Hummus and veggies. I even make egg salad with hummus instead of mayo. It adds extra protein and a lot of flavor.
I second the vote for a thermos, because you can use it to keep cold foods cold or hot foods hot. Also get an insulated lunch bag & the gel freezer packs. You can also freeze a bottle of water - take some out first so that it won't crack as the ice expands.
I like to make veggie fritattas - basically a no-crust quiche - and cut into individual portions. It can be eaten either hot or cold. Or you can make it in a muffin tin for individual portions.

Those are great ideas.
Also soup. I make homemade soup on the weekend. I warm up a portion in the morning in the microwave and take it with me in a thermos (no access to a micro at work).
Same thing with any leftovers from the previous night's dinner. Casseroles, etc...
In a pinch, I bring a hard boiled egg, some celery sticks and peanut butter, and miscellaneous chopped veggies, and a piece of cheese. It's like a veggie tray in my lunchbox...
You can't wait for inspiration. You have to go after it with a club.

Lettuce wraps work great! Make whatever your favorite sandwich is, and instead of using bread put it in a great big piece of lettuce - bib, romaine, iceberg - they all work. I don't know if you have a Jimmy John's sandwich shop near you, but they offer this option with every sandwch on their menu and call it the "un"wich. You could check out their website for ideas of what you could put your lettuce wraps.
Another idea is to make something like tuna salad and bring veggies to dip into it or stuff it into a tomato or half an avacado.

I am new to the group, but just wanted to ask some advice or for ideas really. I have been tracking lately and noticed that my carbs are too high, and think this is really holding my weight loss back. The time I have the most carbs is at lunchtime, when I take a lunchbox to work with me as no cooking facilities!
Question is if anyone has any good low carb preferably veggie ideas for lunch that is not salad, ???
If anyone could help I would really appreciate it.
