Ohhh, I have such a hard time with that word! 'Appropriate' is the other word I can't say without wrinkling my nose. I can only use the words 'moderation' and 'appropriate' with great amounts of irony.

You would not believe how long that I was trying to think of the word 'moderation'! Ha ha! I had it on the tip of my tongue!

Bilby, I will be sure to post some recipes as I get a little more familiar with this website. I am also contemplating the idea of writing a blog on the subject, but I am not sure if I am ready to sit down and take the time to do so.

Petalia, I am very familiar with Catalan and Basque cooking; moreso Catalan than Basque. Just recently, I put together a recipe for a great noodle dish (fideuā). I also have a killer recipe for paella. The only thing that may be problematic with my recipes is that I am not big on using measurements, but since I am now registered on many of SparkPeople's forums, I will be sure to take note of measurements from now on.

Although all of my recipes are vegetarian and many are easily made vegan, not all are the healthiest. I would believe that it is alright to eat what your heart desires as long as it is done consciously and responsibly, right? There is definitely many ways to trim off the excess calories and fat though.

I look forward to sharing my recipes and partaking in good conversation! Thanks for reading!

Bienvenido IZANDRO! I look forward to your recipe sharing. I'm a big fan of Basque and Catalan dishes, but what to do about all those sea creatures? And all the different Latin American cuisines, I know so little and I would love to know something especially something plant-based. Come to think of it, Mexican cooking, from the little I know, is also regional, varied, and expansive. I so look forward to what you might like to share.

Hola!
I'm not that familiar with Mex/Spanish cuisine, it's generally not done well here (Australia).
Why not put a recipe right here on this thread? I need to make something for dinner tonight!
Alan

I am always interested in recipes without cheese or the fake cheeses. Many cheeses use animal rennet which are make them not vegetarian so we have to be careful. Plus they are just so full of FAT.

I do use cheese, but I have gone cheeseless on most of my recipes and am also familiar with cheese substitutes.

Ha ha! Great! I'll be ready! It is really quite fun to take on the challenges of Mexican cooking. Mexican dishes tend to use a lot of meat products. I feel like I can make anything vegetarian now though! I have done everything from enchiladas suizas to carne asada tortas. Yum yum!

Hello from Phoenix, Arizona! I am new to SparkPeople and just wanted to do a quick shout-out. I have been vegetarian for quite some time now and I am a master at Mexican and Spanish food. I have plenty of vegetarian recipes to share! I really enjoy the challenge of turning meat-filled Hispanic dishes into vegetarian ones! If you want to learn more about me, feel free to visit my page!
