the cross contamination is a tough one. When I cut out gluten, I went to a few celiac web sites to learn all I could about what I would have to cut out. I keep a list in my iPhone of all the ingredients I can not have, because they either contain gluten or are commonly contaminated with gluten. It's a long list. Even with this, I still occassionally get contaminated. Mostly when we eat out and servers there just don't understand food allergies. Unfortunately I live in a small town where most people have no idea what gluten free is, and that it is a legitimate food allergy

I've done both of those, but neither made a difference, which makes me happy because I cook for a five-person family and I don't want to cook two meals - one for me and one for them - every night. The gluten by itself is hard enough.
Hi everyone - my name's Amanda and I discovered almost three months ago that I have some sort of gluten intolerance/allergy. I haven't been officially tested - working on finding a doc who will do that - but I spent eight months testing different food ingredients by one-month elimination trials and it is *definitely* gluten that is the problem. I've been adjusting to a gf diet since early September and my health has improved so much. Most notably, the severe insomnia I've suffered from for the last two years is 100% gone! It feels great to SLEEP again! Lots of other issues have disappeared or mostly cleared up as well. Now if only I could stop getting accidentally cross-contaminated! I am VERY sensitive and get a flare-up at the slightest contamination. :( Working on it, looking forward to getting to know people with the same issue.
