Had a dinner last week with pasta, trader joes dried tomatoes and sautéed onions, organic diced tomatoes 1 can organic. Then I added Cayanne pepper and taco spice mix and a little salt, basil. It was very filling, mostly because of the small chunks of tomato. One serving of pasta sometimes doesn't look like enough. emoticon

I can't decide. Perhaps some chili beans something warm and soupy sounds good for some reason even though, it's been very hot all day.

Trying to force myself to drink protein shakes because I know I need to increase my protein intake but all I want to add to that is crackers.

I do have a couple of mini tomatoes from my garden. emoticon

Tonight is a feast out of Rick Bayless's Mexican cookbooks. Goat tacos, tomatillo and roasted tomato salsas, pinto beans, roasted jalapeńos, and cucumber salad. Tomatillos and cucumbers are from our garden!

The garden is beginning to pay dividends. I harvested about half of each basil plant to make pesto, which is on the menu tonight. I need a vegetable, maybe some roasted broccoli & cauliflower.

Nothing fancy - everyone in the house is sick with a virus (and other stuff) - so I bought a rotisserie chicken and made it into a nice chicken soup with noodles. It always makes us feel better when we are sick. I add spices, a bay leaf, cardamom pods, and a stick of cinnamon to the pot.

Will make fancier stuff when I feel better!

I plan on making it this summer when tomatoes are ripe around here. My DH got hooked on it from a coworker and now we usually order it when we can. We did try the version available at Costco and it was pretty good but we haven't found it at any other store around here. I found the cracked wheat/Bulgar at Whole Foods in the bulk bins.

I had some left over fresh ginger. I found a great recipe for fresh ginger tea: lime juice, honey and ginger slices. It was so good. I am drinking it again today. Before I was just drinking water and lime juice. I like this variation. Never had ginger like this before.

I am going to cook some simple baked chicken for next week. I won't worry about spices until I warm it up later. Just a little salt and pepper. I learned from one of those food shows that it's 30 minutes of bake time per one pound of meat. Easy.

I can pair it with the already cooked brown rice that I portioned in baggies in the freezer. Good for microwave, about 2 minutes per cup pre-cooked rice.

So that's my ethnic today, ginger tea. emoticon

Yesterday i got some butter lettuce and a purple onion. i made about 6 simple salads and put it in tupperware. I will have no excuses to eat my safe foods when i think i am hungry but know i have already had my calories for that meal. So, salad and maybe some cubed cooked ham. I have also scheduled a protein shake or snack for each meal to help curb my appetite and give me enough protein.

Today I had 2 pounds of pork shoulder to cook. So I brined it and then baked it. It came out very tender. 1 oz for snack.

For lunch I had brown rice with lots of seasonings, hot sauce and sautéed purple onions and
1 oz of ground beef. It was delicious.

what are prawns? are they a type of fish? I do not eat fish of any kind except for the occasional tuna out of the can and once in awhile can salmon.. non of the fresh stuff.. the smell of fish makes me sick..

Tonight I had vietnamese dish! My favorite! Beef vermicelli with prawns and spring roll..apprx 600 cals for the most amazing delish, healthy, authentic meal! yummm!

I made a pork loin today, and it was really simple and turned out great, so I wanted to share the recipe:

1 lb pork loin
1 tbsp peanut oil
1 tbsp ground cumin
1/4 tsp ground cinnamon
1/2 tsp black pepper

Preheat oven to 450
mix spices together and use them to coat the pork loin evenly.
Heat oil over medium heat in a large oven-safe pan
Cook pork loin for 4 minutes on each side (4 sides total)
Move pan into heated oven and cook for another 7-10 minutes.
Let pork rest for 10 minutes.

I served it over a bed of chopped apples and fennel.
