Have you had your thyroid checked? That could be why you are gaining. I have low thyroid gained and couldn't figure out why. I do believe muscle weighs more than fat. Are you keeping track of your nutrition so you know for a fact you are in a range to lose weight. I did call NS about a year ago, out of curiosity, and they didn't have GF options.
These are my nutritionist. they are fabulous. They talk about health and eating real foods. They believe the root of most of our illnesses comes from the food we eat. They have done shows on just about every illness. I actually have met with them, since they are local. I listen to all the shows because they touch on a lot of issues. They did a show last year in may about Gluten Free.
My Doctors have another theory about why it is so difficult for me to lose weight. (I eat a good diet, walk or rebound or work outside nearly every day and my weight also remains the same. Very discouraging at times!)I have heavy metal toxicity and a chronic candida overgrowth problem. Right now I am dealing with a viral infection that has caused back to back shingles attacks coupled with sores in my mouth for two months. (As a result, I have been told I absolutely CANNOT detoxify from the heavy metals right now.) I have started a very light introduction to the nystatin protocol to start killing off the yeast. The herbs that I have been given to kill the virus create a lot of toxins when the virus dies and my body is not strong enough to eliminate the yeast die off and the virus die off. (I am taking immune booster tea and thymus to boost my immune system and striving to keep my bowels moving several times a day by increasing magnesium and vit C.) To summarize my lon-n-n-g story: Our bodies create fat cells to STORE toxins. If they were released all at once, they would have no where to go but to the vital organs and we would die. Have you looked into detoxifying? Sherry Rogers MD has one of the best books I've read on the subject. It is called Detox or Die.
PS Melissa I agree with what you wrote except for the soapbox part. I like to read other people's opinions and suggestions. For me, anyway...sharing helps me feel like what I have gone through serves some purpose.
It does make sense. I realize that I should eat simpiler foods. But sometimes I get frustrated with the way I have to eat. And on top of it to gain weight. I'm just going to journal all of the food I eat and see where I'm going wrong here. It can't be THAT hard to figure out right?
because you already have issues with food, why would you want to do more processed foods? I think your best bet is to find a way of eating that includes more real foods, and less chemicals. This may be why you are gaining. diet foods are full of chemicals and our bodies (celiac or not) do not agree with them. I truly believe it is not our fault we have celiac, i believe it is the fault of all the processed food companies that make eating processed food an addiction....which of course is not good for our intestines.

All those Nutrisystems commercials make it look soooo easy! Just order their food and lose weight.
If they do GF I will try it...most likely they don't though. Too bad.
I've been exercising like I've never done before...only to gain 10 pounds or more! I'm so frustrated. People tell me "muscle weighs more than fat" sorry I don't believe that. For as much fat as I have to lose, I should be losing weight.
