I created a tortilla/tamale pie recipe that uses corn tortillas when I went veg. I make or use a store bought vegetarian chili.
Put a thin layer of enchilada sauce on the bottom of a pie pan. Place corn tortilla on top and top with veg chili, onion - if desired - and sliced olives. If you aren't vegan, put a thin layer of shredded SHARP cheddar. Repeat layer and top with corn tortilla and sauce. Bake for 30 minutes at 350 degrees - covered with foil. Take out of oven, remove foil, add a layer of cheese and put back in oven for 10 minutes - or until cheese is slightly browned and bubbly.
