Ohhh, I have such a hard time with that word! 'Appropriate' is the other word I can't say without wrinkling my nose. I can only use the words 'moderation' and 'appropriate' with great amounts of irony.

Bilby, I will be sure to post some recipes as I get a little more familiar with this website. I am also contemplating the idea of writing a blog on the subject, but I am not sure if I am ready to sit down and take the time to do so.
Petalia, I am very familiar with Catalan and Basque cooking; moreso Catalan than Basque. Just recently, I put together a recipe for a great noodle dish (fideuā). I also have a killer recipe for paella. The only thing that may be problematic with my recipes is that I am not big on using measurements, but since I am now registered on many of SparkPeople's forums, I will be sure to take note of measurements from now on.
Although all of my recipes are vegetarian and many are easily made vegan, not all are the healthiest. I would believe that it is alright to eat what your heart desires as long as it is done consciously and responsibly, right? There is definitely many ways to trim off the excess calories and fat though.

Bienvenido IZANDRO! I look forward to your recipe sharing. I'm a big fan of Basque and Catalan dishes, but what to do about all those sea creatures? And all the different Latin American cuisines, I know so little and I would love to know something especially something plant-based. Come to think of it, Mexican cooking, from the little I know, is also regional, varied, and expansive. I so look forward to what you might like to share.

Ha ha! Great! I'll be ready! It is really quite fun to take on the challenges of Mexican cooking. Mexican dishes tend to use a lot of meat products. I feel like I can make anything vegetarian now though! I have done everything from enchiladas suizas to carne asada tortas. Yum yum!
