That was always a pet peeve of mine. People expect cooks and bakers to pull stuff out of their hats at short notice. Then they wonder why it is stressful working in professional kitchens. Baking and cooking at home was less enjoyable when I worked as a chef. Now I can prepare a meal while relaxing and enjoying what God has provided for me. Thanks for the support.

Hi and welcome!! i own a small bakery and am forever trying things. this week had a short notice request for gluten free lactose free chocolate cake. the ingredients are EXPENSIVE!!! but, i did it..it came out great..just have to play around with things!!! Holly

Hi and thanks. I understand what you mean. I have gotten recipies of other web sites and out of magazines before and I have had to "play" with them to get them to a point that I like them. I went to culinary school and spent over 25 years working in restaurants and everyone chain restaurant I worked for has a set recipie that must be followed. This is so when you eat at one location they want you to have the same experience at another location.

May I make a suggestion? Since it is a new recipe that you want to use. try out the recipe first, before committing to it as the one for your fathers birthday. Not all recipes, turn out the way we expect. Often, items like flour, can vary from region to region, so what may work for one person, might not for someone else, living in a different region...

Hello fellow cooks. I have been a part of Sparkpeople for a little while now. I purchased the Sparkpeople cookbook but I have yet to find the time to bake. My father's birthday is coming up and I plan on trying one of the cake recipes and waiting on what he thinks of the flavor before I tell him it is lower in calories than a traditional cake. I just discovered this group and I cannot wait to exchange recipe ideas and such. Happy healthy baking.
