I am a vegetarian, so of course I love The Vegetarian Table and The Quick Vegetarian Pampered Chef cookbooks. I made the artichoke & red bell pepper from The Quick Vegetarian this week and LOVED it. My husband ate so much of it we barely had leftovers.
I have been working my way through all the Pampered Chef cookbooks that I own and this week is 5 recipes from The Vegetarian Table cookbook. So far I have been impressed. I've tried the Asian Vegetable Spring Rolls and the Farro Ministrone soup. Tonight is the Gyoza style portobella ravioli and Saturday the gnocchi romano. Super easy recipes and healthy! I had two cups of soup last night for under 400 calories and it was full of fiber and protein from the beans so I felt full. My husband even said "this is a make again" even after he complained that there was no meat in it. :)
So I ask you....what's your favorite (or go-to) PC recipe or cookbook and why?
