Sorry to hear about the migraines, weight gain and celiac diagnosis.
It would be helpful if we had more information about your habits and lifestyle so that we can give specific recommendations. There's a solution for every puzzle, but the more pieces we have the easier it becomes. That's where you come in.
What does your diet look like... what's a typical days' worth of food consist of?
Do you cook most of your meals at home, or do you rely on prepared meals, restaurant food?
What minerals, vitamins and supplements do you take?
Have you checked all your vitamins and supplements ingredient list for sneak gluten?
Do you take any prescription medications?
Has your thyroid been checked? Sometimes with celiac, you'll develop autoimmune thyroid disease. That's what happened to me.
Unfortunately all of Spark's preplanned menus rely on gluten containing grains.
But you can get around this by creating a library of foods specific to your needs and tracking your nutrients. Tracking is a real eye opener. You'll be surprised at the calorie count in some foods and the portion sizes. Using measuring cups and a scale for the higher calorie items, really helps too at first... until you develop and "eye" for a proper portion.
