I just take my soy milk, unsweetened, add some organic cane sugar to it, shake well, then add a capsule of acidophilis to it, shake again, and let sit someplace warm for 24 hours... it will separate into curds and whey.. the whey you can use to start other yogurts, as well as for different fermented foods, soups, etc.. it's very good for you.. the curds you can toss in a blender with fruit, or mash by hand.. it's quite yummy..
You can take it one step further, if you season the yogurt with herbs or whatever, then place in cheese cloth, tie up and press for 24 hours to squeeze out more whey you end up with a cross between tofu and soft cheese.. rather yummy!
