I would suggest friending Jeff Novick RD, MS on facebook. He is a vegan dietician who works with Dr. Mcdougall (a great doctor who writes vegan weight loss and healthy living books and has videos and a website and does PBS specials. His book Dr. McDougall's Program for Maximum Weight Loss is great.) Anyway back to my point. Jeff has great simple recipes on facebook that I enjoy. They have about 5 ingredients, are very fast to make and are delicious. I love his Jambalaya. To find the recipes go to his facebook page and open his photo albums. The album titled MY SIMPLE RECIPES are where they reside. Click on a photo. The recipes are in the COMMENTS under the photo.
I change the recipes a little. Jeff uses success rice which is a boil in bag rice, because it is fast. I make mine from scratch, make a ton and keep extra in the freezer. It is cheaper and I like the taste better. Jeff also uses canned beans. I also make my beans from dried beans in my pressure cooker and then freeze extra in can sized portions zip lock bags. My way is much cheaper if you are on a budget.

almost all of the recipes on the SP menu plan under the "Nutrition" tab are fast and easy to make. Set your menu to vegetarian, there are not vegan meal plans, you just have to adjust the menu a tad, and go from there. I'm following the SP menus now.

Roast some veggies (brussel sprouts in particular) w/a little olive oil, salt and pepper. Or roast some zucchini, onions, mushrooms and potatoes (you get the idea). Make a brown rice or quinoa pilaf w/some almonds. Super yum, sister!

Hi! I am a new vegan and am loooooving it! My girlfriend and I recently made the change, together. We are also (obviously) trying to lose weight. I was wondering if anyone had any pointers on easy things to eat and make. I am in college and don't have a lot of time during the day to cook, except for dinner. Please let me know! I would love it!
