Thank you ladies, I will look for that facebook page and try the sauteeing idea. That definitely helps!
Jeff Novick has a Facebook page with all kinds of simple, inexpensive vegan recipes...I just can't seem to get a link to work.

Yes, in the first place you don't need recipes to eat healthy. In fact the simpler the better!
Just purchase the greenest greens, or other bright colored veggies you like. Heat your skillet and add a little water--
Sauté along with onions, garlic , mushrooms, and tofu if you have it.
Cook to your liking. Spice up if you wish or eat plain.
Open a can of your of plain beans--for added protein and fiber.
A side of fruit for dessert with seeds or nuts added and you are ok to go.
Or a side salad with seeds or nuts would be good too.
And when following recipes don't hesitate to substitute
With what ever similar item you do have on hand.

I just re-joined spark people. As a college student I have little time and little money to devote to my veggie diet, so I was just wondering if anyone had any recipes they would like to recommend. I am horrendous in the kitchen so the easier, quicker and cheaper, the better!
