How It All Vegan by Barnard & Kramer is pretty good. Its more of an all meals and desserts cookbook as well!

There are horses for courses, so depends how fancy you want to get, how much time you spend in the kitchen, how exotic your tastes are, etc. I like Vegan Fusion World Cuisine by Mark Reinfeld. It has interesting, modern cuisine that is wholesome (lowish in fat, salt, sugar), doable and yet produces very attractive dishes. He puts his heart and soul into his cooking and it shows.
