Hi IrishAngie! Welcome to the team. Kudos to you on your weight loss!!

I have always loved fruit also. Frozen berries make a great before bed snack. I eat them with some milk (for the protein). Apples, bananas, delicious grapefruits, tangelos and oranges are all readily available in the winter seasons. There is nothing like a Florida grapefruit in season, it is delicious.

Thanks guys for all your help, and LittleWind, I knew what you meant by quick set, I have used this method before on several occasions and it does work out great. I.M.Magic will have to keep in mind about using apple juice or white grape juice as a sweetener, I've heard of this too, but I'm a little afraid to use it, I don't mind using tevia, it's an all natural zero calorie sweetener, and leaves no after taste, I prefer it so much better than any of the other sugar substitutes.

You guys have been a great help, and I think I'm gonna try freezing those blueberries and eating them frozen, great little snack!!

Tisha, I don't bother to thaw the berries first. , you are putting them into very hot liquid and they will thaw out just from the hot water.

Just to clarify, the quick set method I mentioned is not a product, it is just a method of making the jello very quickly and can be done with any brand of gellatin. I hope I didn't confuse you.

I also freeze berries... blueberries in particular freeze very well, and I like to just munch them right out of the freezer, like little frozen fruit bonbons! LOL Another thing you can do is make your own fruit leather... just google it for how to do that, there are all kinds of recipes online.

Thinking about it, I don't like strawberries frozen so much, but I will use them in my oatmeal on the rare occasions I eat it...

...and the jello idea works. But I don't use anything sugar-free. Artificial sweeteners? Can't stand the aftertaste most of them have, and besides that, they actually make me ill if I eat them... they are a real chemical soup, and like poison to me, they aggravate another of my medical conditions, and it's no fun at all to be in that kind of pain!

IF, and that's a big IF, something needs sweetening, I'll use apple juice, white grape juice-- or real sugar. Yep, regular old white processed sugar. And I'm VERY cautious with it. Gives portion control a whole new meaning for me! LOL

I do like to eat fruits in season though... they really ARE much nicer when fresh--and there's nothing quite like a nice, crisp, sweet and juicy apple. I grew up in the Wenatchee valley, the "apple capital of the world"... LOL Wenatchee WA has an annual Apple Blossom festival every spring... lovely place, but too hot in the summer for me to live there any more... It's good for the apples, and the other fruit they grow there, but... LOL

I still visit, since my family are still there--and I try to go every fall to buy a box or two of freshly picked apples, or have my sister pick one up and ship it for me. Yum. THEY KEEP for a long time, too! LOL

Littlewind53 , thats a nice idea.. I'm now in england so gonna buy the jelly here as its not easy to find in holland, plus its not the same either.. so gonna buy a few packets sugarfree to take back.... hopefully they have quickset too....
would it be better to thaw the berries first?? or just straight from the freezer?? thanks..

Have you ever tried to make quick set jello? For the large package it calls for 2 cups of hot water and 2 cups of cold, but if you do quick set,method you use 1 cup ice cubes and 1 cup water in place of the 2 cups cold.

When using frozen fruit, just sub 1 cup frozen berries for the ice cubes. It usually works the same for me.

P.S. If I am not exactly sure of how much water I should use, I will use slightly less water to make sure it sets and is not runny, but this is usually not nessecary. It all depends on how much water is in the fruit....

Hi Sweetisha1, you have some great ideas that I will surely try, I have been using the sugar free plus fiber preserves & peanut butter on the Arnold's Sandwich Multi-Grain thins, yummo,!!! I was talking about when you make your jello and add frozen fruit do you have to decrease the water for the jello to allow for the water in the frozen fruit!!

As far, as for loosing all this weight, I guess I'm just eating a whole lot better, much healthier than before, no junk food, no cake, cookies, sweets, all of which were my downfall, I stay away from bread, I eat a lot of fish, turkey and veggies...plus I drink a lot of water, only allow myself one sugar free drink a day...and I try to get in as much exercise as I can, don't know how it happened but it did, and I'm glad.

Hiya, Welcome Irishangie,

I discovered freezing my fruit by accident, was at the fridge with my blueberries and got distracted by my daughter and had to hurry so put them in the freezer instead of the fridge..
next day i discovered that they thaw great just like fresh... so since then i always freeze my berries all kinds...
i mash them on my piece of bread instead of jam... so only fruit & no sugar,add peanut butter,,,yummm...
the large strawberries i put a satay stick in and after a few minutes out the freezer they are a tiny equivelent to a ice lolly.....
but smoothies are good too, but its nice to look for other ideas.... their are loads of ideas on this site either from members or in the recip'es...take time to look around....
fruit punch is also an idea....
but being a diabetic its adviceable to not overdo it with fruit as a member has already mentioned...just give yourself a handful a day or 2 to 3 servings...
The water in fruit will not count for your 8 glasses of water if thats what you were asking....
drinking water as i've discovered is very important for diabetics... but also for non diabetics.. but it helps with the bs(bg) count ..
I'm a little shocked.. did you say you lost 40 pounds since march??? woww... thats a great amount.. like to know your secret!!!!

Wow, so many great ideas, love the idea of a fresh fruit smoothie, even if I am using frozen summer fruit....so healthy and a great idea for a quick breakfast!! I love the sugar free jello, I always eat it plain, will have to try some of the fruit in here, if you are using frozen fruit do you have to cut the water any to allow for the water in the fruit?

We cut the cherries in half and remove the pit. Yes, they freeze quite well, but they will still seem soft to touch. So far I have only used them in Smoothies. Nothing quite like a smoothie in the dead of winter enjoying the fruits of summer....

I am same as you, I love fresh fruit. You don't need to tell me to eat fruit. I am a huge fan of the melons. But I thought because I had diabetes I could not have fruit because it is a sugar. I am new to spark, today is only the first day of my second week. I have eaten all the fruit allowed by the diabetic plan and I am loving it. I have some melon and other fruit each meal with fresh veggies. I dread the fruit disappearing as the cooler temps are coming. I did like the idea of the freezing the fruit even though I am not a big fan of frozen fruit. However they would be great for fruit smoothies. I am wondering if you can freeze cherries and what they would tase like when they come out? Also would you have to remove the seeds before freezing, I geuss you would. I also liked the fruit in jello idea. I heard sugarless jello is about calorieless and with fruit it might even taste good. I welcome ideas too. Susan

I know it is late in the summer already, but do you have a freezer? If so, you could freeze strawberries, blueberries, cherries, and peaches, etc, to have in the winter months.

The thawed fruits can be eaten "as is" or used in other desserts Do you eat Jello? Mix some fruit into that. Delish.

Hi everyone, my name is Angie, and in late March I was diagnosed with Type 2 Diabetes; and although I have been able to keep my blood sugars in check so far...I dread the summer coming to an end and all the good summer fruit being gone. I have been able to shed close to 40 pounds since joining Spark, and I exercise daily.....now for my problem!!! I love fruit, especially fresh summer fruit and I dread the approach of the fall and winter with the limited variety of fruit. I do love vegetables and salads and eat plenty of these, but is there anyone else who has my problem or could give me a few pointers on how to enjoy the winter fruit as much!! Thanks!!
