Hi Jen and welcome. I have posted a few vegan recipes on the Spark Recipes site. Have you tried narrowing your search for "vegan"? There are a lot of good recipes with videos on . I like "Cooking with the Vegan Zombie". He's a total nut case but has some great recipes.

Hi Jen. People seem more willing to post recipe ideas in these threads than go the whole way and write them up in the recipe section. But there are zillions of vegan recipes around the internet in general, so you'll probably find what you're looking for.
Biscuits and gravy is not something I understand that well. But anyway, couldn't you use boiled/steamed baby potatoes instead of the biscuits? You said you like potatoes, and they're a fine part of a diet if not drowned in saturated fat. Or, if you wanted something a bit crunchier, rice cakes broken up into the size you want? Just freestylin; a bit here :-)

My name is Jen and I'm vegan. I was vegan about 15 years ago, then went to lacto-ovo and have been vegan again for several months now. I live just outside of NYC. I'm playing around with many new recipes that are quick and simple, but I'm not finding a HUGE amount on the Spark Recipes site. I have posted several recipes myself. Again, I'm looking for quick and simple, but healthy. Because of that, I sometimes fall into the "not so healthy" eating regiment. Like yesterday I made vegan sausage gravy, but there is no way I am kneading biscuit dough, so I used Pillsbury Crescent Rolls as my "biscuits". Not the healthiest, I know. I also tend to eat too many carbs. I've gotten away from bread, but starchy veggies and potatoes are my downfall. I have recently discovered roasting vegetables, which I love! I have some health issues which makes things hard. My partner eats most of what I cook, but isn't vegan. That doesn't bother me. She is very supportive of my weight loss efforts. I've lost 70 lbs so far! I'm still learning how to use Spark People. I would love resources people have for simple, easy to make, healthy, vegan recipes! Thanks and be well! Jen
