I also like cold salads made with grains and veggies. I made a good one last night. 2 cups of cooked quinoa 1 can black beans 1 large roasted red pepper cut up 1/2 small red onion diced small 3 cobs of corn removed from the cob (raw)
The recipe called for just lime juice as a dressing but I knew that wouldn't go over in my family so I made a walnut dijon vinaigrette dressing.
1/4 cup balsamic vinegar 1/4 cup walnuts 1/4 raisins 1 tsp dijon mustard 1/4 tsp thyme. 1/2 c water. Blend all of the above ingredients in a blender until smooth and then mix into the above salad using the amount you like.
My favorite summer meal is fresh fruit plate with a scoop of raspberry sherbert. Oh sooo yummy on a hot, usually humid summer day from my childhood. All fruits were chilled and included watermelon, grapes, cantaloupe, honeydew melon, and any fresh fruits available like peaches or nectarines.
Just smoothies. Whatever fresh fruit I can get my hands on. This morning was pineapple, mango, strawberries, blueberries and a banana and spiced with ginger. I use 1 cup of soy beverage and a protein powder supplement. Its a fairly large serving as I try to get about a 100g of each fruit. I also eat a cup of grapefruit segments in a prepackaged container. Comes out to about 550 calories. Very refreshing for warm spring days. My other meals are simply veggies and Greek yogurt for a dip, or bean salad and no fat cottage cheese. Mom made me a very high protein bean mixture using black beluga beans, quinoa, lupine beans, black beans in a light soup mixture. I can't get nutrition info as she just throws everything in a pot and never measures :( There wasn't much liquid in it, and it was nice and spicy as I like it. I think she used some chana masala seasoning. I like baking a sweet potato and parsnips for supper and use cottage cheese as the protein.
