As a recent newbie to celiac (Nov 08), I can definitely say that the easiest way to feel your way around is to cut yourself back to nothing but fresh yummy fruits, vegetables, and meats. I too eat lots of rice and legumes. Oh, I know, how can you stand to eat non-preserved, un-flavored, all-natural food? It's quite different, but your entire body will thank you.
