If you want some ideas, here is my food day, on average:
62 grams corn chex
120 grams 1% skim milk
peach or nectarine
1 oz sharp cheddar cheese
Steamed broccoli or other steamed veggie
100 grams protein--chicken, pork, etc.
1/2 c. brown rice
(it's never plain--my husband is the cook in our house and uses lots of rice wine vinegar, gluten free soy sauce; lots of other asian sauces and herbs--basil, rosemary, etc.)
Dinner--usually the same thing as lunch, only fresh.
I am reading "Living gluten-free for dummies"--or something like that--I can't quite remember the title and the book is in my car!! There are recipes in there that are not too bad. You can also modify regular recipes to be gluten free.
