because you already have issues with food, why would you want to do more processed foods? I think your best bet is to find a way of eating that includes more real foods, and less chemicals. This may be why you are gaining. diet foods are full of chemicals and our bodies (celiac or not) do not agree with them. I truly believe it is not our fault we have celiac, i believe it is the fault of all the processed food companies that make eating processed food an addiction....which of course is not good for our intestines.
