I do not have an offical diagnosis of gluten intolerance or Celiac, but I am trying for at least the next 2 weeks, to eliminate as much gluten from my body as possible. I have read and read and have resisted this as much as possible, but I think I really need to take this step.
I have done gluten free in my house before. My son was living at home and we met with an Autism doc and other professionals who suggested we go gluten free, casein free and red free. Did this while son was at home so I'm somewhat used to gluten free, but it's been a few years.
I am also starting a baking business and doing gluten free products since I've met many people who have found out then are allergic or sensitive. So.... I'm trying out many new baking recipes.
My sweet tooth is my biggest downfall so going gluten free there will be a big help for sure! I also have issues with PCOS, which have gotten better since I've dropped nearly 80 pounds, but I still have 25 more to go.
