tomato sauce on top of the mixture, COVER again and continue cooking 15 minutes more (about...) until it boils.

8. Turn off the oven and leave the pan in the closed oven 15 minutes more.

Skillet Baked Spaghetti

Last night I tried a recipe callaed Skillet Baked Spaghetti. I got the recipe from the recipe swap section.

It was easy to prepare and tasted so good. My whole family enjoyed it.

I just wanted to share it with all of you.

12 oz ground turkey or 90% ground beef
4 oz low fat Italian sausage (sweet or hot)
2 tsp minced garlic
1/4 tsp red pepper flakes
1/4 tsp dried oregano
28 oz. can crushed tomatoes
8 oz whole wheat spaghetti (uncooked)
2 cups water
1 1/2 tsp salt
1/4 cup fat free creamer
4 tbspn chopped fresh basil
1 cup low fat shredded Italian cheese blend

Instructions

Cook beef (or turkey) and sausage (casings removed) in a large non-stick skillet over medium heat, breaking up meat, until no longer pink (abt 5 mins). Drain meat on paper-towel lined plate and pour any fat from skillet.

Return meat to skillet, add garlic, pepper flakes and oregano and cook until fragrant about 1 min. Stir in tomatoes, water, basil and spaghetti (broken into three inch pieces) and cook, covered,stirring often, about 7 minutes until spaghetti is just past el dente.

Stir in creamer and 1/3 cup of the cheese. Pour into large pie-plate type dish unless pan is oven-safe. Sprinkle with remaining cheese and broil until surface is spotty brown about 3 minutes. Let cool 5 mins and serve.

I used all lean beef because I didn't have any sausage & also sprinkled a little grated cheese on top along with the mozzarella.

Prepared this tonight for dinner. Have had this recipe from my sister for years but lost it until recently. Quick and easy!! Sorry, no NI on this one.

1 pound lean ground beef or turkey
2 packages (3 ounces each) Oriental ramen noodles, crumbled
2 ½ cups water
2 cups frozen broccoli stir-fry vegetables
¼ teaspoon ground ginger
2 teaspoons low-sodium soy sauce
2 Tablespoons thinly sliced green onions

In a large skillet, cook beef over medium heat for 4-5 minutes or until no longer pink; drain. Add the contents of one ramen noodle flavoring packet; stir until dissolved. Remove beef and keep warm.

In the same skillet, combine the water, vegetables, ginger noodles, soy sauce and the remaining flavoring packet. Bring to a boil. Reduce heat, cover and simmer for 3-4 minutes or until noodles are tender, stirring occasionally. Return beef to the pan; cook for 2-3 minutes or until heated through. Stir in green onions.

Makes 4 servings


QB's note: This is a recipe kids would love, you could add the veggies they love instead of the frozen ones listed--just steam them a little first.

Skillet Stuffed Peppers

2 large green bell peppers, halved lengthwise and seeded
Cooking spray
3/4 pound ground round
1/2 cup water
1 (1.25-ounce) package taco seasoning
1 (20-ounce) package refrigerated mashed potatoes (such as Simply Potatoes)
1/4 cup (1 ounce) reduced-fat shredded cheddar cheese
Cracked black pepper (optional)

Place the bell pepper halves, cut sides down, on a microwave-safe dish; cover with plastic wrap. Microwave at HIGH 3 minutes and 30 seconds or until pepper halves are crisp-tender. Let stand, covered, 3 minutes (peppers will soften).
While the peppers cook, heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add beef to pan; cook 3 minutes, stirring to crumble. Add water and seasoning, and stir to combine. Cover, reduce heat, and cook 5 minutes or until done.

While beef cooks and peppers stand, cook the potatoes in microwave according to package directions, omitting salt and fat.

Spoon 1/2 cup beef mixture into each pepper half; top each with 2/3 cup potatoes. Sprinkle each pepper half with 1 tablespoon cheese. Garnish with black pepper, if desired.

Yield: 4 servings (serving size: 1 stuffed pepper half)

Cabbage Hot Dish

Made this tonight - one of my family's favorites, easy and low in points! An easy way to make something that tastes similar to a stuffed cabbage.

1 bag coleslaw mix
1 pound lean ground beef, browned
1/2 cup uncooked rice
1 can tomato soup
salt and pepper, to taste

Put cabbage mix in bottom of casserole dish, put ground beef and rice on top of cabbage. Mix tomato soup with one can water - pour over top. Cover. Bake 350 degrees for about an hour (maybe a little longer) until rice is done. I stir about half way through baking.

Cheeseburger Chowder - Taste of Home

INGREDIENTS

1 pound ground beef

1/4 cup chopped onion

1-1/2 cups water

3 teaspoons beef bouillon granules

1/2 teaspoon salt

2 cups cubed red potatoes

1 celery rib, thinly sliced

3 tablespoons all-purpose flour

2-1/2 cups milk, divided

1 cup (4 ounces) shredded cheddar cheese

DIRECTIONS

In a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, bouillon and salt. Add potatoes and celery. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.

Combine flour and 1/2 cup milk until smooth; gradually stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Stir in the remaining milk; heat through. Stir in cheese until melted.

7 servings

One serving:

Small amount of 96% hamburger, 1/4 cup of whole wheat elbows, onions, peppers, zuchinni, summer squash, 1/2 cup spegitti sauce, two cans diced seasoned tomatoes and additional seasons. Brooke's Homemade Meatloaf

Easy Serves:
6 servings Ingredients

Glaze:
1/4 cup ketchup
1 tablespoon Dijon mustard
2 teaspoons packed light brown sugar

Meatloaf:
2 pounds ground beef
1 medium onion, finely chopped
3 tablespoons ketchup
2 large eggs
1 slice white bread, torn into pieces
1 teaspoon salt
3/4 teaspoon freshly ground black pepper
Directions
Preheat the oven to 350 degrees F.

In a small bowl, whisk together all the glaze ingredients and set aside.

In a large bowl, combine all the meatloaf ingredients and mix well. Press the mixture into a 9 by 5-inch loaf pan. Bake for 30 minutes. Remove from the oven and brush some of the glaze over the top of the meatloaf. Bake for 30 minutes more. Remove from oven and let stand for 5 minutes. Turn the meatloaf out onto a serving platter and spoon the remaining glaze over the top before serving.

Spicey Beef and Potato Soup-(e-mealz)

-1 lb lean ground beef
-4 cups peeled and cubed potatoes
-1 small onion diced
-3 8oz cans tomato sauce
-4 cups water

Weight Watchers Chili
(Makes 15 cups – 1 point per cup)

½ lb. lean ground turkey
1 small onion diced
1 cup celery diced
1 – 28 oz. can diced tomatoes
1 medium bell pepper diced
1 medium yellow squash diced
1 medium zucchini diced
1 – 15 oz. can black beans
1 package chili seasoning mix
1 – 12 oz. can low-sodium low-fat beef broth

Brown turkey and onions in pan sprayed with Pam. Add the remaining
ingredients (don’t drain the beans… the juice adds flavor) and cook for
30-40 minutes or until vegetables are tender.

Diner Meat Loaf 'Muffins'

1 teaspoon olive oil
1 cup finely chopped onion
1/2 cup finely chopped carrot
1 teaspoon dried oregano
2 garlic cloves, minced
1 cup ketchup, divided
1 1/2 pounds ground beef, extra lean (raw)
1 cup finely crushed fat-free saltine crackers (about 20)
2 tablespoons prepared mustard
1 teaspoon Worcestershire sauce
1/4 teaspoon freshly ground black pepper
2 large eggs
Cooking spray


Preheat oven to 350°.

Heat the olive oil in a large nonstick skillet over medium-high heat. Add chopped onion, chopped carrot, dried oregano, and minced garlic; sauté 2 minutes. Cool.

Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl.

Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350° for 25 minutes or until a thermometer registers 160°. Let stand for 5 minutes.

Yield: 6 servings (serving size: 2 "muffins")

Mexican Beef over Polenta

Can be frozen

1 pound(s) uncooked lean ground beef (with 7% fat)
1 small onion(s), chopped
14 1/2 oz canned diced tomatoes, with chiles, drained, reserve 1 Tbsp of liquid
1 cup(s) canned yellow corn, drained, or frozen, thawed corn kernels
10 items olive(s), Kalamata, sliced
2 Tbsp canned jalapeno peppers, pickled, chopped (optional)
3/4 tsp table salt, divided
1/4 tsp ground cumin
1/8 tsp black pepper
3/4 cup(s) polenta, quick-cooking
3 cup(s) canned chicken broth
1/3 cup(s) salsa
1/3 cup(s) shredded reduced-fat Mexican-style cheese
2 Tbsp cilantro, or scallion, fresh, chopped (optional)

Instructions
Heat a large nonstick skillet over medium-high heat. Cook beef and onion, stirring frequently, until meat is fully cooked, about 5 to 7 minutes; drain off any liquid. Stir in tomatoes and reserved liquid, corn, olives, jalapenos (if using), 1/4 teaspoon of salt, cumin and pepper; simmer 5 minutes to allow flavors to blend.


Meanwhile, in a small pot, combine cornmeal, broth and remaining 1/2 teaspoon of salt; stir well. Bring to a simmer and cook, stirring constantly, until cornmeal is thick, about 5 minutes.


Spoon polenta onto a large serving plate and top with beef mixture. Top with salsa, cheese and cilantro (or scallion). Divide into 6 portions and serve.
Notes
The polenta will still be soft after cooking but will firm up if allowed to stand for a few minutes before serving.

I made this for dinner tonight, and it was amazing!
I got this recipe from one of the WW boards, but I don't know who to credit since I've had this recipe in my "to try" pile for a while. I modified the recipe to use ground chicken, but the original called for lean ground beef.


2 pounds ground chicken
1 onion, chopped
2 cloves garlic, minced
1 cup ketchup
½ bell pepper, chopped
3 tablespoons worcestershire sauce
3 tablespoons brown sugar
2 tablespoons mustard
2 tablespoons cider vinegar
1 ½ teaspoon chili powder
Hamburger buns

In a heavy skillet, brown ground beef with onion and garlic. Drain off excess fat. Combine ketchup, bell pepper, Worcestershire sauce, brown sugar, mustard, vinegar, and chili powder in slow cooker. Stir in ground beef mixture. Cover and cook on LOW setting for 7 to 9 hours. Serve spooned over hamburger buns.

2 garlic clove(s), minced
1/2 cup onion, chopped
10 1/2 oz canned Rotel tomatoes, mild
1 cup salsa
1 cup frozen corn kernels, thawed
¼ cup egg whites
1/3 cup FF milk
1 box Jiffy Corn Muffin Mix, dry mix only
6 large olive(s), pitted & chopped
6 oz fat-free soy cheese, shredded


Preheat oven to 350 degrees

Cook ground beef, garlic, and onion ‘til brown, breaking up clumps. Drain. Stir in Rotel and salsa. Spread meat mixture in a 9"x11" casserole dish.

In a small bowl, stir together muffin mix, egg whites, milk and corn until combined. Spread over meat mixture. Sprinkle with olives.

Bake for 45-50 minutes; then top with cheese and melt under broiler.

16 ounces ground 90% lean ground beef (or turkey)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1-3/4 cups (one 15-ounce) can chunky tomato sauce
1/3 cup (1-1/2 ounces) sliced ripe olives
1/2 cup (2.5-ounce) jar sliced mushrooms, drained
1-1/2 tsp. pizza or Italian seasoning
3/4 cup (3 ounces) shredded reduced-fat mozzarella cheese
3 cups hot cooked elbow macaroni, rinsed and drained

In a large skillet sprayed with olive-oil cooking spray, brown meat, onion , and green pepper. Stir in tomato sauce, olives, mushrooms, and pizza seasoning. Add mozzarella cheese and macaroni. mix well to combine. Lower het. Cover; simmer 10 minutes. Mix well just before serving.

HINT: 2 cups uncooked macaroni usually cooks to about 3 cups.

Yield: 6 servings

273 calories, 9g fat, 2g fiber, 9g protein, 26g carbohydrate, 803mg sodium

Shepherd's Pie For 2

Serving Size : 2

1 tsp canola oil
3 oz 93% lean ground beef
1/4 cup chopped frozen onion
1 cup frozen mixed veggies
1/2 cup diced Italian-style tomatoes
1 potato, microwave-cooked, and sliced
1/4 cup FF milk
1/4 cup FF grated cheddar cheese

Preheat oven to 400. Heat a medium skillet over medium heat. Add oil. Brown meat, breaking up into small chunks. Add onion, veggies and tomatoes. Cook 5 minutes. Turn mixture into a small oven-proof dish. Mash potato with milk in a small bowl, cover meat mixture with potato, sprinkle with cheese. Bake 10 - 15 minutes until cheese is browned and bubbling.

HEALTHY SALSA JOE'S

6 reduced-calorie hamburger buns
16 ounces ground 90% lean ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 tsp. bottled minced garlic
1 cup (8 oz.) tomato sauce
1/2 cup chunky salsa
2 tsp. Splenda Granular, optional

In a large skillet coated with olive-flavored cooking spray, brown meat, onion, green pepper and garlic. Add tomato sauce, chunky and Splenda. Lower heat and simmer 15-20 minutes. If mixture gets a little dry, add a small amount of water. Serve on hamburger buns.

Yield: 6 (1/3-cup mixture + 1 bun) servings

1/4 cup chopped onion
1/4 cup chopped green bell pepper
1/2 teaspoon garlic powder
1 teaspoon prepared yellow mustard
3/4 cup ketchup
3 teaspoons brown sugar
salt to taste
ground black pepper to taste

DIRECTIONS
In a medium skillet over medium heat, brown the ground beef, onion, and green pepper; drain off liquids.
Stir in the garlic powder, mustard, ketchup, and brown sugar; mix thoroughly.
Reduce heat, and simmer for 30 minutes. Season with salt and pepper.

Beef and Hashbrown Casserole

1 pound cooked ground beef -- lf
21 ounces Campbell's 98% ff Cream of Mushroom Soup
8 ounces Kraft 2% rf Natural Mild Cheddar Cheese
5 cups Ore-Ida Country Style Hashbrowns

Spray 9 x 13 pan with PAM. Sprinkle 2 cups hashbrowns in bottom of pan. Combine the beef and soup then spread mixture over hashbrowns. Sprinkle cheese over beef mixture. Top with 3 cups hashbrowns. Bake at 350 degree oven for about 30 minutes.Then broil for several minutes to brown, if desired.

3 Packets of Dry Thick & Zesty Tomato Seasoning
1 pound Ground Turkey Breast
1 Diced onion

Brown Turkey Breast and onion in skillet. when done, drain and add the Tomato Sauce ant the seasoning packets and about a cup of water. Then, in seperate pan boil pasta. Mix these together. I figured it at about 6 or 7 smiles a 2 cup serving. YUMMO

Fried Potatoes, Onions & Smoked Sausage

3 lb. baking potatoes (peeled, sliced)
1/3 cup olive oil
1 onion (diced)
1 package Oscar Meyer Smoked Turkey Sausage
Kosher Salt (to taste)
Pepper
Mrs. Dash Garlic & Herb (to taste)

Heat oil in skillet over medium-high heat. Add potatoes, seasoning & sausage til potatoes get a nice golden brown color. Reduce heat to low and cover skillet with a lid and cook til potatoes are fork tender. Makes 8 one cup servings.

Easy filling meal. I halfed this to make 4 big servings. Serve with corn bread muffins and a salad.

Jalapeno Pinto Bean and Rice Casserole

1/2 cup chopped onion
1 lb lean ground beef
2 cans pinto beans or black-eye peas
2 cups white or brown instant rice
1 can diced can tomatoes, drain and chop
1 cup RF grated cheddar cheese
1-2 Tbs diced jalapenos from can

Brown meat and onions. Season with salt, pepper,onion and garlic powder. Stir in
beans, rice, tomatoes, and jalapenos. Mix well. Spoon in sprayed casserole. Sprinkle with cheese. Bake 350* for 20 min. Serves6-8.

I halfed recipe. Baked in 9x9, for 4 large servings. I used white instant rice and pinto beans

Ground beef casserole

1 lb lean ground beef (or ground turkey)
1/4 medium onion
5 oz Campbell's Healthy Request Cream of Mushroom Soup
5 oz Campbell's Cheddar Cheese Soup
20 oz frozen french fried potatoes (or tator tots if they're lower in calories and fat)

Preheat oven to 375. Combine the ground beef and onion in a skillet over medium high heat. Cook until beef is no longer pink and onion is translucent. Drain off excess grease and season with salt, pepper and garlic powder. Return to heat and stir in both soups until well blended. Heat through and remove from stove. Transfer the mixture to a 9X9 baking dish. Cover the ground beef mixture with a layer of frozen fries. Bake for 25 to 30 minutes. When the fries are golden brown remove the casserole from the oven.

I made yesterday a new dinner recipe and both my husband and I loved it. We'll definitely do it again and again.

Turkey meatballs, chicken sausage and vegetables

Notes:
1. Read the whole recipe first, before buying the ingredients.
2. The recipe calls for ground beef, but I used turkey meat.
3. I bought at Trader's Joe (or you can get it anywhere) frozen turkey meatballs to save time.
4. I also bought at Trader's Joe (or anywhere) 3 colors of frozen peppers, chopped to save time.
5. Great also for company.
6. Easy to make.

Ingredients:

1 pound turkey meatballs
2 pounds fresh tomatoes, peeled and chopped (I used only 1 pound and it was enough)
6 garlic cloves, minced
1 hot pepper, seeded and chopped finely
4 green peppers, chopped (I used instead 1 pound of frozen peppers. see note # 3 above)
1/2 cup oil (I used 1 tablespoon olive oil instead and it was enough. 1/2 a cup is way too much).
Salt and pepper to taste (I didn't add salt)
8 chicken sausages, fully cooked, sliced thin (I bought 2 packages at Trader's Joe, or anywhere)

Put all of the ingredients in a large pot. Bring to a boil. Cook on medium heat for 10 minutes.
Lower the heat and simmer for one hour.

Enjoy

Mexican Meatball Subs

1 Lb. 96% Lean Ground Beef
1 Large Egg, beaten
3 Tablespoons Taco Seasoning Mix
5 Hot Dog Bun, low calorie,
5 Tablespoons Shredded Cheddar or Mozzarella Cheese
5 Tablespoons Salsa
5 Tablespoons Sour Cream, light

Preheat oven to 375 degrees. Combine the ground beef, egg and taco seasoning mix by hand. Divide into 15 meatballs (a little over 1 1/2 tablespoons each). Spray a 9 inch glass baking dish with non-stick cooking spray. Arrange the meatballs in the baking dish so that they aren't touching. Bake for 15-18 minutes, or until no longer pink in the middle. If they start to brown too fast on top, you can lay a piece of foil on top of the dish. Once complete, place 3 meatballs inside each hotdog bun. Top each with 1 tablespoon of cheese, 1 tablespoon of salsa and 1 tablespoon of sour cream. You can also top with shredded lettuce and diced tomatoes if desired.

Serves: 5
Per Serving: 254 Calories; 8g Fat (28.2% calories from fat); 26g Protein; 21g Carbohydrate; 3g Dietary Fiber; 103mg Cholesterol; 496mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean Meat; 0 Vegetable; 1/2 Fat; 0 Other Carbohydrates. (AimeesAdventures)

I got this recipe off the food and recipe site. My family just loved it, said it was a keeper. You need to cook it in a dutch oven though because it will fill it up. Very good.


Cheesy Chili Mac

1 spray(s) cooking spray
2/3 pound(s) raw extra lean ground beef
2 medium onion(s), chopped
29 oz canned stewed tomatoes, Mexican-style (undrained)
2 1/2 cup(s) canned tomato juice
4 oz canned green chili peppers, diced, drained
2 tsp chili powder
1 1/2 cup(s) uncooked macaroni, elbow
31 oz canned pinto beans, drained and rinsed
1/2 cup(s) low-fat shredded cheddar cheese

Instructions

Coat a large skillet with cooking spray. Cook ground beef and onion over medium-high heat until meat is browned, about 10 minutes; drain off fat.


Stir in undrained stewed tomatoes including juice, tomato juice, chili peppers and chili powder; bring mixture to a boil.


Stir in macaroni and beans; return to boiling. Reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Spoon chili into bowls and sprinkle with cheese.

Cowboy Stew serves 6-8

2 can Ranch style beans
1 can regular corn
1 can sliced or diced potatoes
1 can diced Mexican flavored tomatoes
1 can Ro-Tel tomatoes
1/2 can diced green chiles
1-1 1/2 pounds lean ground beef, browned with 1/2 onion, garlic power,chili powder and pepper.
Mrs. Dash Original to taste

Brown meat with spices and onions. Add all other ingredients and heat slowly on stovetop or put into crock pot on low for as long as you need to leave it.

My best friends brother-n-law worked for Wendy's fast food chain for several years, she gave me this recipe when she found out how much I love their chili. I was surprised to see how simple it was!

40 min | 10 min prep

SERVES 12

1 onion, chopped
1 bell pepper, chopped
1 (14 ounce) can stewed tomatoes
4 (8 ounce) cans tomato sauce
1 (14 ounce) can ranch style beans
1 (14 ounce) can pinto beans
1 (14 ounce) can kidney beans
1 (10 ounce) can Rotel diced tomatoes
1 (1 1/4 ounce) package McCormick mild chili seasoning
2 lbs ground chuck
Brown Ground Chuck. Add all canned items, including juice, into large pot.
Cook until onion and pepper are tender.
Serve.
Freezes nicely.

Chili Con Carne
Source WW Take Out Tonight!

1 teaspoon Olive Oil
1 large Onion, chopped
3 garlic cloves
1 (4 ½-ounces) can chopped mild green chiles
2 Tablespoon Cajun seasoning
1 Pound ground grounded turkey ( I use 93% lean ground beef)
1 (28-ounce) can Italian peeled tomatoes, chopped
1 cup prepared salsa
½ cup water
¼ cup chili powder
1 teaspoon sugar
½ teaspoon salt
2 (15-ounce) cans red beans kidney beans, rinsed and drained


1. Heat a large nonstick saucepan over medium heat. Swirl in the oil, then add the onion. Cook, stirring occasionally, until softened, about 6 minutes. Stir in the garlic, chiles, and seasoning. Cook until fragrant, about 1 minute. Add the turkey and cook, breaking up the turkey with a wooden spoon, until browned, about 8 minutes. (I cook to this stage then add everything to a crock pot and cook on low for about 7 to 8 hours. High to 4 hours.)

2. Add the tomatoes with their liquid, salsa, water chili powder, sugar, and salt; bring to a boil. Reduce the heat and simmer, covered, until the flavors are blended and the chili thickens slightly,
About 1 hour. Stir in the beans and cook until heated through.

Stovetop Cheeseburgers

1 lbs lean ground beef
4 oz velveeta 2%, cubed
1/4 c. onion chopped
1 clove garlic minced
2 TB hidden valley ranch seansoning mix
3 TB Skim Milk

Brown beef, onions and garlic in large skillet. Drain well. Mix in all other ingredients and stir until cheese melts. Serve on wheat buns.

Red's Famous Pumpkin Chili (modified)

1 lb ground turkey breast (honeysuckle white) (make sure it’s turkey breast and not just ground turkey)
1 can (15 oz) Libby’s pure pumpkin
1/2 cup chopped sweet white onion
1/2 cup chopped tri-colored peppers (or any peppers you have on hand)
1 tbsp chili power (or more to taste)
1 tbsp garlic (or more to taste)
1 tbsp cumin (or more to taste)
2 tsp dried oregano (or more to taste)
Salt and Pepper to taste
2 cans (14.5 oz each) Hunts stewed tomatoes (un-drained)
1 can (15.25 oz) Bush’s dark red kidney beans (un-drained)
1 can (4 oz) tomato sauce (the small one)
1 can (4 oz) diced green chilis

Directions:
-Saute onions and peppers until desired softness
-Add in the ground turkey breast and garlic, cook until no longer pink.
-Drain and stir in pumpkin, onion and spices
-Simmer 5-10 minutes.
-Add the remaining ingredients and bring to a boil.
-Turn down heat, cover and and cook for 20 more min.

Makes six, 2-cupservings
(Approximately 12 - 1 cup servings for entire recipe)

Per serving (at 6 servings for whole recipe) 220 calories, 0g total fat per serving, 7g fiber

Easy Beef and Noodle Dinner

1 lb extra lean ground beef
1/2 cup chopped onion
1 (14.5 oz) can diced tomatoes
1 cup water
1 tblsp dried italian seasoning
1 (3oz) pkg beef flavor ramen noodle soup mix
1 1/2 cups frozen cut green beans

In a skillet, cook beef and onion until beef is cooked.
Add tomatoes, water, seasongs and contents of seasoning packet from the ramen noodles.
Mix well. Bring to a boil. Break up noodles, stir in noodles and beans.
Return to a boil, reduce heat to low, cover and simmer 5 minutes or until
noodles and beans are tender, stirring occasionally.

4 servings
305 cal, 11g fat, 3 fiber

Mexican Chili-Cheese Burgers

1 pound ground round
1 cup chopped seeded plum tomato
1/4 cup minced fresh cilantro
1 tablespoon chili powder
2 teaspoons minced seeded jalapeño pepper
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/4 teaspoon pepper
Cooking spray
4 (3/4-ounce) slices reduced-fat Monterey Jack or cheddar cheese
1/4 cup fat-free sour cream
4 (1 1/2-ounce) hamburger buns
4 iceberg lettuce leaves
8 (1/4-inch-thick) slices tomato
Grilled onions (optional)

Combine first 9 ingredients in a bowl; stir well. Divide mixture into 4 equal portions, shaping into 1/2-inch-thick patties.
Prepare grill. Place patties on grill rack coated with cooking spray; grill 6 minutes on each side or until done. Place 1 cheese slice on top of each patty; cover and grill an additional minute or until cheese melts.

Spread 1 tablespoon of sour cream over top half of each bun, and set aside. Place patties on bottom halves of buns; top each with lettuce, tomato, onions (if desired), and top half of bun.

Yield: 4 servings

1 pound ground round
1 1/2 cups bottled salsa
2 teaspoons salt-free barbecue rub (such as Spice Hunter)
1 (15-ounce) can kidney beans, drained
1 (16-ounce) tube of polenta, diced
Cooking spray
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese

Place the beef in a 2-quart casserole. Cover with lid, and microwave at HIGH 8 minutes, stirring after 4 minutes. Drain well. Combine beef, salsa, rub, and beans in dish. Cover; microwave at HIGH 4 minutes or until hot.
Place the polenta in a 9-inch pie plate coated with cooking spray. Spoon beef mixture on top of polenta, and cover with plastic wrap. Microwave at high 6 minutes or until thoroughly heated. Uncover; sprinkle with cheese.

Yield: 6 servings (serving size: 1 wedge)

Mexican Lasagna

1 pound ground beef
1 (16-ounce) can whole kernel corn, drained
1 (15-ounce) can tomato sauce
1 cup picante sauce
1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 (24-ounce) container low-fat small-curd cottage cheese
2 large eggs
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon garlic salt
12 (5-inch) corn tortillas
1 cup (4 ounces) shredded Cheddar cheese


Brown ground beef in a large skillet over medium heat, stirring until it crumbles and is no longer pink; drain. Stir in corn and next 4 ingredients; bring to a boil. Reduce heat, and simmer, stirring often, 5 minutes. Remove from heat, and set aside.

Stir together cottage cheese and next 4 ingredients.

Arrange 6 tortillas on bottom and 1 1/2 inches up sides of a lightly greased 13- x 9-inch baking dish. Spoon half of meat mixture over tortillas; top with cottage cheese mixture. Arrange remaining tortillas over cheese mixture; top with remaining meat mixture.

Bake at 375° for 30 minutes or until thoroughly heated. Remove from oven, and sprinkle with Cheddar cheese. Let stand 10 minutes before serving.

Yield: 8 to 10 servings

Mexican Polenta Casserole

9x13 pan
1 medium chopped onion
1 lb. 93% lean ground beef
2 tsp. cumin
1 tsp. chili powder
1-2 cups tomato sauce
prepared polenta (1 tube or about 2 cups cooked)
1 lb. can spicy refried FF beans (I use Garden of Eden black)
6 slices SoyaKaas jalapeno Mex-Kaas soy cheese

Brown onion and meat. Add spices (or use packet of taco seasoning) and tomato sauce. Simmer about 10 minutes then set aside. Spread polenta out in bottom of pan. Spread refried beans on top of polenta. Then spread on meat and onion mixture. Top with soy cheese. Bake about 30-45 minutes at 400º. Great with guacamole. Makes 6-8 main course servings.


This, of course, is much more spicy. I also prefer making it with the home-made polenta because it tastes better IMHO and is a LOT cheaper.

Here's a delicious version of a recipe I got from this group and tweaked a bit. Thanks to the original poster!

Turkey with Broccoli Slaw

1/2 cup chopped onion
1 clove garlic, minced
2 tsp olive oil
1 1/4 lb ground turkey
1 package broccoli slaw
1 Tbsp low sodium soy sauce
1/2 cup chicken broth
1 1/2 Tbsp hoisin sauce
1/4 cup cashew pieces

Soften onion in oil just until it begins to brown. Add garlic, saute 30 seconds. Add turkey, cook until browned. Add broccoli slaw, soy sauce and chicken broth, and sauté until veggies are tender but still crunchy. Stir in hoisin sauce and cashews.

Serves 4-6. Great served w/rice.

CROCK POT BROWN SUGAR CHILI

6 Servings

1 lb. extra lean ground beef
1/2 c. onion, chopped
1/2 c. brown sugar
2 T. prepared mustard (I used 1 T. Dijon and 1 T. honey mustard)
2 c. low-sodium tomato juice
2 cans (15 oz. each) red beans or kidney beans
1 t. chili powder (or to taste)

Brown ground beef and onion; drain. Place in slow cooker.

Add remaining ingredients. Stir well.

Cook on high 2-3 hours or on low 4-6 hours. Stir occasionally if possible.

This is too sweet for me and my hubby, but we usually add some spice *heat* to it and that really makes it better! This is the only chili recipe we make now!!! It is awesome!!!

Meatloaf with Roasted Vegetables

The meatloaf and vegetables cook together to mix the flavors in this well-rounded meal.

Ingredients

4 slices white sandwich bread, crust trimmed, bread torn into bite-sized pieces
2 eggs
4 Tbs. Worcestershire sauce
1 C. chopped onion
1/3 C. plus 1 Tbs. ketchup
1 Tbs. garlic powder
1/2 tsp. salt
1/2 tsp. ground pepper
1 1/2 lb. lean ground beef
1 14 1/2 oz. can beef broth
1 large sweet potato, peeled, quartered lengthwise
2 russet potatoes, peeled, quartered lengthwise
4 carrots, peeled, halved lengthwise

Directions

Preheat oven to 375 degrees. Mash bread, eggs and 3 Tbs. Worcestershire sauce in large bowl until smooth paste forms. Mix in onion, 1/3 C. ketchup, garlic powder, salt and pepper. Add beef and mix thoroughly. Mound meat mixture in 13x9x2-inch baking pan, shaping into 8x4-inch loaf. Spread remaining 1 Tbs. ketchup over meat loaf.

Pour broth and remaining 1 Tbs. Worcestershire sauce into pan around meat loaf. Arrange vegetables around meat loaf. Cover pan with foil. Bake 45 minutes. Uncover; bake until vegetables are tender and meat loaf is cooked through, about 35 minutes. Using spatula, transfer meat loaf to platter. Surround with vegetables; spoon some pan juices over.
