My thoughts exactly!! The tamales are time consuming but really, really worth the time. I make a huge batch and freeze them in seal-a-meal packets, 2 or 4 to a pack. They make a great snack!

These are my variations of recipes.

Vegan Burgers
1 cup textured vegetable protein (TVP) granules
1 cup vegetable broth
2 tablespoons vegetable oil
1 cup mushrooms, roughly chopped
1 white onion, roughly chopped
2 garlic cloves, roughly chopped
1 cup vital wheat gluten
2 tablespoons panko-style breadcrumbs
2 tablespoons dried parsley flakes
1-1/2 teaspoons onion powder
1-1/2 teaspoons garlic powder
1 teaspoon dried dill
1/2 teaspoon salt
1/4 teaspoon chipotle powder
1/4 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/4 cup nutritional yeast
1/4 cup tamari or soy sauce
1 6-ounce can tomato paste
1 cup diced scallions

1. In a microwave-safe bowl, mix together TVP granules and broth, cover with plastic wrap, and microwave for 5 to 6 minutes.
2. In a flat-bottomed skillet over medium-high heat, heat oil. Add mushrooms, onion, and garlic and sauté for 5 to 6 minutes.
3. In a food processor, combine TVP, sautéed mushroom mixture, vital wheat gluten, breadcrumbs, parsley, onion powder, garlic powder, dill weed, salt, chipotle powder, cumin, pepper, nutritional yeast, tamari, and tomato paste. Process until well combined. If mixture is crumbly, add a tablespoon vegetable broth or water until mixture has a thicker consistency.
4. Transfer mixture to a large bowl and mix in scallions. Form into 6 to 8 patties.
5. On an oiled grill over medium-low heat, cook patties for about 10 minutes per side.


Vegan Tamales:
Dried corn husks - soak until pliable.

Saute over medium heat with olive oil:
1 medium onion diced
8 cloves garlic (crushed)
1 1/2 tsp chili powder
2 cups cooked black beans
1 tsp salt
1 tsp pepper
1 tbsp apple cider vinegar

Stir all together, remove from heat and blend it together

Dough mixture:
3 1/4 cups corn flour masa
3 cups veggie broth or water
1/2 canola oil
1/2 tsp baking powder
1 tsp sea salt
1 tbsp chili powder
mix till it forms a ball of dough

Soak the corn husks until pliable. Assemble tamales in the corn husks, tie with butcher's twine or a thin strip of corn husk and place in steamer for 1 hour.

Ruth, I still very much admire you for making your own veggie sausages, burgers, etc.! I was doing that when I first became vegan, but over the years got lazy and started buying store-bought. I need to change that very badly, because store bought is so full of salt! (Not to mention how homemade fake meats almost always taste better!)

So keep up the good work--you inspire me and others!

Welcome to the Team! I agree with Rheyn and Terry, we are not the vegetarian/vegan police. And like Terry, I still have the occasional piece of fish - cod or halibut - and if we are in a restaurant whose coffee is really strong I use 1/2 & 1/2 in it. We aren't here to judge but to be a mutual support system.

I have done a lot of experimenting over the past year with different vegetarian/vegan recipes and found what I like and what I don't. We grill a lot so I have learned to make my own vegan sausage links, veggie burgers and even un-ribs. I found them by searching on vegan websites. There are some great cooks on this team. And we love to share recipes and ideas.

Welcome, IAMLIONESS! In my experience, the vegans and vegetarians who are super strict and militant are the ones who are secretly mad they "can't" have the things they decided not to eat anymore, and that is not me, Terry, or most of the other people on this team. There is no place for food bullying in a community that's supposed to lift you up and help you do the best for yourself that you can -- who needs those folks?

You're in the right group, Lioness, and actually with the diet you are gonna do of fish, dairy and the rest veggies, you qualify as a typical vegetarian! Most vegetarians allow fish and dairy. Strict Vegetarians and Vegans do not eat fish and dairy. I'm what you'd call "Plant Strong"--someone who strives to live a Vegan diet, but who sometimes isn't perfect about it. But for the most part I live on veggies.

I've been in this group and "Vegan Fitness and Nutrtion" for years now and both groups have lovingly embraced me and helped me. They will you too, so don't be afraid of being human and imperfect here. Most folks seem to understand that and only desire to encourage each other. Makes for a great group!

Hi You Guys! So....Not really sure this group is necessarily for me, mostly because although I plan to NOT eat pork,red meat,chicken etc...I do plan to continue to eat fish seafood (shellfish and the like), and dairy....I am not exactly sure where I fit into this whole vegetarian/vegan lifestyle I just know that I would like to eat more fruits and vegetables, juice on a regular basis, be healthy, and lose weight. I am mentally preparing myself for the challenge....I am hoping that I can stick with it....
