Today's lunch: Dan Dan Noodles! Recipe here: www.kitchenchick.com/2007/01/dan_dan
_m
ian_da.html

I've also tried Fuchsia Dunlop's sesame Dan Dan Noodles named for their maker, Mr. Xie. I think I prefer the sesame, but this version is also good. I used ground lamb to good effect, and every sort of ground meat seems to work well.

I love tomato sauces on pasta, but I also have a soft spot for pesto. There's a fabulous dairyless zucchini "cream" sauce I love, too. Super healthy! The recipe is here: http://cookingwithrosetta.com/pasta-con-cr
ema-di-zucchine/

Lunch today is Ottogi Cheese Ramen and broccoli & cauliflower with ginger sauce.

Today's planed lunch will be pasta with sautéed veggies--mushrooms, garlic and dried tomato slices with a few simple spices. Then I am going to throw some feta on top of a green romaine salad. Probably add a tea or Visalus go grape extract drink to it. I haven't figured out the calories yet but it should all be within range.

When I cook pasta, I keep it very simple without tomatoey sauces. I prefer to only use a pat of butter and maybe occasionally I will put in diced tomatoes for texture and flavor. Never use the sauces that are pre made. Like to make my own. I measure pasta out to 2 oz. Today was the mini penne.

Breakfast was a mini egg white tortilla burrito with coffee.

Still on my yuchoy kick. Today was twice-cooked chicken (回锅鸡), steamed yuchoy (清蒸油菜) and a piece of nine-grain whole wheat bread, because I ran out of rice. :)

I had a diet lemonade drink with two all beef hot dogs, about 2 bites of the bun and then tossed it. My total calorie count was within range. Until I had the saltine crackers about 10p. Ugh.

Frijoles a la charra ("cowboy beans"), white rice, and tuna with salsa verde. The beans are leftovers from Cinco de Mayo dinner, and are delicious and surprisingly healthy despite the bacon in them. Recipe is here: www.homesicktexan.com/2008/11/pinto-

I eat a lot of salad-in-a-jar. Today I had one that is basically Spanish-influenced. It has carrots, tomatoes, red onion, garbanzos, Spanish (green) olives, spinach, lettuce and a lemon-juice +olive oil dressing.

The thing that I do which might seem a bit odd is to add tuna (home canned, in water) and Japanese soy sauce. One time I added sesame sticks to this mixture--divine, but way too many carbs.

So, I guess I had a Spanish-Japanese fusion salad.

The university I work at offers teachers and some grad students super cheap meals: a huge tray of food for 2 yuan which is $.032!! When I'm on campus every Monday to teach, I do that. Today was a muffin, two pieces of mantou (Chinese steamed bread), a huge piece of belly pork (that I removed all that gelatinous fat from before consuming), di san xian (mixed root vegies in a red/orange sauce), egg fried rice, and cucumber and pork stir fry. Wow! That sounds like a lot but each thing is a part of one serving tray. The worst part was that while eating I washed it all down with a Pepsi. But then another teacher and I did head off for some ping pong before afternoon classes started.

I had a huge salad - chopped romaine and baby spinach, sliced carrots, pre-baked chicken - about the size of a puck before I sliced it. Ken's Light Caesar dressing.

I also put some sliced zucchini in the toaster oven to roast - sprayed with Pam and salted lightly. I'll use it as a mid afternoon snack.

Deep southern style collard greens. I cooked it reasonably authentically, with smoked ham hock, some vinegar (apple cider is best), a hot pepper diced (I only used half the seeds), and well, shallot instead of onion. (The shallot was telling me if I didn't use it NOW, it was going to go bad.) I had enough for three lunches for work; I'll have the final installment on Friday. I LOVE this dish. I first ran into it at a wedding shower held at the bride's sister's home about 12 years ago, and I devoured three heaping helpings, and got the recipe at that time.

This is not a dish the wealthy in the south ate, but it is traditional for poorer folk. (Usually just enough ham hock for flavor.) It is, IMHO, superb.

You can substitute in smoked turkey leg for the ham hock.

Got rid of the ticker cuz my scale decided to flatter me unduly. I haven't re-gained, just got a better, honest, scale.

Just because you steam it, doesn't mean you can't add herbs and spices. (A gripe at those insipid restaurant "healthy choice" menu selections.)

I tried a recipe off SP for a tuna salad that had apples and craisins in it... I didn't have all the ingredients, so I made a couple of appropriate swaps, but it turned out pretty tasty.

Note to self: Please be patient with me, God isn't finished with me yet.

Today the office crew went to Mellow Mushroom. I had the build your own salad with jerk chicken and lots of veg. Yum! (Gotta learn to live without the feta cheese though; that adds an unreasonable amount of calories.)

Today we went to our favorite local Chinese place - all fresh made, fresh ingredients, and no MSG. The lunch special is a smaller portion, but I can still eat half of it (plus soup) and take the other half home for later. I had Five Flavor Beef today, so lots of carrots and celery and big ol' chunks of garlic. Yum!

(And no water weight gain from sodium tomorrow!)
