I liked your post because, like you, I have about 300 cookbooks and STILL cannot seem to find any decent low-fat/low-cal baking recipes that satisfy those cravings. I did find a book called "Small Batch Baking" by Debbie Maugans Nakos that is great for just baking a couple of cupcakes or 4-6 cookies at a time. Her recipes are great, very satisfying, but don't leave you with a stack of leftover cookies and cakes calling your name!

Hi Bella!! I'm Holly and i own a bakery..lol. yes its hard and i do the same as you, only i do have some healthier recipes..i accomadate all kinds of special requests...lactose--wheat--sugar intolerant. takes some creative thinking but it can be done..and done deliciously!!

Hi Ladies! Thanks for the welcome! So heres my hints. I come from a large family and have 2 boys that can clean out a fully stocked fridge in an hour. And not gain an ounce dern kids anyway :) What I do is fix a normal sized meal and then portion it out into single serve size freezer safe containers. That way fiance has meals to take to work and I have a little bit of control. Another thing I do is bake 6 cookies at a time and freeze the rest of the dough. Bake mini loaves of bread for the 2 of us and split one loaf per meal. I don't worry about baking lowfat because I can't find good lowfat recipes. (I only have 350 cookbooks) So I just try to use good protion control and 6" plates.

I have trained as an artisan baker and pastry chef and LOVE to bake! However my fiance and I are both trying to get back in to shape and lose just a little weight. Hoping to meet more bakers and to swap recipes with!
