The Melis family from the island of Sardinia- noted for their longevity.( 9 siblings average ages 92) eat this daily:)
minestrone soup i made today-
Used 3 different kinds of beans, plus 8 added kinds of veggies.
The beans can be varied as can the veggies with whatever we have on hand.
Delicious however we make it!

We have had a 1/2 lemon in hot water every morning for some time now. I believe the extra citrus daily has helped prevent us from catching all the flu and cold bugs we have been directly exposed to by other family members this spring!

I just made up a new batch of oatmeal that contains various seeds. It requires cooking on med low for an hour and refrigerating over night .
We had some for breakfast today from previous prep and it is delicious on it's own
but this time I added dried cranberries to it for color and sweetness.

Today i made up 10 cups of my own veggie broth. I then put the pulp through the blender and added it back to broth. Thus way i was able to retain all the fiber !
Froze most of it in pint containers. Used some to make a delicious asparagus soup for dinner.
Didn't have to add extra onion or celery called for as it was already in broth.
Very good and very easy.

I hope i am a good label reader and compare quality of food by nutrition label! There can be quite a difference i find between pkg cereals for instance. We know plain oatmeal is probably best choice but sometimes we choose Organic OZ's over Cheerios for example.

The Chia muffins i baked for breakfast-made with puréed sweet potatoes, and applesauce instead of fats. Plus doubled the chia seeds recommended. Very good!

I was'nt happy with lack of sage flavor in our Morning Star Veggie sausages so i added a tiny sprinkling of my own. It did the trick!

My weight had been steadily creeping up-even before the Holidays so I decided to do something about it.
Started this week on an every other day juice fast. Told my doctor what I am doing yesterday and she suggested I incorporate Smoothies. Good idea.
So yesterday I made up DR OZ Green Smoothie- 5 fruits and 4 veggies! Delicious.
Today my weight is down 2 pounds from a couple days ago.
This is solid foods day today but I will be back to jSmoothies tomorrow:)
Will keep you posted!

My culinary contribution today was the Cream of Asparagus soup I made for DH who
Can have both dairy and asparagus on his limited list of Kidney friendly .foods.
And I can eat asparagus but not dairy so plan tomorrow to make my own version with soy milk

When I requested a veggie plate at the nice restaurant we were at this evening I did not recognize one of the items on my plate. It turned out to be Polenta, I have read about it but never had it before. Delicious.

Today I plan to cook up brown rice and stir fry red and green peppers
with onions and carrots and celery to top the rice for lunch.
The peppers came from our garden and I need to use them up .

Ps-did this-followed a recipe and should have cut the soy sauce in half! Pretty spicy!
Live and learn. So I have added lots of cooked quinoa with no seasoning and it really helped calm down the problems:)

This morning I made " Spicy Vegetable soup" . For lunch. It called for Spinach but I used kale instead. . It also used up some of my fresh parsley from deck planters and . I added cooked brown rice that it did not call for. Family called it -Good! .served with whole grain crackers from Aldii's.
I also made another batch of apple nut muffins.

The Waldorf salad we made for dinner tonight-(we have a young guest coming:)
Apples, walnuts, celery, raisins, crushed pineapple , and a few miniature marshmallows and mayo mixed with yogurt.
If our guest was not going to be here I would have not used the marshmallows :)

The Bean-Kale soup I made for dinner.( first cooked up the navy beans from scratch)
Delicious and used the fresh kale and fresh parsley that DH brought in from the garden. Suppose to freeze tonight.
I gave several servings of the kale and parsley too bagged and in the fridge.

Yesterday, I chopped up into bite size chunks, ---
Red, yellow, green, peppers, red onions, a and tiny red potatoes , ( the potatoes I microwaved for 3 minutes) and tossed the whole batch with olive oil and salt and pepper.
Roasted in hot oven and what a gorgeous, delicious dish!

Anyone else out there cooking?

Today, after reading how CRUCIFEROUS vegetables are one of the best preventives of all kinds of cancer--recommended 1/4to1/2,cup daily!

I decided to cook up the green and red cabbages that DD had brought home.

Looked up how to tenderize them by following boiled cabbage recipe. In large frying pan I sautéed sliced carrots and sliced onions in butter and added that to the cooked chopped cabbage along with chopped baked potato.

It made a huge casserole and very pretty. Divided the whole batch into glass bowls- to freeze most for later.
Now we can have our daily 1/2 cup serving with no hassle :)

The green pea, lentil soup I made yesterday and still eating.

DINNER TONIGHT ,
WAS THE PIE PLATE FULL OF MIXED RAW VEGGIES STICKS AND 4 TABLESPOONS OF HUMMIS DIP.
CARROTS, CELERY, CUCUMBER, RED, GREEN, AND YELLOW PEPPERS, AND ROMA TOMATO SLICES.
ATE IN FRONT OF OUR TODAY-NEWLY HOOKED UP TV SET , WITH ONE CUP OF CIDER.
WATCHING BAYLOR FOOTBALL TEAM BEAT KANSAS- 59 TO 14 THEN OUR POWER WENT OUT WITH STORM!
