Since SP doesn't have a gf menu, it's very individual how we go about planning. Personally, I just pick a protein, fat, and fruit/veggie carb each meal (try). If you want to add in a gf grain, do so. There are so many cookbooks and WOE (ways of eating) it's hard for me to stick to a specific plan anyway.
This site offers many other tools and it'll take a while to get comfortable. I'm still learning new things after four years! Wishing you wellness.
