I was first introduce to a Gluten Free Lifestyle in 1991. I cooked to a woman who did not eat wheat. The products available were horrid.
There are so many products available not it is wonderful. I keep my Gluten Free carbs to a cup a day and the rest is meat veggies and fruit.
I have been eating GF for about 10 years now. I lost 40 pounds and gained it back after a car accident. I am back on track now I can do light exercise. I am doing Pilate's with PT to rehabilitate. The GF lifestyle comes with its challenges but it can be done with ease. I personally get sick if I eat gluten so I stay away from it.
