At home when I bake if it doesn't have to be white (like bread, pie crust, shortbread cookies) then I substitute 50% whole wheat flour. At work more times I will use 100% whole wheat. When baking zucchini muffins with defrosted zucchini I don't drain it. I defrost and add all the liquid, I just use less oil, the last recipe I used the batter was the right thickness without the oil, but I added 1/3 cup anyways (recipe called for 1 cup oil) because I know from experience that low fat muffins stick to the paper and just don't have a very good finished consistency.

My sister got that way with candy, for a couple years she made candy to sell, she said after awhile she couldn't eat it anymore. And she was the chocoholic. Her biggest seller was "Peanut Butter Cups on Steroids" she made them the size of a standard muffin cup.
I am happy too there is a forum for us that love to bake. Baking seems so taboo.

Hi there and WELCOME!! do it full time like i do and you wont want to sample any more..haha. i am just on my way out to deliver 3 wedding cakes and i have 2 more tiered birthdays and a bazillion cupcakes and 4 other large 2 layer birthdays and anniversaries. right now cake is not on my want to eat list!!!

Hi, I`m very surprised to find a group of bakers on this site....surprised but very happy. I have been an avid baker for years. I`m 57 years old and have recently retired. Baking is a hobby and part time business for me. Always a struggle not to sample everything I bake. I`m good as long as I don`t try just one thing...it`s like I turn on a switch that is very hard to turn off. I currently am at my heaviest weight ever and need to lose about 35 pounds minimum. Would love to be part of your team.
