Quinoa is a great source of protein - it's quick to cook (less time than rice) and has a nice nutty flavor.

Hi! I'm new here. I'm not getting enough protein, BUT, I have a lot of health issues & challenges that make it even more difficult. I've listed my restrictions/criteria on my blog entry today, so if anyone here wants to be super helpful, could you go read my blog and see what you can come up with? I know I'm just not thinking of something (brain fog), and I bet you smarties can come up with some amazing ideas!!!! Thanks in advance for any help!
