The good thing about vegetarian foods is that there are many recipes available that do well both in the crock pot and in the freezer. You can large recipes of soups and stews in the crock pot and then freeze them into portions. My local grocery store has tubs of organic salad and spinach greens pre-washed that make easy salads.

If you have to get a timer... and set it as a reminder that it is time to COOK and EAT...then that is what you do. It has to become a priority to make it a habit.
Often times, I will cook ahead - - some chicken breasts and a pot of brown rice, and a veggie in the steamer... then they will be ready when I am... Have them there to 'snack' on..if you don't feel like cooking.

I work from home as a Virtual Business Support Specialist which means only one thing…I never get away from my pc and exercising is something of the past! Now, my problem is not with food per say, more, the quality of food that I eat. I never seem to take the time anymore to cook something that is healthy, fresh and well balanced, which has resulted in me gaining a good 10 pounds that will simply not leave me…I want to get back into a healthy way of eating and get away from my pc at a decent hour!
Making it happen one day at the time!
