I basically started making the salads in Eat for Health and have been very happy with them. There is a lot of variety in the veggies in them, and the nut-based dressings each have their own flavor.
One big motivator for me to eat a salad every day is that when I skip a day, then I often get constipated. So there IS a short-term reward, too, to eating raw veggies.
I guess that is one alternative for you. If you need a break from salads, eat raw veggies in some dip and get your fresh greens in a smoothie or wrap it around some hummus. Something like that.
