I too am trying to figure out meal planning. I heard a recommendation where you come up with about five staple meals and rotate them. There may be some meals where your son will eat vegetarian, but for others you could cook ground turkey for him and tofu crumbles for you - then you can both have a different spaghetti that night. Or you make your veggie main course and your son eats that as a side dish along with his grilled chicken. I think you have to get your son in the game to have him help out :) Good luck!
