Newest version (as of October 2013) of our favorite Spaghetti squash lasagna.

SPAHGETTI SQUASH LASAGNA (from the Italian store)

This is SOOOOO good! I make this recipe all winter long almost every week.
Company loves it.

INGREDIENTS

3 medium-large Spaghetti squash, cut on the long side in half. Discard the seeds.
2 pounds Ricotta cheese (the fatter one. NOT part-skim)
1 1/2 to 2 pounds freshly grated mozzarella cheese (NOT low fat)
1/2 pound freshly grated parmesan cheese.
1 jar of spaghetti sauce. Anyone you like.
1 egg
salt (optional) and freshly ground pepper

METHOD

Take out a handful of the Mozzarella and parmesan cheeses and mix them together ( to spread over the lasagna when it is already done)

I have a convection oven, so I put two halves of spaghetti squash in Pyrex container. (11'x 17' x 4')
That means I use 3 containers.
I put on the bottom of each container 2" water.
Bake them all at the same time at 350 degrees, for about 1 hour, or until soft.
Cool. Scoop out the Spaghetti squash ( I get a HUGE amount).
With patience, take in your hands a hand full of the Spaghetti squash and squeeze out the liquids.
Continue doing it until the Spaghetti squash is almost dry.
NOTE: This step can be done a day before cooking. Refrigerate. That's how I do it. It makes it easier for me.

Pre- heat oven to 350 degrees

Mix well all three cheeses.
Add one egg and salt and pepper to taste, and mix well again.)

Divide the mixed cheeses in half
Divide the Spaghetti squash in half
Divide the Spaghetti sauce in half

LAYERS (from the bottom up)
Put in a LARGE baking container (I use one of the Pyrex container mentioned above. It fills it all the way to the top.

1. Half Spaghetti sauce
2. Half Spaghetti squash
3. Half mixed cheeses
4. Half Spaghetti squash
5. Half mixed cheese
6. Half Spaghetti sauce (top layer)

Bake for one hour, uncovered.
When done, take out the dish and spread all over the handfuls of the two mixed grated cheeses that you kept aside.

Done!

1 Box Whole Wheat Penne Pasta
3 Cans Tomoato Sauce (15 oz)
3 Packets of Dry Thick & Zesty Tomato Seasoning
1 pound Ground Turkey Breast
1 Diced onion

Brown Turkey Breast and onion in skillet. when done, drain and add the Tomato Sauce ant the seasoning packets and about a cup of water. Then, in seperate pan boil pasta. Mix these together. I figured it at about 6 or 7 smiles a 2 cup serving. YUMMO

Veggie goat pizza

One of my favorite restaurants has a veggie pizza I tried to recreate & I thought I'd share. It was so good! I just took a thin boboli crust and brushed with a little EVOO & sprinkled with italian seasoning.
Then I added sliced mushrooms, artichoke hearts, shallots, thin sliced garlic, and fresh spinach. I also added some goat cheese crumbles, lighly brushed again with some oil & baked according to the pizza crust directions. It was soooo good!

1 pound extra lean ground beef
1/4 cup chopped onion
1 cup bottled reduced-fat pasta sauce
1/2 cup fat-free sour cream
1 1/2 cup shredded fat-free mozzarella cheese
8 oz Pillsbury Reduced-Fat Crescent(s)
1/4 cup grated Parmesan cheese
1/2 Tbsp Land O Lakes Stick Light Butter

Heat oven to 375F. In large skillet, cook ground beef and onion over medium heat for 8- 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain. Stir in pasta sauce; cook until thoroughly heated. Meanwhile, in medium bowl, combine mozzarella cheese and sour cream; mix well. Pour hot beef mixture into ungreased 11x7-inch (2-quart) glass baking dish. Spoon cheese mixture over beef mixture. Unroll dough over cheese mixture. In small bowl, mix Parmesan cheese and butter. Spread evenly over dough. Bake at 375F. for 18 to 25 minutes or until deep golden brown.
Serves 6

Here's something that I threw together for dinner tonight. Turned out pretty good.

Parmesan Eggplant

1 eggplant, peeled and sliced thick
salt
garlic powder
3 egg whites, beaten
1 c. Panko crumbs
2 tsp. olive oil
2 Tbs. grated Parmesan

Lightly salt the eggplant and place on a paper towel-lined cookie sheet and let stand for about 30 minutes. Meanwhile, mix the olive oil and Panko in a skillet over medium heat and toast, stirring occasionally. When golden, remove crumbs to a pie dish and set aside to cool. When cool, stir in the Parmesan. Rinse the salt from the eggplant and pat dry. Place a cookie cooling rack on the cookie sheet and spray with cooking spray. Sprinkle the eggplant with garlic powder, dip in the egg whites and coat with the Panko. Place on the cooling rack. Lightly spritz tops with cooking spray and cook at 400* for about 20 minutes. I ended up turning the broiler on at the end to brown the tops.

I hope this recipe makes sense the way it's worded. I made this myself, so I didn't have a written recipe. This is based on a Chicken Parmesan recipe that I have that I can post later if anyone is interested.

I looked through the categories and could not find this one so here goes one that I love.

Italian Hot Sausage

Serving Size : 12

Categories : Turkey, Pork, Italian

1/2 pound pork loin -- ground
1 1/2 pounds turkey breast -- ground
1 1/2 tablespoons fennel seeds -- crushed in the palm of your hand
2 tablespoons dried parsley -- minced (more or less to your taste)
4 cloves garlic
1/2 teaspoon crushed red pepper flakes -- (more or less to your taste)
1/2 teaspoon oregano
1/2 teaspoon rosemary
1/2 teaspoon basil
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 cup water

Grind meats in the bowl of a food processor. This is best done in several small batches.

Place meat and seasonings in a large bowl and thouroughly mix together. Do not overmix as it will toughen the meat.

At this point you may need to add a little more water. Use your judgeent but do not make it too wet.
Place in refrigerater for at least an hour to allow flavors to blend. Mix again gently

Using plastic wrap or waxed paper shape meat into a 2" diameter log. Cut log into 12 equal pieces.
Flatten each piece to your desired thickness.

To cook: Spray a heavy skillet with pam Cook over mediium heat.

(You can also cook this and crumble it while cooking for sauces.)

Per Serving (excluding unknown items): 101 Calories; 4g Fat (40.1% calories from fat); 14g Protein; 1g Carbohydrate; trace Dietary Fiber; 39mg Cholesterol; 80mg Sodium.

Exchanges: 0 Grain(Starch); 2 Lean Meat; 0 Vegetable; 0 Fat.

NOTES : I usually grind my own meats using the food processor. This way I know exactly what is in it. The store bought ground turkey has too much fat and them usually grind some skin in with it. I do this to keep the fat and calories down.
