Changing to whole foods and a nutrient rich plant based diet has been an ultimate goal for me.
Was waiting for my son to leave home but I simply just cannot wait another 2 years.
I have switched to all veggies, fruits, beans/legumes with limited oats, nuts and flaxseed. No animal (including diary). No oil. No refined sugar. No caffeine. No alcohol.
I'm starting with the Eat to Live 6 week plan. During this time I will figure out how to prepare sumptuous meals using only vegetables while monitoring my nutrient intake.
I'm so surprised how well I'm accepting this transition...because it is a transition.
I would love to learn about recipes and talk to others who are walking a similar path.
