Do you like curry? If so, Fatfreevegan.com has a great recipe called Warm Spiced Lentils. We had it as one of our Easter dishes yesterday. (Many people have an issue with lentils because they are brown and the dishes made with them are brown and seem unappealing. But dig in, because they are really good tasting.)
Here is a link to a recipe from my Spark cookbook. It uses red lentils. The soup is spicy but I could eat it everyday. It is soooo good.

Hi, my name is Pam and not a vegetarian, but have not meet a vegetable or fruit I did not like. I am looking for ways to make my eating healthy and prefer Organic when possible. Have been looking for recipes using Quinoa, and Lentils, most of what I have seen does not sound appealing.
