there is a really good recipe site called allrecipes - great stuff there. also try livingwithout. They have lots of veggies there for people with allergies. Do an internet search under "vegetarian ethnic foods" or a specific ethnic group and you will have veggies recipes galore!!!
Gosh! I am never bored. I cook Thai, Ethiopian, Chinese, Indian, ect. There are thousands of recipes of every kind out there.
Fatfreevegan.com is my absolutely fav recipe site. I have never made a recipe from her I didn't like. Especially if you are trying to lose weight. She doesn't cook with any added fat. She offers options to stir fry with broth without losing any taste. Happy Herbivore is also a good site. Vegancoach is good too.

I've been with SparkPeople for a month. I'm trying to get in fruits/veggies without it being a bland, boring salad-type dish. I figured that if I wanted to know how to do that, vegetarians/vegans would HAVE to know how! (Especially the vegans, since you don't consume animal ANYTHING.)
Would love some suggestions! (Just discovered lentils, couscous, and quinoa....love them!)
