Hello, I can sooooo relate. When I learned that I had Ceiac I was relieved and devastated all at the same time. There was a reason for my sickness, it wasn't all in my head. BUT WHAT DO YOU EAT??? I figured it out and did well for a few years. It has since been a while and I have fallen off the GF wagon and am getting back on again. I have to eat low carb or I gain weight. So, I begin again and we'll see how it goes. emoticon

emoticon emoticon . I really watch my carbs, too: my pancreas is precious to me :P. However, when I indulge it's with 70%+ dark chocolate, without hesitating. I gotta indulge once in a while. Nice to have an expert chocolate lover amongst us!

Welcome! I have to limit the carbs if I am going to drop weight. That means giving up the cakes and cookies except for sparse special occasions. Check the recipe section for this team. There are some good suggested web sites too. Plenty of good food that you can be creative with that doesn't involve sweets.

I've been off and on sparkpeople for a long time now. I'm determined - this time - to drop the 10 pounds I've gained. I have had celiac disease my whole life, but not diagnosed until 10 years ago. I don't think it's a stretch to say that this disease altered my life's course. Things that I would have done - that I didn't do - because I wasn't diagnosed correctly. So, I'm pretty passionate about living gluten free.

In that light, over the summer I discovered a new way to bake with rice flours. This is not helping my diet because I have been testing cake recipes. It has to stop or at least slow down for a while until I get my weight back on track! I want to help people, but I'm not going to gain 40 pounds in the process....

So, anyway, that's who I am.
