I make my menu fit my especially tight intolerances of anything mad-man-made and must avoid anything in the tiniest amount of sulfites in it too. Gluten is not my only no-no.
I am thankful for this team and the whole Spark site to help me get motivated and learn than my needs and choices are gluten-free and poison free and beyond including no vinegar.
Creative energy is a form of energy and mine is always in short supply. My favorite flour is sweet rice flour. I use it to make piecrust, gravy, dumplings, and cheese sauce to name a few. My meals are herbed and spiced with a large variety of which I have included spearmint leaves and basil seeds. I like the crock-pot to marry flavors in a bean or beef stock base from dried organic beans of a fresh cut of roast.
I have weaned myself down to no more than a cup of sugar in a whole day. I use rice wraps to create colorful tid-bits for snacking with a light fruit reduction sauce from slow cooking of fruit and white sugar or I make a honey dip. I never know how my head will react to fish as even those have the ability to hurt me.
Turkey with all the many chemicals in the 10% solution is a bad choice for me. The duck I had at Thanksgiving was a pleasant experience and a change of pace from beef or chicken. I like onion rings first put in an egg wash then seasoned rice flour or in Pamela’s pancake mix batter before lightly browning in canola oil at temperatures well below deep fry or open pan burning.
I love all vegetables but my local stores only offer about 20 of the most common. My food style with vegetables is to cook some and slice or dice some to be eaten raw. The nutrients are presented to the body differently. A tomato can release lycopene only after breaking down the cellulose usually with heat, while the vitamin “C” is retained and appreciated by my body in it’s natural raw state.

Emphasize lean protein and vegetables. That is a good start. Than add some fruit and whole grains such as brown rice, or sweet potato. When a meal or days meals work for your calorie count (balance of protein, carb and fats) write it down and start your own meal plan. It takes work at first but then it will be easy to just pick what works and repeat it.

Thanks, everyone, for your answers. I wish they were different, though. I seem to be able to eat g-free or control calories, not both. I've got two little kids and not much time to devote to meal planning and label reading. I was hoping to get a little help from the suggested menus.

I make my own meal plans as I have to decrease the carbs (stay on the very low end of what SP suggests - not extremely low).

I'm looking at them, as a sample, and think I may be able to at least reduce the gluten by doing a lot of customizing--or eating a lot of baked potatoes. It would be nice if SP would do it for me.

We just have to keep asking for it. There is a petition on the team somewhere.

I have given up using the menus and no longer show them.

Hi, I've been a member of SP for a few years (on and {mostly} off). I just realized that it's six months TODAY until my 40th b-day--time to get serious.
Anyway, is there a filter to omit gluten from the meal plans? -I sure hope so, because I need all the help I can get! :)
