My son and daughter are also GF. I became a GREAT GF cook and easily gained weight right up to 180# as a "side-effect" of all my wonderful creations. I am now 162, and i want to get down to 150 or 146.
I still bake - but much less often. I now buy Pamela's baking mix in tech big bag and I do simple stuff. My son is now age 15 and i just taught him how to make bred using Pamela's bread mix - it takes about 2 minutes and the pop it in the bread maker... (I used to do everything from scratch - but NO WAY is he going to do this!)
I buy my Pamela's mixes from amazon.com - in their subscription department - it saves me some money. (Plus I live rurally.)

PS To my old SP friends - It's been a very rough year... My beloved, healthy, athletic, tall, dark and handsome husband died in August 2012 from a very aggressive cancer... In the many months caring for him I was stressed and didn't "care" anymore, and put back on 30 pounds I had just finished losing...
