I am new, just joined yesterday. You can read my sparkpage for all the details, but I joined this team as I am particularly interested in eating as many whole/organic vegetarian foods as possible. My diet would be considered rather limited by many people's standards, but I am really getting into it.
I have eliminated dairy, and the only animal products in my diet currently are a small amount of free range egg whites in the Quorn I eat for protein. Vegan food is hard to come by in the little villages where I am here in Essex, England, there is no Whole foods here and the health food stores here are nothing like the ones in NY, where I am from. I have eliminated wheat very recently to cope with non-stop digestive complaints ( bloating, gas, swollen tummmy...) and so far am finding it quite helpful, but ......naturally this limits my diet even further as that means seitan is now out, though that said, it is unattainable here in England anyhow. I am mainly eating organic fruit, vegetable, extra virgin olive oil, German rye bread, tofu and Quorn for protein. If I go back to NY which seems likely, then my variety of vegan options will expand 100 fold and can have a larger variety of things to eat.
