Hey! My name is Audri, and I'm a newbie at being a vegetarian. I want to make the change for myself, because it's healthier, and I'd like to be able to start an entirely new life. So far it's not been easy. The cravings for meat are very annoying, and I have to constantly tell myself no. I'm doing well though, so I'm proud of myself thus far :D

My lunch usually starts with an "S" (lol): sandwiches, salads, smoothies. Almost always, a combination of freggies and some grain because "not eating carbs" (NOBODY doesn't really eat carbs!) is for chumps. If I'm running out the door, I might slam a hunk of tofu and take a fruit with me, and I usually have containers of pre-washed and cut veggies ready to go.

Oh, or leftovers.

emoticon and congrat to having made such a great decision to become vegetarian!
Many here have already given their input and all I can do is pretty much just agree! Inform yourself a lot by reading lots of books, blogs and other sites!

Rheyn said it very well too, be prepared for omnis to come with their 'ammunition' statements about not getting enough protein, vitamin B12 etc., etc. and the best is to be able to 'fire' back! emoticon

Being veg*n is absolutely not complicated at all!

You will figure out how to make it work best for you soon enough, so the best advice I can give is not nutritionally specific: don't ever let uneducated, uninformed omnivores try to convince you that you can't get adequate nutrition on a vegan or vegetarian diet. You will come up against the protein (non-issue), iron (beans 'n greens), B12 (nooch, fortified foods, supplement) and other "arguments" (more like personal, defensive objections, because these claims have little to no basis in fact) sooner rather than later, so you may as well stupid-proof yourself now. Some people, typically those who have some unacknowledged guilt about eating meat or who are too afraid to change their own habits and project their insecurity on you, simply will not be reasoned with. Good luck and stick with it!

Check out Susan Voisin's page called fat free vegan. She has the BEST recipes anywhere online. :D blog.fatfreevegan.com/ I really cannot say enough good things about that recipe blog. EVERY SINGLE recipe I've ever tried has been great. Another GREAT website is by Angela Liddon called Oh She Glows. ohsheglows.com/ Again with easy and delicious recipes.

For nutritional information, keep this in mind. You want to crowd your plate with vegetables and beans. Last night for supper I had homemade spaghetti sauce over grated zucchini "noodles" with chickpeas. YUM! For lunch I had leftovers of cooked brown rice with black eyed peas and creamed kale. www.nourishingmeals.com/2011/07/crea

For breakfast I had a fruit/protein smoothie. Between meals I snacked on sugar snap peas and this great dip. www.straightupfood.com/blog/2012/04/

Lots of veggies, lots of beans.. Will keep you full and happy and healthy. For plant fats and satiety, I like to eat one avocado per day. YUM!

So I have only gone vegetarian for about a month now and I absolutely love it. It is difficult though I am finding to eat healthy. I bought a book and have done some research because I want to make sure that I am giving my body all the nutrients it needs without eating meat. I would love any and all advice, tips, etc. I am so glad to be a part of this team. I can't wait to meet some of you!
