So, I found this website when searching for vegan recipes and it looks pretty amazing! I'm not "going vegan" so to speak, but I figured, who better has delicious veggie recipes that my lactose-intolerant husband might actually eat than vegans! So, I'm excited to make more recipes where the vegetables are central and the meat optional instead of the other way around! :)
Also, I'm doing a yeast-free, sugar-free diet in order to try and get a handle on candida that has plagued me for about two years and is only getting worse. But the recipes I find for this diet ALL HAVE MEAT IN THEM and I'm not rich! Just so you have an idea of what I'm dealing with, here are my restrictions: Foods to Avoid: 1. Sweeteners and fruit in all forms (whole and dried fruit, fruit juices and concentrates, white and brown sugar, honey, maple syrup, barley malt, stevia, dextrose, sucrose, fructose, corn syrup, rice syrup Sweet ‘n’ Low, sucanat, xylitol, etc.). 2. Mushrooms and peanuts (These are fungi). 3. Vinegar and all vinegar products (store-bought mayonnaise, mustard, salsa, dressings, etc.). 4. Yeast in any form. 5. All dairy including milk, cheese, yogurt, ice cream, powdered milk, milk solids, milk protein, butter, lactic acid, lactose, casein, etc. (Eggs are not dairy). 6. Alcohol in any form (including extracts and wine). 7. Soy sauce and all fermented products such as miso, tempeh, sauerkraut and pickles. 8. Hydrogenated or partially hydrogenated oils (including margarine and shortening). 9. Spicy seasonings are to be used sparingly (chili, cumin, curry, cinnamon, pepper, etc).
Here is what I can happily eat! Foods to Eat (organic whenever possible): 1. Fresh or frozen vegetables, raw, steamed baked, sautéed in olive oil, grilled, etc. 2. Whole grains. 3. Hormone free meat is best whenever possible. 4. Eggs. 5. Nuts (excluding peanuts), including nut butters like sun butter or almond butter. 6. Rice milk (usually found in baking aisle; read labels for added sweetener). 7. Herbs such as garlic (acts as an anti-fungal agent), basil, thyme, oregano, parsley, etc. Salt is also fine. 8. Olive oil (Light olive oil is recommended because it is better for use at high cooking temperatures).
I have to do this diet for a bout 4 weeks, plus take an herbal anti-fungal, to get my intestinal flora and fauna back in balance! If you have any experience with this, or any tasty recipes pop into your head, please let me know! :)
