Yay!! Clean enchiladas were a huge hit!! The quinoa was great too!! Thanks again for the tips! I did end up using regular cheese but I was down a pound this morning so I guess it wasn't too bad lol.

Annato comes from annato seeds which is used in Mexican cusine as a spice or flavoring agent and also to add color(orange,red) to dishes. Its clean. Dont know about the other one you mentioned.

I have never been able to find a cheese without things in it that I'm unsure about. What exactly is annato color anyway? or palmitate for that matter?
But I do try and stick with regular versions as fat-free and reduced-fat versions always seem to be worse.

Thanks for all your help everyone! I decided to make Spanish quinoa instead of rice. I hope it turns out well. I'm going to try it out before Saturday so I know what its like. Thanks again!

Oh, I don't personally follow all of Tosca's rules, although I agree with most of them. I actually don't know about modified potato starch specifically, but I'm hesitant because it's not exactly natural to cheese. I'd rather shred the cheese myself.

As far as doing a clean Spanish rice, a trick I use is to steam a brown rice in mixture of homemade chix stock and water, cumin, and garlic powder. When done I heat a skillet and use olive oil and add the rice with a healthy choice of salsa, peas, and cooked chopped carrots to the pan and toss gently to incorporate. When done sprinkle with cilantro. I called this my Mexican rice not Spanish, they are 2 entirely different rices. Hope this helps.

I am assuming that you are all talking about Tosca's Eating clean, of which I am still learning, but are you telling me a modified or potato starch is considered unclean? If so that would pretty much leave out every fine dining restaurant in any big city. Speaking not as a sports nutritionist but as a professional chef, this ingredient has been the leader in the new molecular gastronomy movement. I myself have used modified starches to manipulate the physical properties of food, physical, not biological. Just curious.

It sounds like you're on the right track. I'd just say be careful about the lowfat cheese and make sure it's actually clean. My MIL had some shredded mozzarella for salads, and when I looked at the ingredients, it had weird stuff in it like potato starch. Personally, I just use good old full-fledged cheese and just less of it. I think it tastes better, anyway.

nope, I agree with the "clean" cheese....I always do our enchilada's with corn tortillas...you could even look into making your own, if time permits..you CAN do them w/o a fat of some sort, I promise...juts leave it out of whatever recipe you try...the only other thing to look into is making your own enchilada sauce, which I've done before too....clean mostly means not processed....

It seems to me you already have, although I don't think there is a lot un-clean about cheese. I usually use 2% cheese, to lower the fat.
Hello everyone! I have been trying to eat clean for about a month now. I'm at about %50 clean through out the day, but I'm having trouble making my favorites cleaner. For example my husband LOVES my chicken enchiladas, but I them make them with flour tortillas and lots of cheese. I'm going to make them for a dinner party on Saturday so I'm going to be trying out a few different ingredients in small dinners this week, like whole wheat tortillas and low fat cheese. I'm also going to try for some clean Spanish rice as well so if anyone has any tips to clean up my family's favorite meal it would be greatly appreciated.
