My hubby is also not a veggie and not always the healthiest eater. We split the meal planing and cooking so we usually find a good balance. Most importantly both of us respect each others choice in food. Example: tacos- I make them with beans and rice or grilled veggies and he prepares himself chicken/beef/lamb seperately that he can add to my recipe to complete his dinner. Good luck.
