Lucky for me I am a corn snob. I like it fresh and rom NJ LOL The stuff they have here for the most part is some sort of anemic white corn that has no taste so I usually pass.Oh and they want .60 for each ear of it Ummm no ..I do love it drenched in butter and peppered :)
Oh well.I am going to look for the low salt version of the old bay.
I made egg plant parm yesterday not low fat either LOL

Today's lunch is smothered chicken with rice, New Orleans style. It was leftover from last night's dinner. Not lowfat really but I didn't care, I had a craving for it.

I noticed that Old Bay has come out with a reduced sodium one, I bought it but haven't used it yet. I also saw a blackened seasoning but I didn't buy it - not a huge fan of the blackened mixes. I'll have to try it on corn on the cob, usually I put Creole seasoning on my corn - I've got serious corn issues. I could seriously eat it every day, the problem is that I like butter on said corn and that's probably not a good idea...

I Buy the nuggets as well they are cheaper and some of them are a good size. I just bread them and fry them not the healthiest but I do not do it often.
Suze where do you live. I think it is cool you get your own scallops YUMMY
I go to the all you can eat place maybe once -twice a year when I am there I indulge LOL I think it is when you go all the time you get in trouble
I love old bay have you ever tried it on corn on the cob instead of butter :)

I just bread eggplant and fry it too I have also done it in a tempura batter but like the breading better. Then I usually stuff it with ricotta and Mozzarella roll it and drizzle sauce over it

My supermarket carries the catfish nuggets as well and they're usually pretty cheap. I'm a big Old Bay user but what's in the Everglades Seasoning, I've never heard of it? I'll season them with the Old Bay and panko and then bake them. Oh and you collect your own scallops? Jeepers, I'd love to have the shells you collect, are they bay or sea scallops?

Suze, don't be afraid of the all you can eat places, just start loading your plate with the healthy stuff first and leave only a little spot for the indulgent foods. As long as you don't take a second plate you'll be fine.

Lunch yesterday was another pizza (I have just enough time to throw one on the pan in the toaster oven while I'm in the shower) and strawberries and an apple. We, too, live in the sticks, and delivery is out of the question. DH picked up a DiGiornio Foccacia a few weeks back and it was so heavy and greasy! There are a few good pizza places near work, but I can never remember to order ahead. We do have a CiCi's and a Pizza Hut lunch buffet close by, but I'm afraid of all-you-can-eat anymore! I try to make lunch easy for myself Mon-Thu, and Fridays, I just have sushi from the grocery.

The lady at our grocery fish counter got me turned on to catfish nuggets -- just the belly, apparently. We love 'em dipped in a mix of flour and either Everglades Seasoning or Old Bay and sauteed quick or baked. Ditto scallops, which we swim out to collect in the summer. Flounder's good that way, too, but until we buy the flats boat, we're relegated to frozen flounder or very expensive fresh.

That eggplant parm sounds YUM. How do you make it? I had it at a friend's once: the eggplant was breaded somehow (but not much) and sauteed, with marinara sauce poured over and a handful of part-skim mozz. I don't think it's traditional, but it didn't seem too heavy.

Ummmmm catfish :) I make that every so often .
I put whole wheat flour into the dough every so often It makes it heavier then I really like. The only delivey stuff here is Domino's Oh and they will not deliver this far out of town LOL (Being from your area I would rather eat road kill

I love homemade pizza as well but I have to say that I don't make it at home when I can easily order a pie to be delivered. I did however, find a recipe for a whole wheat pizza dough that you can make ahead, form into rounds and then freeze for individual pizza crusts. I might give that a try but I'll admit that as a NYC pizza purist, I honestly want my flour and water pizza crust, no multigrain in my dough....

Oh and I had catfish for lunch with steamed string beans and a potato gratin from our cafeteria. The potatos weren't low fat by any stretch but they were pretty tasty. I'll have a light dinner tonight.

Lunch today was another "personal pizza" and fruit; I still have a LOT of dough in the refrigerator, so it'll be dinner rolls or pizza for the next few days. One of my bread machine books talked of adding a handful of "old dough" to a new batch of bread, for added character. I'm totally thrilled at the wonderful sourdough flavour this batch in the fridge is taking on.

CW, I'm impressed with your credentials and I'm grateful for the recipe. I love to cook, but I wouldn't dare call myself a chef even in jest. My handle on some other sites is KitchenWitch, but it has more to do w/ folk magic than culinary skill. I make stock in my slow cooker; the remains of the holiday duck, along w/ a couple of rear chicken quarters (I love dark meat best), and some celery tops and onion skins, and freeze what it all turns into. Any meat goes into casseroles (or now soup!) and anything left gets ground up w/ some brown rice and fed to the dogs with their kibble.

I'd not thought of roasting the the chicken quarters first; I normally just toss them in. I'd never do that to beef for stew -- I always brown that first -- so I've no idea why I'd not thought to do the same w/ the chicken. What a lovely flavour that'll add. Thanks for the expert advice! (Oh, and my fave cable channel is the Food Network, of course.)

SW, you're always welcome to come for a feast or I could use a vacation, I'll come to you and cook in your house!

Suze - Originally the stew was going to be something else completely but sometimes I plan something and then my mind starts rolling and it turns into something else.

I did really just throw things in the pot:

1 onion chopped
2 carrots, 2 stalks celery chopped
garlic (I put about 4 cloves)
I had 4 chicken leg/thigh quarters and I roasted them, skinned and boned them. I put that aside.

Now for the greens, I just cleaned it and threw it in.

I used alot of chicken stock/broth, but since I make my own broth I can't give you amounts.

I simmered everything together except for the chicken for about an hour. Then I threw the chicken in, seasoned it with S&P and simmered for another half hour or so.

You can pretty much throw anything in there if you've got chicken and greens together. Oh and I made corn muffins to go on the side.

Cw is a Real chef How I wish I lived in her land she makes yummy things.

I had the big H 2 years ago I did good for a year .Then I quit smoking and blew myself up I am losing bone too. SIGH It is hard work being a girl LOL

Oh, "the change" -- mine was chemically induced when I was 30, and I instantly began losing bone mass and gaining weight. Not a combination I recommend, and I've been fighting both for close to 15 years, which is why I noticed all the calcium in the greens in your lunch today! Do you have a recipe for that lovely soup or did you just throw things together and create magic in a saucepan? (Stir three times widdershins with your athame under a waning moon to banish the weight! emoticon )

And a HUG for YOU! I'm too impressed that you've managed to maintain your weight loss for so long, even with the challenges of middle age. I've lost, and found again, the same 45 pounds over the last 10 years, and I am bound and determined to banish it for good this time.

CW I am still eating my fruit salad LOL I am so predictable
I love homemade pizz Suze And Cw all those greens sound so yummy.
It is time for me to go for more blood work I hat to go LOL

Suze I lost the bulk of my weight over 20 years ago and vowed I would never let myself go over 125. I have done fairly well over the years. I think menopause is kicking my butt and taking me to task. But I will beat it. I was down a bit this morning when I got on the scale.But it is a battle these hormones make me hungry. But with out them I do not sleep and none of the natural stuff I tried helped I was starting to think I was going to lose my mind Blah Blah....
I have a million hugs and good words when ever you need them just stop by

Lunch today is homemade chicken stew with mixed greens. I put kale, turnip greens, collards and mustard greens.

SW - How goes it? I've not gone for bloodwork yet, other things have come up that I need to address first. Holidays were busy, but for the most part very nice.

You mentioned basil in another thread. For Lunch today, I had homemade pizza. I make the dough in my bread machine (I have no time to do that the old-fashioned way), and add Italian herbs (like lots of dried basil!). The sauce was from homegrown Roma tomatoes that I'd dehydrated and then reconstituted, cooked down and added chopped mushrooms and bell pepper. I topped it with more fresh mushrooms, fresh spinach, a few crumbles of feta (and promptly went into cardiac arrest after reading the nutritional information and discovering the amount of sodium!) and a handful of part-skim mozzarella. I added the ingredients to the recipe calculator at SparkRecipes, and discovered that one small pizza is a bit over 450 calories; I actually at half, with a side of celery and hummus.

We will indeed make it! If you don't have a scale, you can always use the old "a serving is the size of a tennis ball" approach. When I'm eating out (which is rare -- like you, I enjoy cooking for myself and for others, and I know what's going into the meal!), I use the palm of my hand and the size of my thumb to judge what's on my plate. The rest goes into a styro-box for another meal, or to feed the dogs. One major exception: I love ordering Chinese. I order something like shrimp with Chinese vegetables (never tempura, nothing sweet-n-sour), with steamed rice instead of fried rice; then I split it in half straight away. Considering the portions most Chinese take-aways dole out, there's always enough for lunch the next day.

And thanks so much for the HUGS and your WONDERFUL words of encouragement! *whisper* I've lost enough weight to get into my old bras again! I'd bought a few plain ones in a larger size when I absolutely had to, and wept at leaving all my pretties in the dresser drawer. Well, my "new" bras were getting loose, and they're not old enough to have stretched, so I tried on one of my old smaller ones, and it fit! So I'm back into my pretties again, which is a HUGE incentive.

And by the looks of your own tracker, you're doing fantastic! We've got the same goal weight, but you were smart enough, obviously, to get back on track before you got as far off track as I did. Wonderful you!

I cook the same way. I need to taste I am not going to feed anyone anything that does not taste and look good.
Looking at your tracker you are making progress I think you are doing fine. I do not have a scale at all.I do have to cut back a bit I have been over eating but even withthe holiday I have not done bad.

Lunch today was actually breakfast: a "light" whole-grain English muffin with kumquat jam, fresh strawberries and a latte. This is my cookie-baking weekend (to ship to the troops overseas) and I generally "sample" about half my calories for the day, before everything gets packed and shipped out. What's interesting is that, since I've been eating better, I've started feeling rather unwell after eating all those sweets. (I bake as much by taste and texture as by recipe...I can see why so many of the TV chefs have such a "well-fed" appearance, considering how frequently they "check the seasoning.") As it stands, I'm going to have to find another way to test the finished products rather than actually eat them, even if (especially if!) it's only once a month.

I've been using an inexpensive kitchen scale better suited to processing several pounds of broccoli than measuring an ounce of bagel chips; I'd like a small digital scale, but can't quite justify the cost as what I have is sufficient, if only just.

And I appreciate the reminder: I never did get in to have my bloodwork done last year, nor my mammogram. (And I worked in healthcare -- I should know better!).

Good for you Suze. It is good to understand how large a portion really is. I should really start doing that again. I am eating healthy things however I am eating to much :(

CW how was your blood work.??? Time for me to go again .Hope it is still okay.Did you survive the holidays. Mine were quiet and nice.

I'd not checked my Nutrtion page before I had lunch, and was surprised to see that I was basically eating what Spark had told me to: egg salad on a bagel. I had one hard-cooked egg in the refrigerator, and some celery (I used the leaves, which I'd actually planned to put into chicken stock), some fat-free mayonnaise and some gourmet mustard, and I tossed all into my little HandiChopper. I had no bagels but the local grocer had Stacy's Bagel Chips on sale, so I'd bought those instead. The serving size is one ounce, and I'm weighing out my portions now.
