I hear that is a lot of work, so good for you for making the extra time and effort. Any favorites so far?

Oh wow...I WISH my family would do this too however there's no way in a million years regardless of the videos I ask hubby to watch, or health benefits of being Vegan (or even just Vegetarian) has, etc. He does embrace meatless meals on occasion so I'll take what little I can get. My son is 7 and enjoys his meat as well, I have always had the mindset that he will be able to make that choice as he gets older. I will keep him ignorant to the horrific ways those poor animals die to feed people, and all the other reasons to be Vegan. He does know that hamburgers are beef, beef is a cow and that cow used to live, and breathe and was killed to be people's food. Same goes for chicken, eggs, milk, etc. So while he "knows" logically (or as logically as a 7 year old can comprehend) he doesn't really know. My step kiddos are are omnivores and enjoy meat. Their uncle was a Vegan (he passed away at a very young age a couple years ago) and they are familiar with the lifestyle but aren't able to make the choice yet since they live primarily with their mom.

So nope, it's 2 meals but that's ok, I'll make a variety of meals for myself and then reheat my dinner while theirs is cooking so that we eat a meal together as a family.

Good for you! Is your whole family making the switch with you, or are you at the stage of making two different things for every meal?

Thanks Alan! Yep, I am definitely not eating the refined white (basically sugar) breads, rices, etc. whole grains/ whole wheatis what I'm eating.

Yep I'm definitely all in :)
I have to say that the easiest part for me is being dairy free, I had already been primarily dairy free since february last year for medical reasons so I had to make that change then.

OR if you are considering the fact that that particular change had already been made the newest easy change would be planning my own meals w/ variety.

Great start!
I feel like slapping you with the Encouragement Fish! (made of tofu of course)
There's lots of good advice here already tucked away in the various threads, worth reading when you get around to it.
Good idea to make sure you're using whole grains and whole wheat pasta rather than the standard white stuff.
keep it rolling,
Alan

Thanks Jenae!

KESTES200~ Nope! I wasn't vegetarian right before going Vegan. I have been in the past for a month or two here and there. Recently I haven't been (more than a year has gone by) the last time I was Vegetarian I didn't do so well. I have Insulin resistance and have to be careful with the carbs that I eat, or at least the quality. I thought that the carbs I had been eating this last time I was vegetarian was causing glucose issues. I'll be honest, I didn't really track my food at the time so I don't know for a fact. I do know that in 30 days I had GAINED 10 lbs and was NOT happy about that. So I stopped, Lost the weight I had gained, etc. I think it was that I was a "junk food vegetarian"

But anyway, to answer your question though. No, I wasn't vegetarian for least a year prior to making this Vegan Change. I am very excited about this change. I am very excited that I have made the choice to live a Cruelty Free Life. :) I'm slowly embracing the whole lifestyle. I want Veganism to be much more than a dietary change w/a strict restriction on what can be consumed. I want it to go further. I am doing research on my cosmetics, my personal hygiene products, my clothes, etc. I am a beginner and this is a process for me. :) I look forward to documenting the progress in my Blogs on my spark page. :)

Hi Jessica and welcome to the team! Just curious, we're you a vegetarian prior to deciding to go vegan? I have been vegetarian one one year but I consider myself an aspiring vegan!

Hi! My name is Jessica, I am a 31 year old mom, step mom and wife. I've been toying with the idea of changing my "diet" to a Vegan one and then a couple weeks ago I was talking with a friend who is Pescetarian and I decided that I'd do it as soon as I got back home! (kinda hard to make the change when you are out of town for a week..) anyway, December 30th was day 1 for me and I'm going strong! I was already primarily dairy free due to allergy & gastric issues since February of last year (that sounds weird! Wow it really is 2013!)

Anyway, I just wanted to introduce myself! :)
