I'm in your same "boat," although my allergies to wheat and milk are "low," w/ other things getting up to moderate. Since I'm also allergic to corn, rice, soy, tomatoes and green beans, I've decided to do Atkins Induction for a while (as an elimination diet of sorts) and then work on a long-term plan from there.
If you don't have issues w/ rice, the gluten-free pastas, crackers, etc., are not bad at all.
