My gluten motto is:
"Semper vigilans"

Read ingredients, assume nothing. I've found gluten in my calcium pills. "Wheat Protein" in my shampoo and conditioner.

If you're eating out avoid stuff with gravies or sauces since most gravies are thickened with roux, a combination of a fat like butter... and flour.

Be aware... 99.9% of all bread at restaurants...has gluten in it... its a wheat based bread.

Just because a restaurant has a gluten free menu, does not make their bread safe.
My daughter waits tables at Macaroni Grill.
They have a pretty decent gluten free menu.
She has clients come in, make a big deal about going gluten free, then order a couple of baskets of bread to go with their gluten free entry. She gave up volunteering that the bread there isn't gluten free, because it met with umbrage rather than thanks!

A good question to ask your server when you are out : Is this prepared with even the smallest bit of flour ? Asking if something is gluten free can be too complicated. When people are asked something they don't know, oftentimes they just guess. Your health is too important to leave it up to a server's guess.

Bring something you can eat to potluck dinners.
If you're invited to friends, let them know you can't do flour/glutenand offer to bring a dish you can eat.

Make your own food from whole ingredients.

If I can't have a food, I don't like to do substitutes. Pizza in particular. The whole thing for me with pizza is the chewy, stringy crust. Eating a faux crust ... it just makes me angry because I'm not real good at fooling myself into accepting an inferior product! LOL But that's me.

That said, I have found that Pamela's dark chocolate with chocolate chips cookies to be indistinguishable from "real" cookies. Every so often I buy those.

I also make almond macaroons that are wheat/gluten free. They whip up quickly and are more nutritious that the average cookie. Not that you're eating for nutrition when you're having a cookie, lets get serious here, Girl! ha Its ALL about taste!

I personally prefer Udi's bread. I like almost everything they make. I make almost everything from scratch now. I used to use mixes but now since experimenting with lots and lots of recipes almost everything comes from scratch. A couple of cookies that you might try that are super easy are the flourless peanut butter and the copy cat of the flourless chocolate cookies from Great America cookie. Betty crocker chocolate chip cookies aren't too bad, but I tweet them. I have a recipe from a cook book that is so much better.

Bread, Go to whole foods and get the Canyon Bakehouse hamburg rolls or breads. Best stuff I have had yet! Pizza, against the grain. I like the betty crocker gf cake mixes.

Pamela's brand has mixes for cookies and cakes that are good for special occasions. Our local grocery store carries them. I have even turned the cake mix into carrot cake or pumpkin cake quite successfully.
Udi's brand and Rudi's have gluten free bread. There is almond bread and rice bread but they are rather dense for sandwiches. I prefer just making tuna salad or other "sandwich filling" and using a lettuce leaf for bread or put tuna or chicken salad into half of a red pepper and eat it that way. (fewer carbs that way)

Bread is one. It'd be nice to have a sandwich every now and again. Or something. Pasta dishes are good. There's others that I know I shouldn't have anyway like cookies and cake, lol. But for birthdays and that, it'd be nice to celebrate, too.

Just specify what you miss and people will tell you how to substitute gluten free items. I eat more basically now but still occasionally indulge in a gluten-free dairy-free pizza or rice/flax pasta with my favorite clam sauce. What is it that you feel like you are missing?

I was diagnosed recently with a gluten intolerance. I tried one week gluten free and dropped 9 pounds in one week, so that was only part of the issue. My issue now is how to keep away from it. It's in pretty much everything and especially everything I enjoy having from time to time. How do you guys deal with it?
