Good luck on choosing to go veg!
My advice to you when you're in a hurry: keep your freezer and pantry
stocked with my idea of fast foods: vegetarian refried beans,
tortillas, taco shells, soups, nut butters, veggie burgers, veggie "dogs"
and the like for when you're too busy to go to a lot of effort.
Pick up some "instant" refried bean and hummus mixes at your local
natural food store. I can buy these in bulk at my nearby Sprouts store.
When I have more time I pressure cook a variety of beans and freeze
a portion of them. This makes it a lot easier to throw together a
pot of no-meat chili, hummus, three bean salad or other meal.
